- Preheat the oven to 400 degrees F. Pierce the sweet potatoes 2 or 3 times with a fork. Bake in a roasting pan for 45 to 60 minutes, until tender. Cut the potatoes in half, lengthwise. Hold the sweet potatoes with a potholder or towel and scoop out the potato flesh into a food mill or ricer.
- In a medium saucepan, heat the butter, syrup, zest, and vinegar over medium heat. Remove from the heat and mash the sweet potatoes in the pan. Stir to combine evenly. Season to taste with salt and pepper. Serve immediately.

- Preheat the oven to 425°F and line a baking sheet with foil.
- Use a fork to poke a few holes into the sweet potatoes. Place on the baking sheet and roast until very tender, about 60 minutes.
- Scoop the cooked sweet potato flesh out of the skins and place in a food processor. Add the olive oil, milk, rosemary, garlic, ginger, salt, and several grinds of pepper and process until creamy. If you prefer a chunkier consistency, mash with a potato masher. Season to taste.
- Transfer to a bowl and garnish with the thyme. Serve with a pat of butter, if desired.

- Peel and cut sweet potatoes into 2-inch cubes.
- Place sweet potatoes in a large pot (6-quart) and cover with water by an inch. Season with 3 teaspoons salt and bring to a boil, reduce heat down to medium-low and allow to simmer until fork tender (about 15-20 minutes).
- Drain cooked potatoes, add in the butter, sour cream, garlic, remaining salt and parmesan.

SIMPLE SAVORY MASHED SWEET POTATOES
These simply mashed sweet potatoes taste so good it's hard to stop eating them! It's amazing what just a little butter, sour cream and a few scallions can do without all the frills we usually add. Then again, the beautiful sweet potato doesn't need much help. These make a wonderful addition to a hearty meal and pair well with most meats, especially pork. I pre-bake the potatoes in the oven because I think they have the best flavor, but I included steps for cooking them in the microwave as well. The dish will take from 25 minutes using the microwave to 65 minutes using the oven, not counting the cooling period post cooking.

- Wash and scrub the sweet potatoes; pat dry.
- To bake the sweet potatoes, preheat the oven to 400 degrees F. Place pricked potatoes on a foil-lined baking pan to catch any juices that leak, then into the preheated oven and cook for 45 minutes, or until the potatoes are fully cooked and tender, up to 1 hour.
- To cook the sweet potatoes more quickly, carefully prick each sweet potato about 6 times, place in microwave oven on a paper towel and cook on High 15 to 17 minutes, or until a knife is easily inserted into center of potatoes.
- When cool enough to handle, remove skin and any dark spots from potatoes. In a medium bowl, mash potatoes with butter and season with salt and pepper. Stir in sour cream and scallions until well mixed. Serve immediately sprinkled with reserved green onions on top.

- Make the Potato Mash. Chop sweet potatoes and cover with water in a large pot. Bring to a boil over high heat. Boil until a fork easily slides into the potato pieces. Once thoroughly boiled, drain potatoes. Add ghee/butter, milk, salt, and onion powder to the potatoes and mash until smooth.
- Make the Bacon Gravy. First, cook the bacon any way you like! I prefer to preheat the oven to 350 degrees Fahrenheit and bake the bacon on a sheet pan for 20-30 minutes until crisp. Move the bacon using metal tongs to a paper towel-covered plate to drain. Reserve the bacon fat.
- To make the gravy, melt 3 Tablespoons of fat in a medium-sized saucepan over low heat. This fat can be made up of bacon fat, ghee, or butter. I usually use 1-2 Tablespoons of bacon fat and supplement with ghee to equal 3 Tablespoons. Once melted, whisk 3 Tablespoons coconut flour into the melted fat. The flour will gather in the whisk and brown. Continue to whisk over low heat for 30 seconds. While continuing to whisk, add milk and chicken stock, whisking until smooth. Raise the heat to medium heat until the mixture starts to simmer. Lower the heat to medium-low and continue to simmer until the gravy starts to thicken. (Keep in mind that the gravy will thicken quite a bit more when it is removed from heat.) Stir in bacon crumbles, salt, and pepper. Serve warm!
