2 tablespoons coconut oil
1 3-inch piece fresh ginger, peeled and thinly sliced
4 cloves garlic, thinly sliced
1 large turnip (about 10 ounces), peeled and cut into 1/2-inch cubes
2 cups shredded kale or other winter greens
2 teaspoons ground turmeric
Kosher salt and freshly ground pepper
4 cups low-sodium chicken broth
1 15-ounce can chickpeas, drained and rinsed
3 cups shredded rotisserie chicken (skin removed; about 12 ounces)
Fresh lemon juice, to taste
Whole-wheat naan bread, warmed, for serving

Steps:

  • Heat the coconut oil in a large pot over medium-high heat. Stir in the ginger and garlic; cook until the ginger softens and the garlic just starts browning, about 3 minutes. Add the turnip and kale and cook, stirring occasionally, until the kale is wilted, about 4 minutes.
  • Add the turmeric and 1/2 teaspoon each salt and pepper; stir until the vegetables are coated. Add the chicken broth and 3 cups water. Bring to a boil, then reduce the heat to a simmer and cook until the turnip is just tender, about 10 minutes.
  • Add the chickpeas and chicken to the pot. Increase the heat to medium high and return the soup to a simmer. Cook until the chicken is warmed through, about 5 minutes. Season with salt, pepper and a squeeze of lemon juice. Serve with naan.

1 whole chicken (about 4 pounds), cut into pieces (including back)
8 cups water
Coarse salt
3 medium onions, thinly sliced (4 cups)
2 celery stalks, sliced crosswise 1/4 inch thick
4 garlic cloves, crushed
6 medium carrots, sliced 1/2 inch thick

Steps:

  • Bring chicken, water, and 1 tablespoon salt to a boil in a large stockpot. Skim foam. Add onions, celery, and garlic. Reduce heat. Simmer, partially covered, for 30 minutes.
  • Remove breast, and set aside. Add carrots. Simmer, partially covered, for 40 minutes.
  • Remove remaining chicken; discard back and wings. Let cool slightly. Remove meat from bones, and cut into bite-size pieces.
  • Stir in desired amount of chicken; reserve the rest for another use. Skim fat. Season with salt.

1 (3 pound) whole chicken
4 carrots, halved
4 stalks celery, halved
1 large onion, halved
water to cover
salt and pepper to taste
1 teaspoon chicken bouillon granules

Steps:

  • Put the chicken, carrots, celery and onion in a large soup pot and cover with cold water. Heat and simmer, uncovered, until the chicken meat falls off of the bones (skim off foam every so often).
  • Take everything out of the pot. Strain the broth. Pick the meat off of the bones and chop the carrots, celery and onion. Season the broth with salt, pepper and chicken bouillon to taste, if desired. Return the chicken, carrots, celery and onion to the pot, stir together, and serve.

1 cup carrot, chopped
2 cups celery, chopped

6 cups hot water
8 teaspoons chicken base

  • Place first 5 ingredients in a soup pot and saute for 5 minutes.
  • Add chicken, stir.
  • Combine hot water and base then add to your pot.
  • Cook (medium boil) for 15 minutes or until carrots are done enough for you.
  • Combine cold water and corn starch then add to your pot while stirring.
  • Your soup will thicken and be ready to serve.
  • *You can add more cornstarch mixture if you would like it thicker. I like mine somewhere between a soup and a stew consistency.*.

This soup has all the classic flavors (celery, carrot, parsley) but has been updated for today's cooks, who can't easily buy the stewing hen and packet of soup vegetables that old-fashioned recipes used to call for. A whole bird provides the right combination of fat, salt and flavor. Don't be tempted to use all white meat, as the flavor won't be as round. Because making soup involves the bones and deep tissues of the bird, it is particularly reassuring here to use the highest-quality poultry you can find. This method produces a fragrant, golden, savory soup you want to eat all winter long; it's a perfect backdrop for noodles, rice or matzo balls.

1 chicken, 3 to 3 1/2 pounds, with skin, cut up
3 stalks celery, with leaves, cut into chunks
2 large carrots, cut into chunks
2 yellow onions, peeled and halved
1 parsnip or parsley root (optional)
About 1 dozen large sprigs parsley
About 1 dozen black peppercorns
2 bay leaves
2 teaspoons kosher salt, more to taste
3 tablespoons reserved chicken fat, more if needed
3 leeks, trimmed, halved lengthwise, rinsed and sliced crosswise into thin half-moons
3 large carrots, peeled and cut into small dice
Kosher salt and ground black or white pepper
Egg noodles (fresh or dried), such as packaged wide noodles, spaetzle, fettuccine or pappardelle cut into short lengths (see note)
Finely chopped herbs, such as parsley, scallions, dill or a combination

Steps:

  • Place the chicken, celery, carrots, onions, parsnip (if using), parsley, peppercorns, bay leaves and salt in a large soup pot and cover with cold water by 1 inch.
  • Bring to a boil over high heat, then immediately reduce the heat to very low. Adjust the heat until the soup is "smiling": barely moving on the surface, with an occasional bubble breaking through. Cook uncovered, until the chicken is very tender and falling off the bone, 1 to 1 1/2 hours.
  • When cool enough to handle, use tongs to transfer chicken from the pot to a container. Taste the broth and continue to simmer it until it is concentrated and tasty. Strain broth through a fine sieve (or a colander lined with cheesecloth) into a separate container. Discard all the solids from the strainer (or reserve the vegetables, chill and serve with vinaigrette, if you wish).
  • Refrigerate chicken pieces and broth separately for at least 8 hours (or up to 3 days), until a thick layer of yellow fat has risen to the top of the broth.
  • When ready to finish the soup, use your fingers to separate chicken breast meat from bones and skin. Discard bones and skin. Use two forks to pull the breast meat apart into soft chunks, or use a knife and cut into bite-size pieces. (Reserve dark meat for another use.)
  • Skim chicken fat from top of broth and set aside. Place 3 tablespoons of the fat in a soup pot with a lid. Add leeks, stir to coat, and heat over medium heat until leeks begin to fry. Then reduce the heat to a gentle sizzle and cook, stirring often, until slightly softened, about 3 minutes.
  • Add carrots, sprinkle with salt, stir, and cover the pot. Cook until vegetables are just tender, about 5 minutes more. (Keep in mind that vegetables will continue to cook in the soup.) Do not brown.
  • Pour broth into pot with vegetables and heat to a simmer. Add noodles and simmer until heated through, soft and plumped with chicken broth. Add the breast meat, then taste broth and add salt and pepper to taste. For best flavor, soup should have some golden droplets of fat on top; if needed, add more chicken fat one teaspoon at a time.
  • Serve immediately, in a tureen or from the pot, sprinkling each serving with herbs.

4 chicken breasts, with bones and skin attached
2 whole carrots, cleaned, not skinned, cut in 2-inch chunks
1 large onion, quartered
3 stalks celery, cleaned, leaves attached, cut in 2-inch chunks
6 garlic cloves
1 tablespoon black peppercorns
12 cups water
2 cups chopped carrots
2 cups chopped onions
2 cups chopped celery
1/4 cup chopped parsley
salt and pepper
cooked noodles (optional) or cooked rice (optional)

Steps:

  • Season chicken breasts with salt and pepper.
  • Roast chicken breasts with large chunk-veggies in a large dutch at 400°F until done, 35-45 minutes.
  • Remove chicken from pan and cool.
  • Remove meat from breasts and reserve.
  • Place skin and bones back into the dutch oven.
  • Place pan back on stove over a medium heat, stirring occasionally until contents are well browned.
  • Add small amount of water to pan and bring to a boil, stir to remove all brown bits from the bottom of the pan.
  • Add remaining water and peppercorns, bring to a boil, reduce to simmer and cook, partially covered, for 1 1/2 - 2 hours.
  • Skim as required.
  • Add more water if level gets too low.
  • You can add any other herbs that you like at this time.
  • I like thyme and basil, but nothing is required.
  • Remove dutch oven from heat, skim fat off surface and strain liquid into a soup pot.
  • Place soup pot over medium heat and bring stock to a boil.
  • Add chopped veggies and parsley and lower heat to maintain a good rolling boil.
  • Cook for 15-20 minutes, or until veggies are tender and sweet.
  • Lower heat to simmer.
  • Adjust water to suit your own tastes add more if you want more, weaker, broth.
  • If desired add some frozen vegetables at this time.
  • A bit of corn and lima beans are good, While the veggies are boiling chop reserved chicken and prepare your noodles.
  • Add chicken to pot and stir.
  • Don't add the chicken too early or it will be shredded.
  • Adjust seasoning.
  • Place noodles or rice in bottom of a soup bowl, ladle a generous amount of soup over it.
  • Don't add your rice/pasta to the main soup bowl--it will quickly over cook and become mush (and ruin all your leftovers!).

1kg pack free-range chicken thigh, skin removed
300ml dry white wine
2 large onions, cut into large wedges
4 celery sticks, quartered
3 leeks, quartered
2 sprigs thyme, plus extra leaves for sprinkling
2 bay leaves
½ tsp ground white pepper (optional)
40g plain flour
300ml pot double cream

Steps:

  • Put the chicken thighs in a very large, heavy-based pan and fry for a few mins, turning frequently to lightly colour them. Providing the heat is low, there is no need to add any oil. Pour in the wine, turn up the heat and boil rapidly to evaporate the alcohol. Pile in the veg and herbs, add 1 tsp salt and the white pepper (or you can use black pepper). Pour in 2 litres boiling water. Cover the pan and simmer for 45 mins until the chicken and veg are tender. Take out the bay leaves and thyme sprigs and cool for about 30 mins.
  • Remove chicken from the soup, then strip the meat from the bones. Put all but 140g of the chicken back into the pan. Blitz the soup with a hand blender or in batches in a food processor until very smooth, then return to the pan.
  • Blend the flour and cream together with a couple of ladles of the soup, then stir the creamy mixture into the rest of the soup and heat, stirring continuously until thickened. You can blitz again if it looks a little lumpy. Chop the remaining chicken and stir into the soup. Scatter with thyme leaves, to serve.
