SOFTEST EVER BREAD MACHINE BREAD
My sister gave me this recipe soon after I brought home my bread machine. It's a staple in our house. Soft and fluffy and great for sandwiches or just to eat fresh out of the oven! UPDATE 3/25/2005 - I made this using the dough cycle of my bread maker today but baked it in the oven and it turned out perfectly! I baked it at 350°F for 25-30 minutes.

Steps:
- Place the water, sugar and yeast in the pan of the bread machine.
- Let the yeast dissolve and foam for 10 minutes.
- Add the oil, flour and salt to the yeast.
- Select Basic or White Bread setting, and press Start.
- You can also use the dough cycle of your bread maker and then place in a greased loaf pan; punch down and let rise again and then bake at 350 for 25-30 minutes or until done.

WALTER SANDS BASIC WHITE BREAD, BREAD MACHINE VERSION
This is the best white bread recipe I have ever made. It easily converts itself to rolls, cinnamon raisin swirl bread, whatever. My family really likes it. I know yours will, too. Copied directly from the King Arthur flour website

Steps:
- Put everything in the bread maker in the above order. I choose the dough setting, as I don't like to bake my bread in it. Let rise until doubled, it may take longer than the time allotted by the machine. Remove, form, put in a 9x5' bread pan. Cover with a damp towel or oiled cling wrap and let rise until it is an in to an inch and a half over the rim of the pan, about an hour.
- Bake in a preheated 350 degree oven for 35 to 40 minutes, rotating halfway through for even browning. Remove, turn out, let cool completely on a wire rack and offer to a friend.
- One footnote; I like to use hi-maize natural fiber as part of the flour, 1/3 cup, it makes white bread healthier, and you don't even know it is there!
SUSAN'S HERBED ITALIAN BREAD
I used a bread machine to mix this, but took it out before baking, and let it rise a second time. I wanted to shape it into long loaves like traditional Italian bread.

Steps:
- Place the ingredients into the bread machine in the order given. Turn on bread machine and process according to manufacturer's directions for "dough only" use. Do not bake in the machine.
- When dough has completed its first rising, turn it out into a large oiled bowl, punch down and knead 5-10 strokes. Cover and let rise in a warm place for 1 hour.
- When rising is complete, punch down again and divide into 2 parts. Shape each part into a loaf by rolling each ball into a long log. Make 3-4 diagonal slices across the top of each loaf with a very sharp knife, cutting down about 3/4". Put loaves on a large baking sheet that has been dusted with cornmeal. Place pan in oven, with a pan of boiling water on the bottom shelf. Let rise, uncovered, about 20 minutes.
- After 20 minutes, leaving pan in the oven, set oven to 425 degrees. Bake for 25-30 minutes, until loaves sound hollow when tapped on bottom. Cool on racks.
FINNISH COFFEE BREAD (BREADMAKER RECIPE)
Finnish Coffee Bread for a 2 lb. breadmaker on dough setting, but can also be made in a 1 1/2 lb breadmaker. Prep time includes rising time. Recipe adapted from recipe printed on genealogia.org)

Steps:
- Put all the ingredients in the bread machine on the dough setting, in the order specified for your machine.
- When the dough cycle completes, remove, divide in half and then split each part into 3 equal pieces.
- Roll into long strands (18" long), and braid strands into 2 loaves.
- Put loaves on greased cookie sheets.
- Let rise until doubled in size (30 minutes). Brush with second egg and sprinkle with sugar.
- Bake at 375°F for 20-25 minutes or until golden brown.
- Immediately after taking them out of the oven, remove from pans. Cool on racks.
