- In a small bowl, combine the first seven ingredients. Spread over corn; sprinkle with Parmesan cheese. Wrap each ear of corn in a double thickness of heavy-duty foil. Grill, covered, over medium heat for 30-35 minutes or until corn is tender, turning occasionally.

SUMMER GRILLED CORN SALAD
When the warm weather hits and the grill is fired up, there's nothing more delicious than a fresh salad packed with grilled vegetables and bright flavors. This summer grilled corn salad is delicious, healthy, filling, and the perfect compliment to any barbeque. Grilled corn is cut off the cob, tossed with sweet grilled red onions, fresh tomato, avocado, fresh herbs, bright lime juice and delicious seasonings. Put this on your summer meal rotation for a quick and easy side dish.

Steps:
- Slice the red onion into 1/4" thick rounds (to hold up to grilling).
- Spray a grill pan with olive oil spray (or you can use an outdoor grill).
- Spray the corn and onion rounds with olive oil spray. Sprinkle the onion rounds with a pinch of kosher salt.
- Grill the vegetables on medium heat for a slow cook. Rotate the vegetables frequently to get an even char.
- The onions will take about 20 minutes to get soft, and the corn will take up to 25 minutes to be cooked.
- Once cooked, remove the vegetables from the grill pan.
- Place a small bowl upside down in a larger mixing bowl, and use the bottom of the small bowl as a stand to cut the kernels off the corn.
- Chop the cooked onion.
- Scoop the seeds and pulp from the inside of the tomatoes and discard. Chop the remaining parts of the tomatoes.
- Chop the scallions and cilantro. Chop the avocado.
- Add the corn kernels, onion, tomato, avocado, cilantro, and scallions to the bowl.
- * Note: you can leave the avocado out until right before serving, in order to prevent browning.
- Add the paprika, kosher salt, cumin, and cayenne. Add the lime juice.
- Toss to combine the flavors, taste for seasoning.

- Soak corn in cold water for 1 to 3 hours.
- Stir together macadamia nut oil and melted butter in a bowl. Season with garlic, rosemary, sage, basil, thyme, salt, and pepper; stir in Parmesan cheese.
- Drain corn and pat dry. Spread butter mixture evenly over each ear of corn, and place each piece on a square of aluminum foil. Tightly wrap each ear and puncture to allow excess steam to escape while grilling.
- Preheat an outdoor grill for medium heat.
- Grill the corn cobs until tender, about 20 to 30 minutes, turning frequently. Remove from the grill and check for doneness; if the corn is not done, continue cooking an additional 5 minutes.

- Place corn in a stockpot; cover with cold water. Soak 20 minutes., Mix remaining ingredients. Drain corn; carefully peel back husks to within 1 in. of bottoms and remove silk. Spread corn with butter mixture; rewrap in husks and secure with kitchen string., Grill corn, covered, over medium heat until tender, 25-30 minutes, turning often. To serve, cut string and peel back husks.

- Heat a large cast-iron skillet over medium heat. Add the pork belly and cook until crispy, about 3 minutes per side. Remove from the skillet to paper towels to drain, reserving the drippings in the skillet.
- Increase the heat to medium-high. Add the butter and heat until melted. Add the onion and bell pepper. Season with salt and cook until the vegetables are softened and begin to brown, 4 to 5 minutes. Stir in the corn and season with salt and pepper, then chop the pork belly. Add the pork belly and tomatoes and cook until the corn is softened and the tomatoes begin to release their liquid, about 5 minutes more.

- Prepare grill for direct-heat cooking.
- Gently pull back husk from each ear of corn without detaching; remove silk.
- Replace husk strips, one piece at a time, over corn.
- Tie kitchen string around each ear to secure husks.

- Prepare barbecue (medium-high heat). Grill peppers until charred on all sides. Transfer to paper bag; roll top to close tightly. Let steam 10 minutes. Peel and seed peppers. Cut into 1/2-inch-thick strips. DO AHEAD: Can be made 1 day ahead. Cover and chill.
- Brush corn with olive oil; sprinkle with salt and pepper. Grill until charred in spots, turning occasionally, about 10 minutes. Transfer to large bowl; cover to keep warm.
- Melt butter in heavy large skillet over medium-high heat. Add bell pepper strips. Sauté until heated through, stirring often, 3 to 5 minutes. Stir in 3/4 cup basil. GUACAMOLE WITH GRILLED CORN
This simple summer dip combines guacamole with sweet grilled corn and tangy Cotija cheese. The key to great guacamole is to pound the aromatics in a mortar and pestle or molcajete with salt, producing a guacamole with deep flavor from minimal ingredients.

- Prepare a coal or gas grill so it's at high heat. Add the corn and cook, turning occasionally, until the kernels are lightly blackened in spots all over, 5 to 15 minutes. When corn is cool enough to handle, hold one ear upright in a large bowl and, using a sharp knife, cut off the kernels. Discard the cob, then repeat with the other ear. Let cool completely before adding to the finished guacamole.
- Meanwhile, in a large granite mortar and pestle or molcajete (see Tip), combine the onion, chile, cilantro and salt. Pound into a rough paste, 2 to 4 minutes. Transfer the paste to a large bowl.
- Add the flesh of the avocados and the lime juice. Crush the avocados into a chunky dip using the pestle or the back of a large spoon. Once corn kernels are completely cooled, add them and the Cotija to the large bowl, reserving a little of each for garnish. Fold together the guacamole, corn and cheese, and season to taste with more salt and lime juice. Sprinkle with remaining cilantro, Cotija and corn. Serve immediately with tortilla chips. (Try to eat in one sitting. Leftover guacamole stored in the fridge turns brown quickly.)
