1 lb corned beef, chopped into small pieces
2 cups sauerkraut
1 cup sour cream
1 small onion, diced (optional)
2 garlic cloves, pressed
3 cups swiss cheese (grated or sliced)
6 slices rye bread (torn or broken into small pieces)
3/4 cup butter, melted

Steps:

  • Combine the sour cream, sauerkraut, onion (if using) and garlic.
  • Spread mixture onto bottom of 9x13-inch pan.
  • Scatter corned beef evenly over mixture.
  • Spread cheese on top of corned beef.
  • Put bread on top of the Swiss cheese.
  • Pour butter on top of bread.
  • Bake at 350°F for 1/2 hour.

1 (10 ounce) can cream of mushroom soup
1 (10 ounce) can milk (use soup can)
1 (10 ounce) can corned beef, crumbled
1/4 lb sharp cheddar cheese, cubed
crushed potato chips (optional)
French-fried onions (optional)

Steps:

  • Preheat oven to 350; butter a casserole pan.
  • Mix soup and milk, stirring to blend well.
  • Add beef and cheese to soup-milk; mix well.
  • Dump into casserole dish.
  • Sprinkle top with crushed potato chips or French-fried onions.
  • Bake for 30 minutes until bubbly.

4 oz egg noodles
12 oz can corned beef
1 can condensed cream of chicken soup
1/2 cup chopped onion
1 cup shredded cheddar cheese
1 cup milk
3/4 cup dried bread crumbs
2 Tbsp margarine

Steps:

  • Preheat oven to 350 degrees F. Cook noodles in water until tender, drain.
  • In a 2 quart casserole dish combine corned beef, soup, onions, cheese and milk. Add the drained noodles. Stir in. Top with buttered bread crumbs.
  • Bake 35-40 min until bubbling and bread crumbs are toasty brown. Serve with favorite green vegetable.

1 can (12 oz) corned beef
1 can (10.5 oz) condensed cream of celery soup
1 cup milk
1/2 tsp. black pepper
1 cup frozen peas
1/2 cup KRAFT Shredded Triple Cheddar Cheese with a TOUCH OF PHILADELPHIA

Steps:

  • Preheat oven to 350 degrees.
  • Cook pasta according to package directions omitting salt, rinse and drain.
  • In medium bowl, stir together cream of celery soup and milk until mostly smooth. Mix pasta, soup/milk mixture and remaining ingredients in a 2 1/2-qt casserole. Cover and bake for 40 minutes.

1 pound deli sliced corned beef, cut into strips
¾ cup Russian-style salad dressing
2 cups shredded Swiss cheese

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Spread bread cubes in the bottom of a 9x13 inch baking dish. Spread sauerkraut evenly over the bread cubes, then layer beef strips over sauerkraut. Pour dressing over all.
  • Spray aluminum foil with cooking spray and use to cover baking dish, sprayed side down. Bake in the preheated oven for 20 minutes.

2 corned beef briskets with spice packets (3 pounds each)
1 medium head cabbage, cut into 8 wedges
1 bottle (2 liters) ginger ale
1/4 cup mixed pickling spices
8 medium potatoes, peeled and quartered

Steps:

  • Discard spice packets from corned beef or save for another use. Place briskets in a Dutch oven; add cabbage. Pour ginger ale over top. Place pickling spices on a double thickness of cheesecloth; bring up corners of cloth and tie with string to form a bag. Add to pan., Bring to a boil. Reduce heat; cover and simmer for 2-1/2 to 3 hours or until meat is tender, adding potatoes during the last 20 minutes of cooking. Discard spice bag., Remove meat and vegetables to a serving platter. Thinly slice brisket across the grain and serve with vegetables.

1 medium onion, chopped
2 tablespoons butter
2 tablespoons all-purpose flour
1-1/2 teaspoons salt
1 teaspoon Worcestershire sauce
1/4 teaspoon pepper
2-1/2 cups milk
3 medium potatoes, cooked and cubed
1 can (15-1/4 ounces) whole kernel corn, drained
1 can (12 ounces) corned beef
1 tube (12 ounces) refrigerated buttermilk biscuits

Steps:

  • In a large saucepan, cook onion in butter over medium heat until tender; remove from the heat. Stir in the flour, salt, Worcestershire sauce and pepper until blended. Gradually add the milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in the potatoes, corn and corned beef., Transfer to a greased 13-in. x 9-in. baking dish. Bake, uncovered, at 400° for 30 minutes or until bubbly. Top with biscuits. Bake 10-15 minutes longer or until biscuits are golden brown.

2 cups swiss cheese, shredded
1/2 lb corned beef, chopped
1/2 cup thousand island dressing
1/4 cup mayonnaise
miniature party rye rounds
melted butter

Steps:

  • Preheat oven to 400 degrees.
  • Rinse and drain sauerkraut. Place in the bottom of a greased 1 1/2 quart casserole.
  • Mix together dressing and mayonnaise.
  • Top the sauerkraut with half the cheese, then half of the dressing, all of the corned beef, then the remaining cheese, and remaining dressing.
  • Bake until it starts to bubble.
  • Top with rye slices, brushed with melted butter and bake 10 minutes more.
  • You could also just bake it until bubbly and spoon it onto rye or pumpernickle bread instead of the party rye, if you wanted to.
