3 slices bacon
2 heads freshly cut swamp cabbage (hearts of palm), chopped
1/2 cup sugar
1 tablespoon salt
1/2 tablespoon freshly ground black pepper

Steps:

  • In a medium saucepan, fry the bacon over medium heat. Set aside, reserving drippings. Put swamp cabbage and remaining ingredients, including fried bacon and bacon drippings, in a 6-quart pot. Fill the pot 1/2 full with water and bring to a boil. Continue to boil for 10 to 15 minutes, until the cabbage is tender. Adjust salt and pepper, to taste. Serve hot as a side dish.

Swamp cabbage is an old-time Florida cracker favorite vegetable obtained from the heart of the cabbage palm, which is the official state tree of Florida. . The cabbage palm grows wild throughout Florida and is also known as palmetto palm, sabal palm, and swamp cabbage tree. The swamp cabbage is taken from the center of the tree. But once the heart is taken, the tree dies. Although the swamp cabbage grows wild, it is protected from indiscriminate cutting by its designation as Florida's state tree. If you pull up a chair up at a gourmet restaurant, you order hearts of palm. If you pull up a chair up in a Florida Cracker kitchen, you order swamp cabbage. Hearts of palm is served in good restaurants all over the country, but finding Florida swamp cabbage is a little more difficult. Ask most folks who have been around Florida for a lifetime what swamp cabbage tastes like and you get smiles. They open their mouths, in all sincerity to tell you all about how yummy it is. Then they close their mouths and get a curious look on their faces. ''Uhhh . . . you just have to try it,'' they say. ''There's nothing else like it.''

0.5 (14 ounce) can hearts of palm, drained, cut into 1/2-inch-thick rounds
1 cup cherry tomatoes, halved
8 pickled beets, halved
3/4 cup blue cheese, crumbled
2 green onions, chopped
1/2 cup balsamic dressing, bottled

Steps:

  • Combine all ingredients except dressing in large bowl; toss to blend.
  • Add 1/2 cup dressing (or more); toss again to coat.

1/4 cup white wine vinegar
1/2 cup olive oil
1 teaspoon Dijon mustard
1 teaspoon sugar
Kosher salt
Fresh ground pepper
1 cup finely shredded green cabbage
1 cup finely shredded red cabbage
1/2 cup julienned carrot
1/2 cup julienned red pepper
1/4 cup finely slivered red onion
1 small bunch chives, cut into 2-inch lengths

Steps:

  • In a bowl whisk together the vinegar, oil, Dijon, sugar, and season with salt and pepper. Set aside.
  • In another bowl, toss the cabbage, carrot, red pepper, red onion, and chives together lightly.
  • Drizzle the salad with the vinaigrette, and toss to coat.

20g pack parsley , roughly chopped
2 Cox's apples , quartered, cored and sliced
handful of radishes or 2 celery sticks, sliced
3 tbsp toasted pine nuts
1 tbsp pumpkin seeds
2 tbsp each sunflower seeds and linseeds
2 tsp grated root ginger
1 tsp clear honey
2 tbsp lemon juice
4 tbsp light olive oil

Steps:

  • Prepare all the ingredients for the salad and mix them in a large bowl.
  • Put all the dressing ingredients into a small bowl. Season and whisk until slightly thickened. Pour over the salad and toss until evenly coated.
