MEXICAN RICE
Steps:
- In a large bowl, combine the rice with enough very hot tap water to cover. Stir and let sit for about 10 minutes. Drain, rinse in cold water, and drain again, shaking thoroughly. In a blender, combine the tomatoes, onion, and garlic and blend until smooth, scraping down the sides of the container as necessary. Set aside.
- In a large heavy saucepan, heat the oil over medium high heat. Add the rice and cook, stirring occasionally, until the rice turns a light golden color, about 10 minutes. Do not let it scorch. Add the tomato puree and fry, scraping the bottom of the pan to stop the mixture from sticking, for 6 to 8 minutes, or until all the liquid has been absorbed. Add the chicken broth, carrots, zucchini, and giblets, if using. Stir in the salt and reduce the heat to medium low. Cook the rice uncovered and undisturbed until almost all of the broth has evaporated and little air holes form in the surface. Cover the top of the pan with a towel and the lid, reduce the heat to very low, and cook for 5 minutes more. Remove the pan from the heat and let rest for 10 minutes more, so that the rice can absorb the steam and swell. Just before serving, turn the rice over from the bottom so that the juices are redistributed.
MEXICAN RED RICE
Steps:
- Preheat the oven to 350 degrees. Heat the oil in a medium heavy saucepan or skillet over medium low heat. Saute the rice, stirring constantly, until golden and crackling, about 5 minutes. Add the onions and Serranos and cook until the onions just soften. Then add the garlic and saute until the aroma is released. Pour in the stock or water and the tomato salsa, mixing well to combine. Transfer to a 4 quart baking dish or casserole. Cover with foil and bake until the liquid is absorbed and the rice is tender, 30-40 minutes. Stir and serve hot.
- Heat the vegetable oil in a medium skillet over moderate heat. Cook the onions until soft, about 10 minutes. Transfer to a food processor fitted with the metal blade, or a blender. Add the remaining ingredients except salt and puree, in batches if you are using a blender, until smooth. Pass through a medium strainer, pressing with a spatula or wooden spoon to push through as much pulp as possible. Pour into a saucepan, and add the salt. Bring to a boil, reduce to a simmer and cook, uncovered, 20 minutes. Adjust seasoning and serve as dipping sauce for chips or use in other recipes.
BLACK EYED SUSANS
I found this recipe in one of our local church cookbooks. This makes a pretty eye catching cookie and is quite easy to make. Cook time is per cookie sheet.

- Combine butter, sugars, egg, vanilla and peanut butter until creamy.
- Sift flour, soda and salt together and add to creamed mixture.
- Force batter thru flower disk of cookie press onto greased cookie sheet.
- Put a chocolate chip in center of each.
- Bake@375 F for 12-15 minutes.

SUSAN'S BAKED RICE
This is a delicious recipe from The Lady & Sons Savannah Country Cookbook. We had this a few nights ago and the whole family enjoyed it immensely. Great doubled for a potluck supper side dish! If you're concerned (as I was) with the fact that raw rice is put into an uncovered 9x13, no worries. It turned out just fine.

- Add bouillon cubes.
- Stir until dissolved.
- Combine rice and water and add to mixture.
- Pour into a 13x9" baking dish.
- Sprinkle with pepper.
- Bake for 45 minutes.
- Goes great with baked or fried chicken.
