My mom always made this at Thanksgiving, and it was loved by everyone! It is a great alternative to candied yams or sweet potato casserole. If you don't use all the topping, you can freeze the rest for future use.

3 acorn squash, halved and seeded
5 tablespoons butter, softened
½ cup brown sugar
½ cup all-purpose flour
½ cup chopped pecans
2 eggs
½ cup white sugar
¼ cup half-and-half
1 teaspoon vanilla extract
½ teaspoon salt

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Roast the squash cut side up on a baking sheet in preheated oven until the flesh is soft, about 50 minutes. Remove squash from oven and cool, then scoop out the flesh into a mixing bowl, or bowl of a food processor.
  • Meanwhile, prepare the topping by mixing 2 1/2 tablespoons butter in a bowl with the brown sugar and flour until crumbly. Stir in the pecans. Set aside until needed.
  • Lower oven temperature to 350 degrees F (175 degrees C). Lightly grease 11x7 inch baking dish.
  • Beat or process the squash until smooth. Add the eggs, white sugar, half and half, vanilla, salt, and 2 1/2 tablespoons butter; process until well blended. Spoon the mixture into the prepared baking dish. Sprinkle the brown sugar topping mixture over the squash.
  • Bake squash in preheated oven until topping is lightly brown, about 40 minutes.

2 acorn squash, sliced in 1/2, seeds removed
4 tablespoons butter
4 tablespoons dark brown sugar
1 teaspoon ground nutmeg
Salt
2 tablespoons raw cane sugar

Steps:

  • Preheat oven to 450 degrees F.
  • Assemble acorn squash on a baking sheet. Place 1 tablespoon of butter and brown sugar in each half. Add 1/4 teaspoon of nutmeg in each and season with salt. Bake until golden and tender, about 1 hour to 1 hour 15 minutes, basting flesh of squash several times.
  • Twenty minutes before the squash is done, sprinkle edges with raw sugar. Serve squash warm.

2 acorn squash (about 1 1/2 pounds each), halved and seeded
2 tablespoons extra-virgin olive oil
¾ cup whole milk
2 large eggs, lightly beaten
1 tablespoon finely chopped shallot
1 teaspoon minced garlic
.666 cup finely grated Parmesan cheese, divided
¾ teaspoon salt, divided
½ teaspoon ground pepper, divided
1 ½ cups fresh whole-wheat sourdough breadcrumbs (see Tip)
2 tablespoons unsalted butter, melted
2 tablespoons chopped fresh flat-leaf parsley
1 tablespoon chopped fresh sage
1 tablespoon chopped fresh rosemary

Steps:

  • Preheat oven to 425°F with rack in upper third of oven. Line a large baking sheet with foil. Place squash halves, cut-side up, on the prepared baking sheet; brush with oil. Roast until tender, about 40 minutes. Let stand until cool enough to handle, about 10 minutes. Reduce oven temperature to 350°F.
  • Scoop the squash flesh into a large bowl. Mash with a potato masher or a large fork until smooth. Add milk, eggs, shallot, garlic, 1/3 cup Parmesan, 1/2 teaspoon salt and 1/4 teaspoon pepper; stir until well combined. Pour the mixture into a lightly greased 7-by-11-inch baking dish.
  • Combine breadcrumbs, butter, parsley, sage, rosemary and the remaining 1/3 cup Parmesan and 1/4 teaspoon each salt and pepper in a medium bowl. Sprinkle the breadcrumb mixture in an even layer over the squash mixture. Bake until set, 28 to 30 minutes. Switch oven to broil; broil the casserole until the topping is golden brown, 1 to 3 minutes.

2 Tbsp. butter or margarine
4 tsp. brown sugar
1 cup JET-PUFFED Miniature Marshmallows

Steps:

  • Heat oven to 375°F.
  • Place squash halves in microwaveable dish; cover with waxed paper. Microwave on HIGH 12 to 14 min. or until tender, turning after 7 min. Let stand, covered, 5 min.
  • Scoop squash from shells into medium bowl, leaving 1/4-inch-thick shells. Add butter; mash until squash is smooth and butter is completely melted. Spoon into squash shells; place on baking sheet. Sprinkle with sugar; top with marshmallows.
  • Bake 12 to 15 min. or until squash are heated through and marshmallows are lightly browned.

Sweet Acorn Squash With Apples and Craisins (Crock Pot) image

I was on the search for a crock pot method for acorn squash and wasn't happy with what I found. . .so I took a little from each recipe and created my own. The results were outstanding. If you have any leftovers, simply scoop out the pulp, apples, craisins and mix with juices in crock pot, mash slightly and freeze for a side dish at a later date! This recipe is quite forgiving, so don't worry about measuring everything out exactly. In our house, we eat this as a main course with a small salad on the side.

1/2 cup apple juice (may use cider)
1 large acorn squash, quartered
1 pinch salt
2 tablespoons butter (may sub vegan margarine)
2 tablespoons brown sugar
1/4 cup dried cranberries
1 1/2 cups diced apples (I used Honey Crisp which are sweet and tart)
1/4 lemon, juice of
1 teaspoon cinnamon
2 tablespoons maple syrup
3 tablespoons walnuts

Steps:

  • Turn crockpot to HIGH to get it warm while you fill it up.
  • Pour apple juice in bottom of crockpot.
  • Place squash, cut side up, in bottom of crockpot.
  • On top of each piece of squash, sprinkle with salt, followed by 1/2 T butter, 1/2 T brown sugar, and 1 T dried cranberries.
  • Sprinkle apples in and around the squash (about 1/4 cup will fit piled up on each squash).
  • Juice lemon over the top of the apples, then sprinkle with the cinnamon and pour the maple syrup over the top.
  • Cook the squash on LOW for 4-6 hours or HIGH for 2.5-4 hours. NOTE: crockpots are not created equal as far as temp goes and we will all buy different sized squash. . .that being said, cook times will vary. . .I don't mind eating mushy squash, but you can't eat undercooked squash simply because you can't cut it :) I cooked mine on low for 4 hours and it wasn't done so I cranked it up to high for 1 hour and it was perfectly cooked.
  • When squash it tender, place each piece on a plate and sprinkle with the nuts.
  • OPTIONAL: I am bad, so therefore I put another 2T of cold butter in with the apple juice and remaining apples on the bottom of the crockpot and stir til the butter is melted and then spoon the "sauce" over the top of the squash. If you like yours really sweet (as I do), feel free to drizzle it with more maple syrup or honey.

2 large sweet potatoes
1 butternut squash
1 cup orange juice
1 tablespoon unsalted margarine or 1 tablespoon unsalted butter
2 cinnamon sticks

Steps:

  • Preheat oven to 375° and cut the sweet potatoes in half.
  • Cut the butternut squash in half vertically and scrape out the seeds.
  • Put the vegetables, cut side up, in a baking pan and bake, uncovered, until they are very soft, at least 1 1/2 hours.
  • Scoop the potato and squash out of the skins, combine them, and mash until smooth.
  • Put the orange juice, margarine, and cinnamon sticks in a small saucepan and heat, reducing until it is about 1/4 cup syrup.
  • Discard cinnamon sticks and stir orange syrup into the mashed vegetables.

2 garlic cloves, minced

  • Cut squash in half; discard seeds. Place squash cut side down in a greased 15x10x1-in. baking pan; add 1/2 in. of hot water. Bake, uncovered, at 350° for 35-40 minutes.
