Time 25m

Yield 2 servings

Number Of Ingredients 20

1 tablespoon unsalted butter
2 shallots, minced
1/2 cup mayonnaise
1 tablespoon finely chopped chives
1 tablespoon lemon juice
1/2 teaspoon dry mustard
Kosher salt and freshly ground black pepper
8 ounces crabmeat, picked free of shells
1/3 cup crushed butter crackers, such as Ritz
1/3 cup fresh or thawed frozen corn kernels, finely chopped
1/3 cup finely chopped bell pepper, any color
1/4 cup mayonnaise
2 tablespoons finely chopped chives
1 teaspoon dry mustard
1 teaspoon Worcestershire sauce
1 large egg
Juice of 1/4 lemon
Kosher salt and freshly ground black pepper
All-purpose flour, for dusting
Vegetable oil, for pan frying

Steps:

  • For the aioli: Melt the butter in a small nonstick skillet over medium heat. Cook, stirring, until the shallot is just soft, about 3 minutes. Allow to cool.
  • Combine the mayonnaise, chives, lemon juice, dry mustard and shallots in a small bowl. Season with salt and pepper and let sit for about 10 minutes for the flavors to blend.
  • For the crab cakes: Mix together the crabmeat, crushed crackers, corn, bell pepper, mayonnaise, chives, mustard, Worcestershire, egg and lemon juice in a large bowl. Season with salt and pepper. Shape into four 1-inch-thick patties and dust with flour.
  • Heat up a couple tablespoons of oil in a medium nonstick skillet over medium heat. When the oil begins to give off just a hint of steam, carefully place the patties in the skillet and fry until golden brown, 4 to 5 minutes per side. Serve the cakes with the aioli. Enjoy!

Time 40m

Yield 4 servings (8 crab cakes, serving size is 2 crab cakes)

Number Of Ingredients 19

Nonstick cooking spray
1 egg, lightly beaten
2 teaspoons Dijon mustard
1 teaspoon Worcestershire sauce
1 tablespoon fresh lemon juice
1/2 teaspoon crab boil seasoning (recommended: Old Bay)
Dash hot sauce
1/2 cup finely chopped red bell pepper
1 scallion, including green top, finely chopped
1 pound lump crab, meat picked over
3/4 cup dry bread crumbs
1/4 teaspoon salt
Pinch black pepper
Smarter Tartar Sauce, recipe follows
6 tablespoons nonfat plain yogurt
2 tablespoons mayonnaise
1 scallion, finely chopped
1/4 cup finely chopped sour pickles
1 tablespoon chopped capers

Steps:

  • Preheat the oven to 400 degrees F. Coat a baking sheet with nonstick cooking spray.
  • In a medium bowl mix together the egg, mustard, Worcestershire sauce, lemon juice, crab boil seasoning, and hot sauce. Stir in the bell pepper and scallion. Gently fold in the crab, 1/4 cup of the bread crumbs, salt and pepper. Put the remaining bread crumbs in a shallow dish.
  • Divide the crab mixture into 8 mounds. Shape each mound into a round and coat in bread crumbs. Transfer to the prepared baking sheet and flatten the crab cake to form a patty about 1-inch high. Repeat to form the remaining crab cakes.
  • Bake until golden on the bottom, about 10 minutes. Gently flip the crab cakes and cook until the second side is golden, 5 to 10 minutes longer.
  • Serve crab cakes with tartar sauce alongside.
  • Spoon yogurt into a small bowl lined with paper towels. Place in the refrigerator until some of the liquid from the yogurt is released, about 30 minutes. Scoop thickened yogurt into a small bowl, add the rest of the ingredients and stir to combine.

"BAWLMER" CRAB CAKES

Provided by Food Network

Time 27m

Yield 4 servings

Number Of Ingredients 11

1 pound jumbo lump crab meat
1 large egg, beaten
1 1/2 tablespoons mayonnaise
1 teaspoon brown mustard (recommended: Gulden's)
1 teaspoon seafood seasoning (recommended: Old Bay)
1 tablespoon Worcestershire sauce
1 tablespoon chopped fresh flat-leaf parsley
1 tablespoon baking powder
2 slices white bread, crust removed
3 ounces whole milk
Vegetable oil, for frying

Steps:

  • Place the crab meat in a large mixing bowl, being very gentle to not break up the lumps. Combine the egg, mayonnaise, mustard, seafood seasoning, Worcestershire, parsley, and baking powder in a small mixing bowl. Mix until everything is well incorporated. Add the mixture to the crab meat, but do not mix at this point.
  • Break the white bread into small pieces in another small bowl and add the milk to moisten. Combine the moistened bread with the rest of the ingredients. Fold everything together lightly until just combined. Again, be very careful not to break up the crab meat. Using your hands, form a desired amount of mixture onto a tight ball shape and place into the refrigerator to chill.
  • Place a large nonstick skillet over medium to medium-high heat, adding enough vegetable oil to generously coat the bottom of the pan, about 1/4-inch. Add the crab cakes to the hot skillet, pressing down lightly to form a cake (do not smash into a pancake, this will dry it out). Cook until deep golden brown, about 6 minutes, and flip gently, cooking to the same degree on the opposite side. Remove from the skillet and drain off the excess oil on paper towels. Serve with your favorite sides and sauce.

THE ULTIMATE CRAB CAKES

Categories     appetizer

Time 35m

Yield 4 to 6 servings

Number Of Ingredients 22

Extra-virgin olive oil
1 onion, finely minced
4 garlic cloves, finely minced
1 1/2 pounds jumbo lump crabmeat
1 1/2 cups fresh bread crumbs (made from 4 or 5 slices white bread with the crusts removed and processed in food processor)
2 tablespoons mayonnaise, plus more if needed
1 large egg white
1/2 lime, juiced
1/4 cup freshly chopped cilantro leaves, plus whole leaves, for garnish
Kosher salt and freshly cracked black pepper
Kosher salt and freshly cracked black pepper
1 recipe Garlic Aioli with Celery Root, for serving, recipe follows
Lemon wedges, for garnish
2 cloves garlic
1/2 cup sour cream
1 cup mayonnaise
1 tablespoon celery seed
1 lemon, juiced
1/4 cup extra-virgin olive oil
Kosher salt and freshly ground black pepper
About 2 cups shredded celery root, shredded using the grater attachment of a food processor or a mandoline
2 tablespoons freshly chopped chives

Steps:

  • Make the crab cakes first so they have time to firm up in the refrigerator before you cook them.
  • Heat a 2-count of olive oil in a frying pan over medium heat. Add the onion and garlic and cook for 5 to 7 minutes, until the onion gets kind of caramelized. Dump that into a bowl and fold in the crabmeat, bread crumbs, mayonnaise, egg white, lime juice, and cilantro, mixing just until well blended. Season with salt and pepper. Shape the mixture into 6 fat crab cakes. Put them on a plate, cover, and stick them in the refrigerator to chill.
  • To serve, heat a 3-count of olive oil in a large saute pan over medium heat. Add the crab cakes and cook for about 4 minutes each side until nice and crisp. Serve on torn butcher paper with fresh lemon wedges and Garlic Aioli with Celery Root.
  • Mince garlic and make into paste using the side of your knife. Hint: to make this go faster add a bit of salt to the garlic and continue mashing with the side of your knife.
  • Place the paste in a large bowl and add: the sour cream, mayonnaise, celery seed, lemon juice, and oil. Season well with salt and freshly ground black pepper. Fold in the shredded celery root and chives. Give it a final taste and adjust seasoning, if necessary.
