SPICED HONEY DRIZZLE CAKE
Enjoy this fabulous honey cake made with mixed spice and ginger and a lovely honey butter drizzle topping. It's ideal for afternoon tea or elevenses

Steps:
- Heat oven to 180C/160C fan/gas 4. Butter and line a 900g loaf tin with baking parchment. Beat the butter and sugar with an electric whisk until creamy. Whisk in the honey, egg, milk, spices and a pinch of salt (don't worry if it curdles slightly, it will become a loose batter), then fold in the flour.
- Tip into the prepared loaf tin and bake for 45 mins until a skewer inserted in the middle comes out clean. Leave the cake to cool for 10 mins, then transfer to a wire rack to cool completely.
- For the glaze, melt the butter and honey in a small pan until smooth. Leave to cool until thickened, then drizzle over the top of the cooled cake. Leave to set before serving.

Steps:
- Heat oven to 325°F.
- Grease and flour bundt pan.
- Mix hot water with instant coffee; set aside.
- In a large mixing bowl, mix honey, sugar, oil and eggs until very light and fluffy. Add all remaining ingredients including the coffee mixture; mix well.
- Spoon batter into prepared pan.
- Bake for 50 to 60 minutes or until toothpick inserted in the center of cake comes out clean.
- Cool 10 minutes.
- Remove from pan; cool completely.
- If desired, drizzled with glaze of your choice.

- Set Sun Oven out to preheat. Butter and flour a 9x5x3-inch loaf pan, set aside. Whisk together first 7 ingredients, flour through salt, in a medium bowl. In a large bowl beat the honey, sugar, oil, and eggs with an electric mixer until blended. Beat in the dry ingredients in 2 additions. Beat in the boiling water. Stir in the raisins. Pour batter into the prepared pan. Bake until brown and a toothpick inserted into the center of the cake comes out clean, about 1 hour. Cool cake in pan 10 minutes. Turn out onto a rack and cool completely.
