Sunset Glory Pineapple Mocktail Food
PINEAPPLE & LIME MOCKTAIL
Mix a sparkling mocktail that will bring sunshine to any party - and to make it slightly sweeter, use soda water instead of tonic water

Steps:
- Dip a pastry brush in the honey and paint a line down one side of 4 tumblers. Sprinkle some edible gold glitter over the honey, dust off any excess, then put the glasses in the fridge.
- Chop the coriander leaves and place in a cocktail shaker with the lime juice, 100ml pineapple juice and a handful of ice. Shake together until the outside of the shaker feels cold. Strain into the glasses, add extra ice cubes and divide 650ml pineapple juice and the tonic water between the glasses.

VIRGIN SUNSET
This is my interpretation of a virgin sunset. I also refer to this as a pineapple, orange, cherry cocktail. The grenadine will sink to bottom causing layering of orange and red, hence, 'sunset.' If you wanted to make this alcoholic, a shot of champagne is my favorite, but tequila and vodka are other good alternatives. Flavored schnapps may also be an interesting mix.

- Fill a glass with ice. Pour orange juice, pineapple juice, and cranberry juice over the ice and stir. Float a splash of grenadine syrup atop the mixture and serve.

GAYLE'S SUNSHINE MOCKTAIL
I came up with this thirst-quenching mocktail for my friend, Gayle King. It is a cheerful yellow drink, which happens to be her favorite color! Full of flavor with the sweetness of pineapple juice, sharpness of fresh lime and spice of the ginger beer.

Steps:
- Take 2 glasses and fill them with ice. Using a potato peeler, peel a couple strips of lime zest and run one around the rim of each glass to flavor it, then drop it into the glass.
- Halve the lime and squeeze each half into a glass over the ice. Pour 1/2 cup pineapple juice and 1/2 cup ginger beer into each glass. Slightly crush the mint sprigs and add them to the drinks. Stir and serve immediately.
TROPICAL SUNSET COCKTAIL
This pineapple cocktail is my personal concoction. It's so good! When you add the cherry juice, you will see how this drink got its name.
