OVEN BAKED ONION RINGS

- Preheat the oven to 450 degrees F.
- Spray a baking sheet slightly with oil and set aside. Place potato chips in the bowl of a food processor and process into crumbs, about 20 seconds. Transfer to a shallow bowl, add cayenne, and set aside. In another bowl, combine buttermilk, 2 tablespoons of flour, salt and pepper and set aside. Slice onions into 1/2-inch circles and separate into rings, keeping only large, whole rings (reserve rest of onions for other uses). You should come out with about 12 to 14 rings.
- Place the remaining flour in a sealable plastic bag, then add onions, and shake to coat. Dip onions 1 at a time into the buttermilk mixture, then dip into potato chip crumbs and place on baking sheet. Spray canola oil evenly over rings and bake for 20 minutes, or until coating is crisp. Season with salt, to taste, and serve immediately.
SONNY'S ONION RINGS

- Crosscut peeled onions into 1/2-inch rings, discarding onion hearts. In separate container combine eggs, milk, and beer. Mix flour and baking powder thoroughly in separate container. Soak onions in milk mixture and coat onions in flour. This step is repeated a second time, and may be done a third time to insure that the entire onion is dusted with flour mixture. Fry onions in a deep fryer until golden brown.
CRISPY ONION RINGS

- Put the onions in a large bowl and cover with milk. Let soak for 30 minutes.
- Meanwhile, using a fine-sieve over a large bowl, sift together the flour, baking powder, 2 teaspoons salt, chili powder, and cumin, if using. Stir in the beer until a smooth batter is formed. Set aside.
- Drain the onions and transfer to a paper towel-lined baking sheet. Blot the onions with paper towels until dry.
- In a large, wide heavy-bottomed pot, pour in the oil to a depth of about 2 inches. Place over medium heat and heat to 400 degrees F. (The oil must be heated to 400 degrees F. since the temperature drops oil to about 375 degrees F. when the onions are added.)
- Working in batches, transfer about 8 to 10 of the onions to the batter and mix to coat well. Using tongs, pull several of the onions out of the batter, and let any excess batter fall back into the bowl. Carefully add to the oil and fry, flipping once, until golden brown and crispy, about 3 1/2 minutes per batch. Using the tongs, transfer to a dry paper towel-lined baking sheet to drain. Sprinkle with salt to taste. Repeat with the remaining onions. Serve immediately.
ROASTED SUNNY-SIDE UP EGGS IN RINGS OF ONION OVER ZUCCHINI STICK
This is one of my family's favorite breakfasts and it is a great way to use up some of that extra zucchini from the garden in a new way. Note: The onion slices must be completely flush with the baking sheet to prevent the egg from seeping out the bottom of the onion.

- Preheat oven to 425 degrees.
- Lightly coat the onion rings and zucchini in olive oil and season with salt and pepper. Place on a baking sheet and bake for 6 minutes. If you prefer your onions completely soft, leave them in for 8 minutes.
- Remove from the oven and turn the zucchini sticks over on the other side. Carefully crack an egg in the center of each onion ring. Sprinkle with parsley and a smidgen of garlic powder over each egg. Season with salt and pepper, to taste.
- Bake for 6 to 9 minutes, or until the eggs are set to your preference.
- Place the zucchini sticks side-by-side on a plate. Using a spatula, carefully lift a ring of onion and place it on top of the zucchini, repeat with the remaining.
- Enjoy!

SWEET N SMOKEY ONION RINGS

- In a heavy bottomed pot, add enough oil to reach 4 inches up the sides. Preheat to 365 degrees F.
- In a medium-sized bowl, combine the flour, paprika, onion powder, salt, and baking powder. In a small bowl, whisk together the buttermilk and egg. Add the wet mixture to the dry mixture, whisking the batter until just combined. In a medium bowl or wide baking dish, add onion rings and dust with flour. Toss gently to uniformly coat rings, and shake off excess flour. Working in batches, dip floured onion rings into the batter, making sure they are thoroughly coated, then carefully add to the preheated oil. Cook until deep golden, flipping halfway through if necessary, about 2 minutes. Remove the onion rings to a paper towel-lined plate and season immediately with salt. Transfer to a serving platter and serve hot. No ketchup needed!

- Slice your onion into 1/2 inch slices.
- Then, using the biggest one, place in an oiled skillet over medium heat. When one side is lightly browned, flip the onion ring over and crack an egg in the middle.
- If you want the egg yolk to show, dab the top of the egg yolk with a paper towel and remove the white over the top of it.
- Then, sprinkle a little water in the pan and cover the skillet. Cook until your egg is done as you like.
- Sprinkle with kosher salt and cracked black, wait for the raves reviews.
