TAPIOCA PUDDING - EASY MICROWAVE METHOD
Here is an old-time favorite prepared by an updated method. I searched high and low for a good recipe for smooth tapioca pudding and this is my favourite. I sweeten it with maple syrup but you can use something else. Needs to soak overnight. Note: This pudding will thicken as it cools.

Steps:
- Soak 1/2 cup tapioca in 1 cup of milk overnight in the refrigerator.
- Pour 3 cups of milk into a 2 quart microwave-safe glass bowl or measuring cup. Add the soaked tapioca and maple syrup with a whisk. Microwave on high for 6 minutes and stir thoroughly with a whisk.
- Microwave on high again for 2 minutes, whisk and microwave 2 more minutes. Do not let it boil over.
- Add eggs and microwave 2 minutes. Whisk and microwave 2 more minutes.
- Stir in the vanilla and pour into individual serving dishes or a serving bowl. Chill and serve.
- Chocolate Tapioca: along with the vanilla, add 6 oz. (1/2 cup) semisweet chocolate chips and whisk until they are melted and blended.
SUPER SIMPLE MICROWAVE CHOCOLATE TAPIOCA PUDDING
We make this at our house when we are craving chocolate tapioca pudding. It is so simple to make...it can even be made in the microwave. Note: Prep and cook time does not include cooling.

Steps:
- Pour milk in a large deep microwave safe bowl. (I use a 6 cup glass measuring cup).
- Add the chocolate pudding powder and whisk to combine.
- Stir in the tapioca and allow to sit for 5 minutes to soften.
- Microwave on high 8 minutes stirring every two minutes.
- Top with fruit and whipped cream if desired.

CHOCOLATE TAPIOCA PUDDING
Steps:
- Soak the tapioca in the water overnight.
- Drain the tapioca and discard the liquid. Combine the milk and salt in a heavy bottomed saucepan and bring almost to a simmer; tiny bubbles will form around the edges of the pan. Stir in the tapioca and bring to a boil, stirring constantly, then turn down the heat as low as possible and cook, stirring frequently, for 10 to 15 minutes, until tapioca pearls have swollen and are translucent and tender. (If the tapioca is not presoaked, the extra cooking time will come in here.)
- Whisk the eggs and maple syrup together in small bowl, then gradually add 1 cup of the tapioca mixture to the eggs while whisking constantly. Whisk the egg mixture back into the saucepan with the tapioca and continue to cook over very low heat, stirring constantly, until the pudding is bubbling gently. Cook for about 5 minutes, until somewhat thickened. The pudding will do most of its thickening while it cools, so don't overcook it at this point or the texture will be rubbery texture.
- Remove from the heat and stir in the chopped chocolate. Let stand for 1 minute, then stir until the chocolate has melted and is thoroughly mixed into the pudding. Stir in the vanilla.
- Transfer to a heatproof bowl or serving dish and serve warm or chilled. If you're serving it chilled and want to prevent a skin from forming, place a piece of parchment paper directly on the surface of the pudding and refrigerate for at least 2 hours.

CHOCOLATE TAPIOCA PUDDING
Chocoholic? After eating this rich chocolate pudding you'll question the integrity of box puddings! Use dark, semisweet, or milk chocolate, whatever suits your taste buds! You may want to use a bigger saucepan, I think its easier to mix in. A whisk would beat a spoon by far (no pun intended). If this dish isn't rich enough for you, you could try using chocolate milk, but any milk is fine: skim, 1%, 2%, whole, even soy milk. Same thing with the chocolate; use whatever suits your taste buds: dark, semisweet, or milk chocolate.

- Combine 1/2 cup milk and cornstarch in a small bowl. Whisk or stir with a fork until smooth and all lumps have been incorporated.
- Combine remaining milk with sugar in a medium saucepan over low heat. Slowly whisk in the cornstarch mixture. Cook, whisking as needed to prevent lumps from forming, until mixture begins to thicken, 8 to 10 minutes. Add chocolate chips and salt. Continue stirring until chips are completely melted and pudding is smooth and thickened, about 7 minutes more.
- Pour pudding into 1 large bowl or 6 individual bowls. Place plastic wrap directly on top of the pudding to prevent a skin from forming; smooth it gently against the surface. Refrigerate for at least 3 to 4 hours before serving.

Steps:
- Put milk, tapioca and sugar in 2 quart microwavable bowl.
- Microwave on high for 12 minutes, stirring occassionally.
- Meanwhile, put the egg yolk in a small bowl and stir until smooth. When the milk mixture is finished, slowly drizzle 1 cup or more of the hot milk into the yolk while beating the yolk. Then pour the egg mixture back into the milk bowl and stir till combined.
- Microwave the milk and egg mixture on high for 2 minutes. Then stir in the vanilla and butter.
- This makes 6 servings of 1/2 cup each.

SUPER FAST AND EASY MICROWAVE CHOCOLATE PUDDING
I'm mostly posting this so I don't have to go hunting for it every time I want to make it. My mom gave it to me ages ago, and while it isn't the most life changing pudding in the universe it's rediculously fast to make, can be easily varried a number of ways to suit your mood and is plenty tasty for those nights when you want pudding NOW! I like to use a shallow glass container so that it cooks faster. You can leave out the chocolate for vanilla pudding. I like to make it with Silk Nog Soymilk around the hollidays.

- In a 4 cup microwave safe glass container combine dry stuff, then stir in the wet stuff.
- Cook on high for 2 minutes, then whisk the mixture.
- Cook on high one more minute at a time, whisking after each minute, until thickened.

DECADENT TAPIOCA PUDDING
A quick and easy microwave dish that tastes like you spent hours whipping it up. This is my stepped up version with more flavor than the bland recipe on the box. Tapioca is my favorite comfort food, but hubby and I have an ongoing disagreement about whether it should be served chilled - I like it slightly warm, hubby likes it chilled. - Mix sugar, tapioca, milk, egg and salt in large bowl. Let stand 5 minutes. (Use a bowl where your ingredients only come up half way so there's room to boil without boiling over.).
