Two of the many decades old business's that have kept the Northside of Madison OUTSTANDINGLY BEAUTIFULL for combined 101 years of local involvement.

1 gallon pork stock
5 lbs uncooked rice
1 gallon Canadian bacon, cut into 1/4 inch cubes
1 gallon bell pepper, chopped
6 garlic cloves, minced
1 gallon kidney bean, drained
1 gallon tomatoes, chopped
1 gallon sweet corn
1/4 cup hccc chili seasoning mix, # 281706

Steps:

  • In a saucepan, bring water to a boil. Add rice (2 parts water, 1 part rice) and stir. Reduce heat, cover and simmer for 30 minutes. (Convection oven; 350F, 55 minutes, cover hotel pan with plastic and alum foil. Stir 2 times).
  • In a large skillet over low heat, cook Canadian Bacon for 5 minutes until browned. Stir in pepper and garlic; saute until tender.
  • Pour in beans and tomatoes with juice. Season with HCCC seasoning. Simmer uncovered for 40 minutes. Serve over rice.

Every Monday, you can find a pot of red beans and rice cooking in someone's kitchen in New Orleans. The food writer and New Orleans bon vivant Pableaux Johnson's house is no exception. The dish, an easy meal from when people used to reserve Monday to do the wash, was once made with the pork bone left over from Sunday supper. In this version, Mr. Johnson strongly encourages the use of hand-made Louisiana Andouille, but smoked sausage will do.

Number Of Ingredients 16

1 1/2 pound dried red beans (preferably New Orleans Camelia brand)
1 pound Andouille sausage, sliced 1/2-inch thick (smoked sausage can also be used)
4 tablespoons olive oil
6 garlic cloves, minced
2 medium onions, finely diced
1 large rib celery, finely diced
1 medium green bell pepper, chopped
1 1/2 teaspoons black pepper
1/8 teaspoon cayenne pepper
2 teaspoons salt
3 bay leaves
2 teaspoons dried basil
3/4 teaspoon rubbed sage
1 cup chopped fresh parsley
1 bunch fresh green onions, chopped
Cooked white long-grain rice, for serving

Steps:

  • In a large bowl, cover beans in water and soak for at least 4 hours or overnight. (Water should cover beans by at least an inch.)
  • In a large, heavy pot, brown sausage in 1 tablespoon of oil until slightly crisp. Add remaining oil, then the garlic and onions. Sauté over medium heat until onions become transparent and limp. Add celery and bell pepper and sauté for 5 minutes.
  • Pour soaked beans and water into the pot and bring to a simmer. Add black pepper, cayenne, salt and all herbs except parsley.
  • Cook until beans are softened, about 11/2 to 2 hours. Taste and adjust seasonings.
  • Fifteen minutes before serving, remove 1 cup of beans to a bowl and, using a fork, mash them and stir back into the pot to enhance the creamy texture of the dish. Add parsley and green onions. Simmer about 15 minutes, taste and adjust seasoning, and add up to 1 cup more water if beans seem too thick. Remove bay leaves. Serve over white long-grain rice.

Remember sitting down to Sunday supper of a platter heaped with potatoes, vegetables and meat - all covered with a rich gravy? This recipe for the crock pot makes an old fashioned Sunday Supper a cinch!

1 (2 1/4 ounce) box onion soup mix (2 envelopes)
3 1/2 lbs rump roast, trimmed of fat
2 lbs small red potatoes, scrubbed and halved
3 large carrots, peeled and sliced
2 stalks celery, sliced
7 garlic cloves, minced
1/2 teaspoon garlic pepper seasoning
2 teaspoons dried thyme leaves
1 bay leaf
1 1/2 cups zinfandel or 1 1/2 cups other fruity red wine
1 (14 1/2 ounce) can beef broth
1/4 cup all-purpose flour

Steps:

  • Place contents of both of the dry soup mix envelopes in a small baking dish.
  • Place the roast in the dish and rub or pat the dry soup mix all over it.
  • Place half each of potatoes, carrots, celery, and garlic in crock pot.
  • Season with half each of the garlic pepper and thyme.
  • Tuck the bay leaf into the vegetables.
  • Mix together 1 cup of the wine and the broth.
  • Pour into the crock pot.
  • Add the roast and scrape any dry soup mix left in the baking dish on top.
  • Cover the meat with the remaining vegetables, garlic, garlic pepper and thyme.
  • Cover and cook on low 9-10 hours or until the meat is tender.
  • Remove the meat to a warm serving platter.
  • Remove and discard the bay leaf.
  • Scoop out the vegetables with a slotted spoon and scatter them over and around the roast.
  • Cover with foil to keep warm.
  • Pour the juices into a medium saucepan and bring to a boil on top of the stove over medium-high heat.
  • Whisk together the remaining 1/2 cup wine and flour until well blended.
  • Stir into the juices in a the saucepan and cook stirring constantly, until the gravy is thickened and the flour has lost its raw taste, 3-5 minutes.
  • Pour the gravy over the meat and vegetables and serve.

This recipe is authentic to the Caribbean larder: beans, garlic, cumin, citrus and meat, bubbling together on the stove. Of course, rice and beans are served across Latin America, in different variations, with different beans, for different reasons. Adding a further delight to the plate would not be in error: some fried pork chops, say, or a dish of fast and flavorful roast chicken, dusted liberally with cumin and served beneath a shower of lime juice, fresh chopped cilantro and garlic.

2 tablespoons olive oil
4 ounces slab bacon, diced
1 medium yellow onion, peeled and diced
3 cloves garlic, peeled and minced
1 medium red pepper, seeded and diced
2 tablespoons ground cumin
1 tablespoon ground coriander
1 cup orange juice
1/2 cup pineapple juice
3 (151/2-ounce) cans red kidney beans, drained
Kosher salt
freshly ground black pepper

Steps:

  • Heat a large saucepan over medium-high heat. Add the olive oil and, a few moments later, the bacon. Cook, stirring occasionally, until the fat has begun to render out of the bacon and the meat is beginning to crisp, about 5 minutes.
  • Lower the heat to medium and add the onion, garlic and pepper. Cook, stirring occasionally, until the vegetables have softened, 5 to 7 minutes.
  • Add the cumin and coriander. They will absorb the heated oil in the pan and grow fragrant. Stir for 1 to 2 minutes and then add the juices. Raise the heat to high until the mixture begins to simmer, then lower the heat and reduce to one half of its volume. Taste and adjust the seasonings.
  • Stir in the beans. After 5 minutes stir again, then taste and adjust the seasonings. (The mixture can keep, softly bubbling on the stove, for hours. Add a little juice or water if necessary. Stir occasionally.) Serve with white rice.

1 (7 ounce) can diced green chilies
3 medium zucchini
2 large tomatoes
1 1/2 lbs monterey jack cheese, shredded
2 cups sour cream
1 teaspoon oregano
1 teaspoon garlic salt
2 tablespoons chopped green bell peppers
2 tablespoons chopped green onions
1 tablespoon parsley

Steps:

  • Parboil and thinly slice zucchini.
  • Place rice in a well-buttered casserole.
  • Cover with chiles and half the cheese.
  • Layer zucchini and top with sliced tomato.
  • Mix sour cream with garlic salt, oregano, green pepper and onions and spread over vegetables.
  • Sprinkle remaining cheese on top and top with parsley.
  • Bake at 350 degrees F for 40 minutes.
  • It says on the recipe, "Diced ham, cooked sausage, etc. may be added to give more substance to this dish. This is good hot or at room temperature, and it travels very well.".
