I adapted this from a recipe I found on Life's Ambrosia (http://www.lifesambrosia.com/2009/04/cajun-chicken-sandwiches-recipe.html) - it is so simple and absolutely delicious. Cooking time is refrigeration time.

1/3 cup mayonnaise
1/4 cup white wine vinegar
1/2 teaspoon garlic powder
1/8 teaspoon celery seed
1/2 teaspoon sea salt
4 cups white cabbage, shredded
1 cup carrot, shredded

Steps:

  • In a large bowl, whisk together mayonnaise, vinegar, garlic powder, celery seeds and sea salt.
  • Add shredded cabbage and carrots. Toss to coat.
  • Cover and refrigerate for at least one hour. Stir again then serve.
  • Enjoy!

8 cups cabbage, finely chopped
1/4 cup carrot, shredded
2 tablespoons onions, finely chopped
1/3 cup Splenda sugar substitute
1/2 teaspoon salt
1/8 teaspoon pepper
1/4 cup milk
1/2 cup mayonnaise
1/4 cup buttermilk
1 1/2 tablespoons tarragon vinegar
2 1/2 tablespoons lemon juice

Steps:

  • Be sure cabbage and carrots are chopped up into small pieces (about the size of rice).
  • Combine Splenda, salt, pepper, milk, mayonnaise, buttermilk, vinegar, and lemon juice in a large bowl and beat until smooth.
  • Add the cabbage, carrots and onion and mix well.
  • Cover and refrigerate for at least 2 hours.
  • I like to use the premade slaw mix, and chop it up finer and then mix the wet ingredients.

1 (16 ounce) bag Coleslaw
2 tablespoons diced onions
2/3 cup light salad dressing (light Miracle Whip)
3 tablespoons vegetable oil
1/2 cup sugar substitute (Splenda)
1 tablespoon white vinegar
1/4 teaspoon salt

Steps:

  • Combine the coleslaw mix and onion in a large bowl. Whisk together the salad dressing, vegetable oil, sugar substitute, vinegar, and salt in a medium bowl; blend thoroughly. Pour dressing mixture over coleslaw mix and toss to coat. Chill at least 2 hours before serving.
