This pie shell recipe is on the sweeter side making it ideal for fruit pies

Steps:
- Preheat the oven to 350 degrees F. In a bowl, combine the flour and powdered sugar. Add the butter and mix with a pastry blender until coarse crumbs form. Form the crumbs into a dough (you may need to add a little cold water if it is too crumbly). Press the dough into an 8 or 9 inch pie plate. Prick the bottom of the dough with a fork. Place the pie crust in the oven and bake at 350 degrees F for 20 minutes or until lightly browned. Remove from the oven and let the crust cool completely before using.

- Add sugar and salt and bring it to breadcrumb stage.
- Add the egg and cold water if needed.
- Take care not to overwet.
- Mix until it forms into a ball.
- Allow to rest in a cool place before using.
- Fill with whatever pie ingredients you're using.
- Bake in a 350° oven for 20 to 30 minutes.

My grandmother use to make a "tarte au sucre" for every family gathering. The kids would be wired all day, lol. I have been looking for a recipe that turns out like hers for a long time now. I have tried a few, all delicious, but not quite the same. A few weeks ago, my Mom was looking through a box of stuff left behind after my grandma passed away a while back and , there it was....... Her recipe for tarte au sucre. Hope you all enjoy it as much as I do. You might want to have a glass of milk with you when you do eat it, it is extremely sweet!

Steps:
- Preheat oven to 350 degrees.
- In bowl, mix brown sugar and flour.
- In seperate bowl, whisk together milk, eggs and vanilla.
- Gradually add to flour mixture mixing well.
- Place cookie sheet under pie crust.
- Fill pie crust with mixture.
- Drop cold butter cubes throughout mixture.
- Cook for 45 to 50 minutes, until outside edges are firm and center is slightly jelly like.
- Refrigerate completly.
- Serve with whipped cream or vanilla ice cream.

Steps:
- Toss the cherries and sugar together with the kirsch and leave to macerate for 20 minutes.
- To make the pastry, put the flour in a food processor, add the butter and pulse to breadcrumbs.
- Add the superfine sugar and mix. Add the 2 egg yolks and pulse until the mixture comes together (you might need to add a splash of cold water as well). Wrap in plastic wrap and chill for 20 minutes.
- Heat the oven to 375°F Roll out half the pastry and line 1 large or 4 small pie dishes.
- Put the cherry mixture in the bottom then roll out the rest of the pastry and drape over the top and trim.
- Crimp and seal the edges then glaze all over with the remaining egg yolk. Bake for 30-35 minutes until the pastry is crisp and golden. In the last 5 minutes of cooking, sprinkle the brown sugar over.
- Rest for 10 minutes before serving with vanilla ice cream.

- Preheat oven to 400º.
- Spray 9" pie dish with cooking spray.
- In a bowl mix the oats, flour, Splenda, & salt.
- Mix canola separately with 4 tbsp warm water, beat until frothy.
- Add Sprite to dry ingredients.
- Add frothed canola/water to mixture. Mix all.
- Press crust into plate bottom, moistening fingertips if needed.
- Bake at 400º for about 12 minutes. Crust is 62 calories per serving.
