- Put 1 tbsp rapeseed oil in a frying pan over a medium heat. Add the onion and fry for 10 mins or until soft and translucent. Add the garlic and cook for 1 min. Leave to cool.
- Mix the cooled onions, pork mince, egg yolk, a good grating of nutmeg and the breadcrumbs in a bowl with your hands until well combined. Form into 12 balls and chill for 15 mins.
- Heat the remaining oil in a frying pan and fry the meatballs for 5 mins over a medium heat, turning often until golden. Pour over the stock and bubble for 8-10 mins or until it has reduced a little. Stir through the mustard and yogurt.
- Steam the greens for 5 mins or until tender. Serve the meatballs with the greens and a dollop of the sauce.

SWEDISH MEATBALLS WITH LINGONBERRY SAUCE

- In a small bowl, combine the bread crumbs and the milk; stir with a fork and let stand for 5 minutes. Put 3 tablespoons of the butter in a small skillet and let it melt over medium heat. Add the shallots, garlic, and caraway; season with salt and pepper. Saute until softened but not browned, about 2 minutes. Put the ground beef and pork in a large bowl. Add the sweated shallot mixture, egg, parsley, and dill; season with salt and pepper. Squeeze the milk out of the soaked bread crumbs, add the bread to the meat mixture, and mix well using your hands. Pinch off about 1/2 cup worth of the meat mixture and roll it around in your moistened hands to shape it into a cue ball-sized meatball. Continue forming the meatballs and putting them on a platter; there should be about 20 meatballs.
- Melt 2 tablespoons of the butter in a large skillet over moderate heat. When the foam starts to subside, add the meatballs in batches so you don't overcrowd the pan. Saute the meatballs until well-browned on all sides, about 7 minutes total. Remove the meatballs to a platter lined with paper towels as they are done.
- Discard most of the fat from the skillet and return it to the heat. Add the remaining tablespoon of butter and swirl it around to coat the pan. Sprinkle in the flour, and stir with a wooden spoon to dissolve into the fat. Pour in the chicken broth, and stir with a wooden spoon to loosen the bits from the bottom of the pan. Simmer and stir until the liquid is reduced and a sauce starts to form; season with salt and pepper. Lower the heat and stir in the sour cream. Return the meatballs to the sauce and stir in 1/4 cup of the lingonberry jam until combined. Simmer until the sauce thickens slightly and the meatballs are heated through, about 15 to 20 minutes. Shower with chopped parsley and transfer to a serving bowl. Serve the Swedish meatballs with additional lingonberry jam on the side.

- Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil and place a baking rack on top. Spray the baking rack with cooking spray.
- Combine bread crumbs and milk in a large bowl. Allow bread crumbs to soak up the milk for about 10 minutes. Mix in ground beef, ground pork, onion, parsley, celery, egg, garlic, sugar, salt, and pepper until combined; mixture will be fairly wet. Shape into 36 meatballs with a 1-tablespoon cookie scoop. Place meatballs on the prepared baking rack.
- Bake in the preheated oven until an instant-read thermometer inserted into the center of a meatball reads 160 degrees F (71 degrees C), about 18 minutes.
- While the meatballs are baking, melt butter for sauce in a large saucepan over medium-low heat. Whisk in flour and cook, stirring constantly, for 2 minutes. Gradually whisk in beef broth and Worcestershire sauce until smooth. Cook, stirring often, until slightly thickened, about 12 minutes.

- Preheat oven to 200 degrees F.
- Tear the bread into pieces and place in a small mixing bowl along with the milk. Set aside.
- In a 12-inch straight sided saute pan over medium heat, melt 1 tablespoon of the butter. Add the onion and a pinch of salt and sweat until the onions are soft. Remove from the heat and set aside.
- In the bowl of a stand mixer, combine the bread and milk mixture, ground chuck, pork, egg yolks, 1 teaspoon of kosher salt, black pepper, allspice, nutmeg, and onions. Beat on medium speed for 1 to 2 minutes.
- Using a scale, weigh meatballs into 1-ounce portions and place on a sheet pan. Using your hands, shape the meatballs into rounds.
- Heat the remaining butter in the saute pan over medium-low heat, or in an electric skillet set to 250 degrees F. Add the meatballs and saute until golden brown on all sides, about 7 to 10 minutes. Remove the meatballs to an ovenproof dish using a slotted spoon and place in the warmed oven.
- Once all of the meatballs are cooked, decrease the heat to low and add the flour to the pan or skillet. Whisk until lightly browned, approximately 1 to 2 minutes. Gradually add the beef stock and whisk until sauce begins to thicken. Add the cream and continue to cook until the gravy reaches the desired consistency. Remove the meatballs from the oven, cover with the gravy and serve.

- Preheat the oven to 200C/180C Fan/Gas 6.
- For the meatballs, heat the oil in a frying pan and sauté the onion until soft and translucent. Add the garlic and sauté for a further minute. Remove from the heat and leave to cool.
- Put all the meatball ingredients, including the cooked onion and garlic, into a large bowl and mix thoroughly with your hands. Shape the mixture into balls somewhere between the size of a walnut and a golf ball - they should be around 40g/1½oz in weight. You should end up with around 24 meatballs. Put the balls on a baking tray and bake for 12-15 minutes until cooked through.
- To make the gravy, melt the butter in a saucepan large enough to hold the meatballs. Add the flour and stir for 5-10 minutes until the flour and butter have combined into a roux and turned golden-brown. Add the white wine and stir vigorously until well incorporated, then gradually add all the beef stock, stirring thoroughly between each addition to avoid lumps, until you have a slightly thickened gravy. Add the cream and the jam, and mix to combine. Season with salt and pepper.
- Remove the meatballs from the oven and place in the gravy pan. Simmer gently for 5-10 minutes to allow the flavours to combine. Serve with a sprinkling of dill, more jam on the side and lots of mashed potato.

- Meatballs: Stir together eggs, cream, salt, and pepper in a large bowl. Mix in ground meats, breadcrumbs, potatoes, and onion with your hands. Cover, and refrigerate at least 1 hour and up to overnight.
- Preheat oven to 350 degrees. Form meatball mixture into 1 1/4-inch balls, and place on a rimmed baking sheet.

- Finely mince the shallot. For a smoother finish you can grate the onion or use onion paste or powder.
- Combine the ground meat, onion, egg yolks, bread crumbs, salt and pepper in a bowl. Knead the mixture with your hands until homogeneous, 1 minute.
- With slightly damp hands take a small amount of mixture at a time and roll into meatballs. To make them all the same size I weigh mine at 15 g each.
- Set a skillet on medium-high heat and add 4 tbsp oil or butter. When hot, add the meatballs and shallow fry for a couple of minutes. Roll the meatballs over to cook the other side. After another couple minutes roll the meatballs again to cook the sides where they look raw. Shallow fry the meatballs until homogeneously cooked and slightly browned for a total time of about 10 minutes.
- When cooked, turn off the heat. Transfer the meatballs to a plate lined with kitchen paper for the time being. With the help of a spoon remove some of the cooking fat leaving about 2 tbsp in the pan. Keep the onion bits that may have escaped the meatballs as the meat shrank for extra flavour; but discard if burnt.
- Return the pan to the stove on medium heat and pour all the cream in. In a small bowl aside, mix the water and the stock concentrate, then add to the pan. Stir in the mustard and lastly add the Worchestershire sauce. Stir to combine and keep simmering on medium heat until the sauce thickens, 3-4 minutes.
- Put the meatballs back into the pan and toss to coat in the cream sauce. Serve with mashed potatoes or your favourite veggie side.

- 1. Whisk together the beef stock, heavy cream, flour, soy sauce, black pepper, and rosemary in a large saucepan until smooth. Cook and stir over low heat until thickened, about 10 minutes, stirring occasionally. Stir in the meatballs, and continue cooking until meatballs are heated through, about 5 more minutes.
- 2. Meanwhile, cook noodles according to package directions. Drain; toss with butter. Serve with meatball mixture; sprinkle with parsley.
- *My Meatballs: 1. Combine beef, veal, and pork in a large bowl. Add garlic, eggs, cheese, parsley, salt and pepper.
- 2. Blend bread crumbs into meat mixture. Slowly add the water 1/2 cup at a time. The mixture should be very moist but still hold its shape if rolled into meatballs. (I usually use about 1 1/4 cups of water). Shape into meatballs.
- 3. Heat olive oil in a large skillet. Fry meatballs in batches. When the meatball is very brown and slightly crisp remove from the heat and drain on a paper towel. (If your mixture is too wet, cover the meatballs while they are cooking so that they hold their shape better.).
- My Note: I used 1/2 skim milk and 1/2 cream so it wasn't so heavy and it turned out great! BUT IF LIKE TO HAVE A GRAVY: see be low.
- For a Gravy Ingredients:
- 4 tablespoons unsalted butter.
- 4 tablespoons flour.
- 2 1/2 cups beef broth.
- 1 tablespoon Worcestershire.
- 1/2 cup sour cream.
- 1/8 teaspoon allspice.
- salt/cracked black pepper, to taste.
- Gravy Directions:.
- 1). In a large skillet, melt butter on medium heat.
- 2). Whisk in the flour slowly and cook until smooth and slightly darkened.
- 3). Add the beef broth, allspice, salt, pepper, and Worcestershire sauce and bring to a simmer.
- 4). Reduce the heat to medium low and stir until gravy thickens.
- 5). Stir in sour cream, mix well, and serve warm on top of meatballs.
- UPDATE: I used lean beef so had to melt butter in the pan to make the gravy. The flavor was wonderful. I skipped the noodles and used them as a hors d'oeuvre. I made the meatballs ahead of time and froze them so I had them ready to go when I made the recipe the following week. Used ground sirloin to cut down on fat. Next time I will need to add melted butter with flour to make the roux because it lumped up and I had to use my emulsifier to get the lumps out. Didn't have fat from the meat (can't add cold liquid to flour).
- Sometime I used at meatloaf mix (beef/pork/veal), and added 2 TBSP of parmesan cheese and 2 tsp crushed garlic for extra flavor. Baked them according to the recipe then put them in a pot of sauce to simmer for a couple hours. That me!

- Step 1 In a small mixing bowl add the panko bread crumbs and milk, mix well and set aside to soak for about 10 minutes.
- Step 2 While the bread crumbs are soaking, place a large saucepan over medium heat. Add 1 tablespoon butter and when melted, add the onions and sauté without browning until tender, about 3 minutes. Remove from the heat and allow to cool slightly.
- Step 3 Using a kitchen mixer, such as a Cusinart fitted with a paddle attachment, add the ground beef, ground pork, sautéed onions, milk soaked breadcrumbs, eggs, salt, pepper and allspice. Pulse on/off to blend. Be careful not to over mix.
- Step 4 Line a baking sheet with parchment paper and set aside. Using your hands, gently shape the meatballs into approximately 1-inch balls.
- Step 5 Line a plate with paper towel and set aside. Place a large sauté pan over medium-high heat. Add the remaining 4 tablespoons of butter. When hot and bubbling has subsided, add the meatballs in one layer being careful not to overcrowd them, if needed, work in batches. Brown the meatballs on all sides gently shaking the pan often to prevent sticking. Once cooked through, carefully remove the meatballs and place on the prepared plate to drain.
- Step 6 Serve the meatballs hot with a generous dollop of Lingonberry sauce.
