Easy Stuffed Chicken Breast image

An easy, flavorful recipe I came up with one night after work when I wanted a change from the same old boring chicken! I don't saute the peppers in onions, but feel free to if you want to!

4 chicken cutlets
1 cup Italian breadcrumbs
2 tablespoons ranch dressing
1/2 cup ranch dressing
1/2 cup brown rice, fully cooked
1/4 cup diced onion
1/4 cup diced pepper (any color will work)
1/4 cup diced tomato
1/4 cup crumbled feta
4 slices prosciutto
salt and pepper

Steps:

  • ***PREHEAT OVEN TO 350 DEGREES***.
  • Cook rice (if you want to make it really simple - use one of those minute rice microwavable cups).
  • Mix together in a medium bowl 2T ranch dressing, the rice, the diced onion, diced pepper, diced tomato and feta cheese.
  • Make sure your chicken cutlets are pounded out to a 1/4" thickness.
  • Take a slice of prosciutto and place it inside of each of the chicken cutlets, the add filing. Roll up and secure with toothpicks.
  • Place the 1/2c of ranch dressing in a large bowl and the 1c of italian bread crumbs in a large bowl.
  • Roll the stuffed chicken cutlets into the ranch dressing, then into the bread crumbs then place on baking sheet coated with nonstick spray.
  • Bake in 350 degree oven for 30 minutes, or until no longer pink.
  • NOTE: I personally do not add any additional salt and peper to this recipe, as I believe there is enough in the ranch dressing.

These stuffed chicken breasts were delivered by a lady from our church after my son was born. Delicious and so easy to make.

Number Of Ingredients 6

4 boneless skinless chicken breasts
1 (6 ounce) box Stove Top stuffing mix
1/4 cup dried cranberries
1 teaspoon cinnamon
garlic salt
pepper

Steps:

  • Prepare stuffing as directed on box, adding 1/4 c dried cranberries and 1 ts cinnamon.
  • Flatten chicken breasts.
  • Wrap chicken breast around 1/2 c of stuffing.
  • Place chicken with the open side down in a 9 x 13 pan.
  • Sprinkle with garlic salt and pepper.
  • Put a couple teaspoons of water in the pan, cover with foil and bake at 350 for 30 minutes or until done.
  • The stuffed breasts can also be put in a crock pot with a can of cream of chicken soup over the top and cooked on low for 6 hours.
  • Also, for OAMC, freeze the stuffed breasts, thaw and then cook either way.
