CHOCOLATE-PRETZEL CEREAL TREATS



Chocolate-Pretzel Cereal Treats image

Use chocolate cereal for these marshmallow-bound treats and stir in crushed pretzels. Drizzle with chocolate and chill before serving.

Number Of Ingredients 8

6 tablespoons unsalted butter, plus more for buttering the pan
One 10-ounce bag mini marshmallows
1 teaspoon pure vanilla extract
Kosher salt
8 cups puffed chocolate cereal, such as Cocoa Puffs
2 cups crushed pretzels
2 ounces semisweet chocolate, chopped
1 teaspoon coconut oil

Steps:

  • Line a 9-by-13-inch baking dish with aluminum foil leaving a 2-inch overhang on the two short ends. Lightly coat the foil with butter.
  • Melt the butter in a large pot set over medium heat. Add the marshmallows and cook, stirring occasionally, until the marshmallows melt, about 5 minutes. Remove from the heat and stir in the vanilla and a pinch of salt and then the cereal and pretzels until well mixed. Transfer to the prepared baking dish and press into an even layer. Set aside at room temperature until cooled and firm, about 30 minutes.
  • Melt the chocolate and coconut oil together in a small microwave safe bowl for 30-second increments in the microwave, stirring, until smooth. Drizzle over the bars, cover and refrigerate until the chocolate hardens, about 15 minutes. Cut into bars.

One 10.5-ounce bag ridged potato chips
2 cups milk chocolate chips, melted
3 cups nuts (walnuts, pecans, almonds), chopped

Steps:

  • Line a baking sheet with parchment paper. Dip just half of each chip in the melted chocolate, then dunk in the chopped nuts to coat. Rest on the baking sheet until set, about 10 minutes.

1/2 cup homemade or store-bought pizza sauce
2 English muffins, split
1/2 cup shredded mozzarella
10 slices pepperoni, cut into quarters
4 ounces frozen pepper and onion blend
4 ounces frozen pepper and onion blend
2 slices bacon, crisped and torn to bits
2 slices deli ham, cut into 1-by-1/2-inch rectangles
2 pineapple rings, cut into bite-size pieces
1/2 teaspoon dried oregano

Steps:

  • Divide and spread the pizza sauce among the English muffin halves. Sprinkle the mozzarella in an even layer over the top of the sauce on each.
  • Line a baking sheet with parchment paper and place the muffin halves next to each other in a row on one end. Spread out the pepperoni, peppers and onions, bacon, ham and pineapple in separate rows in a single layer next to the muffins. Sprinkle the oregano over everything. Freeze, uncovered, until the muffins are hard, 1 to 2 hours.
  • Tightly wrap each English muffin half with plastic wrap and place in freezer-safe bags. Remove the toppings to separate freezer-safe bags. Freeze the muffins and toppings until ready to use.
  • When ready to cook, preheat the oven or toaster oven to 400 degrees F. Remove as many English muffin halves as you like from the freezer. Top each base with the toppings of your choice. Bake until the cheese is melted and the muffins are cooked through, 15 to 18 minutes. Remove and rest 2 minutes before eating.

6 small (about 1 1/4 pounds) roma tomatoes, sliced 1/4-inch thick
2 teaspoons dried oregano
Kosher salt and freshly ground black pepper
Extra-virgin olive oil
2 sheets puff pastry, thawed
1 cup jarred marinara sauce
1/4 cup grated Parmesan
5 fresh basil leaves, chiffonade
1/2 cup shredded mozzarella

Steps:

  • To roast the tomatoes: Preheat the oven to 350 degrees F. Season the tomatoes with oregano, salt and pepper, to taste. Drizzle with oil and arrange them on a cooling rack over a baking sheet. Roast until then are golden, 20 to 25 minutes.
  • Raise the oven temperature to 400 degrees F when the tomatoes are roasted. Unfold 1 puff pastry sheet onto a clean cutting board. Prick the dough evenly, multiple times, with a fork. Using a 2-inch pastry cutter, cut out 12 circles and arrange them on a parchment lined baking sheet. Repeat with the second sheet of pastry. Bake until they are nicely puffed and golden, about 8 minutes.
  • To assemble: Cut the puffs in half. Spoon a generous teaspoon of marinara sauce into the bottom of half of the puffs and sprinkle with Parmesan. Put a roasted tomato on top of each followed by the basil and a sprinkling of the mozzarella. Top with the other puff pastry halves and arrange them on a baking sheet. Bake for another 5 minutes, giving the cheese time to melt. Transfer the bites to a serving platter and serve warm.

1/2 cup roasted and salted peanuts
3 tablespoons salted butter
2 tablespoons grape jelly or raspberry preserves
Freshly ground black pepper
1 cup sweetened crunchy corn cereal
1 cup pretzels or pretzel sticks, broken into large pieces
1/4 cup candy-coated peanut pieces

Steps:

  • In a large pan on medium heat, add the peanuts, butter, jelly and a few grinds of black pepper. Cook, tossing and stirring to coat, until the peanuts are coated and warm throughout, 8 to 10 minutes. Turn off the heat and add the cereal and pretzels to the pan. Toss and transfer the mixture to a parchment-lined baking sheet or the counter. Sprinkle over the peanut candies and let cool. Toss again when cool and serve at room temperature.
