INSTANT POT GREEN BEANS
Instant Pot Green Beans are quick to make and take less than 15 minutes from start to finish. One of the easiest Instant Pot side dishes!

- Wash the green beans and trim off the tough stem ends.
- Pour 1 cup of water into the Instant Pot inner pot and add a steamer basket to the pot. Place the green beans in the steamer basket. If you do not have a steamer basket you can cook the green beans right in the water in the pot.
- Close the Instant Pot lid and turn the steam release valve to the sealing position. Set the pressure cook time to 0 minutes at high pressure for crisp-tender green beans. Even though the pressure cook time is set to zero, the green beans will cook while the Instant Pot pressurizes. If you want your green beans softer, set the cook time for 1-3 minutes, depending on how soft you want your green beans.
- The Instant Pot will take about 8 minutes to reach pressure. When the cook time finishes, the Instant Pot should beep a few times to let you know the cooking cycle has ended (assuming you haven't turned off the sound on your pot). Immediately quick release the pressure by carefully turning the steam release valve to the venting position. When the pin drops down carefully open the Instant Pot lid.
- Serve green beans with butter, salt, pepper, and a squeeze of fresh lemon juice, or as desired.

SUPER SOFT INSTANT POT GREEN BEANS
This is to make falling-apart soft green beans. This can be helpful for people with IBD when they need to cook their foods really well to a super soft texture. Most recipes of course do not give timing for cooking (over-cooking) to this super soft texture, and it is helpful with a pressure cooker to have times, since you can't easily peak in & see how far along it is.

- Place trivet rack in Instant Pot. Pour in 2 cups water. Place a mesh metal steamer basket on top, and fill with frozen green beans.
- Pressure cook on high for 9 minutes. Manual steam release. (Total cook time will be 30 minutes, because it takes about 20 minutes to get up to pressure.)

- Pressure Cook Green Beans: Pour in ½ cup (125ml) cold water. Place steamer rack in Instant Pot. Place green beans on steamer rack. Pressure cook at Low Pressure for 0 - 2 minutes (0 minute for crunchy texture; 2 minutes for softer texture). Then, Quick Release.
- Serve: Green beans are ready to serve. If you are serving at this step, simply season with salt and black pepper.
- *Note: If you are proceeding with this optional stir-frying step, avoid seasoning at this step, drain water and set aside green beans to air dry.
