1 lb ground beef
½ cup seasoned bread crumbs
½ onion, finely minced
1 egg
1 tablespoon kosher salt, divided, or to taste
1 tablespoon pepper, divided
2 tablespoons canola oil
2 cups beef broth
2 cups milk
1 tablespoon worcestershire sauce
4 cups egg noodle
1 cup shredded parmesan cheese
½ cup fresh parsley, chopped

Steps:

  • In a large bowl, combine the ground beef, breadcrumbs, onion, egg, ½ tablespoon salt, and ½ tablespoon pepper, mixing until evenly combined.
  • Heat the canola oil in a pot over medium-high heat. Take about a golf-ball size of the meatball mixture and roll it into balls. Place the meatballs into the pot, cooking for one minute. Flip the meatballs.
  • Add the beef broth, milk, remaining ½ tablespoon salt, remaining ½ tablespoon pepper, and Worcestershire sauce and give it a stir.
  • Bring the liquid to a boil, then add the egg noodles. Stir constantly until the pasta is cooked and the liquid has reduced to a sauce that coats the noodles, about seven to eight minutes.
  • Add the parmesan and the parsley, stirring until the cheese is melted.

1 1/2 pounds ground sirloin
1 large egg, beaten
1 cup (3 handfuls), Italian bread crumbs
1 medium onion, chopped fine
4 cloves garlic, crushed and minced
1/2 teaspoon crushed red pepper flakes
2 teaspoons (several drops) Worcestershire sauce,
1/4 cup (a couple of handfuls) flat-leaf parsley leaves, chopped
1/4 cup (a couple of handfuls) grated Parmigiano or Romano
Coarse salt and black pepper
2 tablespoons extra-virgin olive oil, (2 turns around the pan)
4 cloves garlic, crushed and chopped
1/2 teaspoon crushed red pepper flakes
A handful flat-leaf parsley leaves, chopped, about 2 tablespoons
1/2 teaspoon dried oregano
One 28-ounce can crushed tomatoes
One 14-ounce can chunky style crushed tomatoes
Salt and freshly ground black pepper
4 semolina crusty sub rolls, with or without sesame seeds
One 10-ounce bag (2 1/2 cups) shredded Provolone or Italian 4-cheese blend
Shredded basil (sweet) or shredded arugula (spicy) leaves, for garnish
Oven Fries, as an accompaniment, recipe follows
4 medium white skinned potatoes, each cut into 8 wedges lengthwise
Extra-virgin olive oil, to coat
Grill seasoning blend or coarse salt and black pepper

Steps:

  • Preheat oven to 450 degrees F.
  • Place ground sirloin in a large mixing bowl and punch a well into the center of meat. Fill well with the egg, bread crumbs, onion, garlic, red pepper flakes, Worcestershire, parsley, cheese, and a little salt and pepper. Mix up meatball ingredients until well combined, yet not over-mixed. Divide mix into 4 equal parts, roll each part into 4 balls and space equally onto a nonstick baking sheet. Place meatballs in oven and roast about 12 minutes. Break a meatball open and make sure meat is cooked through before removing from the oven.
  • Heat a medium saucepan over medium heat. Add oil and garlic. When garlic starts sizzling, add herbs and crushed pepper. Allow oil to infuse for half a minute, then stir in the tomatoes and season sauce with salt and pepper. Bring sauce to a bubble, reduce heat, and simmer until meatballs are removed from oven.
  • Combine meatballs and sauce and pile into sub rolls, 4 meatballs per sub. Top with shredded cheese and place under subs under broiler to melt cheese. Top with shredded basil or arugula and serve with a pile of Oven Fries.
  • Drizzle potatoes with a generous pour of extra-virgin olive oil. Toss potatoes with seasoning blend or coarse salt and pepper. Place potatoes on a nonstick baking sheet and roast 20 minutes or until just tender. Give the baking sheet a good shake after 10 minutes to avoid sticking.

6 oz beef mince
6 oz pork mince
1 egg
1 tablespoon dill, fine chopped
1 onion, finely diced
½ cup breadcrumb
1 teaspoon salt
1 teaspoon pepper
⅛ cup water
1 beef stock cube
⅞ cup double cream
2 teaspoons dijon mustard
2 teaspoons worcestershire sauce
3 soft french sticks
1 cucumber, thinly sliced
1 cup Cranberry jam, or lingonberry jam

Steps:

  • Thoroughly mix all the meatball ingredients, and shape them into golf ball-sized balls.
  • Over low to medium heat, fry all sides of the meatballs, until the meatballs are cooked through and the outsides are golden brown. It will take around 12-15 minutes.
  • If you are making a large quantity for a party, make the meatballs in advance and reheat them in an oven for 10-15 minutes at 175°C. (When reheating, ensure the meatballs are piping hot throughout before serving.)
  • To make the cream sauce, dissolve a beef stock cube in 20 milliliters of water. Then add in cream, mustard, and Worcestershire sauce.
  • Toss the meatballs in the sauce while it reduces to a thick and creamy sauce.
  • Serve the meatballs in soft French sticks with sliced cucumber and lingonberry or cranberry jam.

SWEDISH MEATBALL SANDWICH

For my final exam in one of my culinary classes, we had to create a sandwich that reflected a culture which we had some familiarity with. I'm of Swedish decent, and so decided to make an open faced Swedish meatball sandwich. This is the result, and I passed the exam with full points. I use the meatballs from my recipe #367918, but if you don't feel like making them from scratch, use a Swedish meatball that is easy for you. Don't use an Italian meatball, the flavor profile is entirely different. FYI- The exam I originally made this for required the use of chicken, so I subbed ground chicken thigh for the meats in the recipe I noted above. Feel free to do so if you'd like, it still tasted authentic as the seasonings were true to the original.

1/8 cup apple, coarsley grated
1 tablespoon red onion, finely chopped

  • Set the breadcrumbs to soak in the cream in a bowl.

The instant coffee really picks this up. Generally, I buy the frozen Swedish meatballs and pour this sauce over the finished product. Sure beats the hassle of preparing the meatballs from scratch.

This is a recipe I remember my mother making for dinner parties when I was very young. I loved to sneak in and sample a few when she wasn't looking. Mom served this with rice as a main dish. This has a very different sauce from other Swedish meatball recipes I have since tasted -so I am not sure if these are authentically Swedish or not. I just know that they are rich and tasty and there were never any leftovers. I snagged this from Mom's recipe collection. This makes about 30 medium sized meatballs.

3/4 lb lean ground beef
1/2 lb lean ground veal
1/4 lb ground lean pork
1 1/2 cups soft breadcrumbs (1-2 large stale roll freshly ground up)
1 cup light cream or 1 cup half-and-half
1/2 cup onion, finely chopped
2 teaspoons unsalted butter
1 large egg
1/4 cup fresh parsley, finely chopped
1 1/4 teaspoons salt
1 dash black pepper, to taste
1 dash ground ginger, to taste
1 dash ground nutmeg, to taste
1 -2 tablespoon unsalted butter
2 tablespoonst unsalted butter
2 tablespoons all-purpose flour
1 beef bouillon cube

Steps:

  • Soak breadcrumbs in cream 5 minutes,or until very soggy.
  • Meanwhile, in a small skillet, melt 2 tsp butter and sauté onion until soft and tender.
  • Combine meats well (if you can't get each type, that's ok- just end up with 1 1/2 pounds ground meat total).
  • Add soaked bread crumbs mixture, sautéed onion, egg, parsley, salt, pepper, and spices to taste to the meat mixture.
  • Mix well until combined.
  • Cover and chill meat mixture for 30 minutes to firm up.
  • Form about thirty 1 1/2" size meatballs (using a meatball scoop).
  • Brown meatballs in 1-2 Tbsp butter in a very large deep sided skillet until browned on all sides, but not cooked all the way through yet; then remove from skillet using a slotted spoon and set aside in a covered dish to keep warm.
  • Combine boiling water,coffee powder and crumbled bouillon cube together until blended.
  • In the hot drippings from the pan, add 2 Tbsp butter and stir until melted.
  • Whisk in 2 Tbsp flour, sprinkling in the flour gradually so it doesn't clump and whisking vigorously until blended.
  • Whisk in the coffee mixture and cook and stir until gravy thickens and bubbles, over medium or medium-high heat.
  • Add meatballs to the pan, cover,lower heat to medium low, and let meatballs cook in the gravy until fully cooked (approx 30-40 minutes), stirring occasionally.

2 lbs ground beef
1/2 cup breadcrumbs
2 eggs
1 (1 ounce) package onion soup (I use Lipton)
3 -6 tablespoons water
1 teaspoon kosher salt (or 1/2 tsp table salt)
1 tablespoon Worcestershire sauce
2 (3/4 ounce) packages mushroom gravy (I use McCormick)
1 (1 ounce) package onion soup (I use Lipton)
2 cups water
2 cups sour cream

Steps:

  • For the Meatballs: Combine breadcrumbs, 1 packet onion soup, salt, 2 eggs, Worcestershire sauce, and enough water to make the mixture pasty and not dry. Combine in ground beef and mix well.
  • Rolls into cocktail size meatballs and place on nonstick jelly roll style pan.
  • Bake in preheated 400°F oven for 15 minutes or until done.
  • For the Sauce: In large sauce pan combine 2 packets of McCormick Mushroom gravy, 1 packet onion soup, and 2 cups water. Bring to boil and simmer 1 minute.
  • Turn to low and stir in 2 cups sour cream until fully incorporated.
  • Stir in meatballs and gently simmer for a few minutes. Serve warm in crockpot for parties, or serve over noodles for dinner.

Not sure why they're called "Swedish Meatball" - they just taste like great, juicy burgers! We just made these in a skillet on med-high (5 mins per side) and they came out perfect! Cooking Light suggests to eat these on potato rolls or served over egg noodles and to top with 1 tablespoon of sour cream each. We had them on toasted rolls with a little cheese and spinach. Also, mine only made 5 servings (but I like thick burgers!).
