This is a nicely-flavored simple salad that I love and make often in the summer. My husband is not as crazy about tomatoes as I am, but he will eat seconds of this dish. I clipped the recipe out of a newspaper several years ago.

1/3 cup mayonnaise
2 teaspoons red wine vinegar
1 teaspoon Dijon mustard
1 pint cherry tomatoes, halved (I usually use grape tomatoes)
1/4 cup finely chopped red onion
2 tablespoons chopped fresh parsley
salt and pepper, to taste

Steps:

  • Whisk mayonnaise, vinegar and mustard together.
  • Add tomatoes, onions and parsley.
  • Toss well and season to taste.

1 quart cherry tomatoes, halved
1/4 cup canola oil
3 tablespoons white vinegar
1/2 teaspoon salt
1/2 teaspoon sugar
1/4 cup minced fresh parsley
1 to 2 teaspoons minced fresh basil
1 to 2 teaspoons minced fresh oregano

Steps:

  • Place tomatoes in a shallow bowl. In a small bowl, whisk oil, vinegar, salt and sugar until blended; stir in herbs. Pour over tomatoes; gently toss to coat. Refrigerate, covered, overnight.

This recipe was passed on by a friend and has been passed on to many more friends. It is a colorful and delicious salad served in a self made vinaigrette. Always an excellent choice when entertaining for dinner.

40 cherry tomatoes, halved
1 cup pitted and sliced green olives
1 (6 ounce) can black olives, drained and sliced
2 green onions, minced
3 ounces pine nuts
½ cup olive oil
2 tablespoons red wine vinegar
1 tablespoon white sugar
1 teaspoon dried oregano
salt and pepper to taste

Steps:

  • In a big bowl, combine cherry tomatoes, green olives, back olives, and spring onion.
  • In a dry skillet, toast pine nuts over medium heat until golden brown, turning frequently. Stir into tomato mixture.
  • In a small bowl, mix together olive oil, red wine vinegar, sugar, and oregano. Season to taste with salt and pepper. Pour over salad, and gently stir to coat. Chill for 1 hour.

This is a great slad for those home growm little beauties! So easy, and is especially lovely when different colour cherry tomatoes are used.

1 red onion, peeled and finely chopped
1/4 cup red wine vinegar
2 tablespoons olive oil
600 g mixed cherry tomatoes, cut in half
flaked sea salt
cracked pepper
2 tablespoons basil, finely shredded

Steps:

  • Put onion in a bowl with the vinegar and oil. Toss well and leave to marinate in refrigerator for 1 hour, until flavours blend.
  • When marinated, remove from fridge and add tomatoes, salt flakes, and cracked pepper.
  • Toss salad and just before serving, sprinkle tomato salad with the basil.
  • Serve.

1 lb cherry tomatoes
1 lb Brussels sprout
1 large jalapeno pepper
30 g fresh dill weed
4 tablespoons lemons
4 tablespoons olive oil
1 teaspoon salt
1 teaspoon pepper

Steps:

  • Cut tomatoes in halves or quarters depending on their size. Add to a large salad bowl.
  • Cut end (stem) off of Brussels sprouts, then separate leaves and add to salad bowl.
  • Cut off top and stem of jalapeno, cut in half lengthwise, then quarters. Cut out white part and seeds. Then chop into small pieces (or larger according to taste).
  • Chop dill, not too fine. Scatter over the salad in the bowl.
  • With one hand, squeeze lemon juice into salad, using other hand beneath to catch seeds.
  • Add a pinch of salt and fresh ground black pepper.
  • Drizzle in the olive oil.
  • Toss the salad well to coat with the dressing.
  • Serve chilled or at room temperature.
  • Bon Appetit!

Light, tasty, easy and elegant. This is another recipe I found in Everyday Food but used balsamic vinegar because of its flavor and added the small amount of sugar for less sour taste.

2 tablespoons balsamic vinegar
1 tablespoon olive oil
1/2 teaspoon coarse salt
1/8 teaspoon ground pepper
2 pints grape tomatoes
1/4 cup red onion, finely chopped
2 tablespoons fresh parsley, finely chopped
1/2 teaspoon sugar or 1/2 teaspoon sugar substitute

Steps:

  • In a medium bowl whisk together balsamic vinegar, olive oil, coarse salt, ground pepper and sugar or sugar substitute. Add grape tomatoes cut in half, red onion and parsley.
  • Toss to combine.
  • Serve cold.
