These cookies come together easily, have a lovely flavor and are naturally sweetened with dates (refined-sugar free).

4 oz medjool dates (110g, pitted weight - around 1/2 cup, well packed (see notes re alternative))
2 oz unsalted butter (1/2 stick/55g, softened to room temperature and cut into chunks)
1/2 egg (beaten)
1/3 cup all purpose flour (46g plain flour)
1/2 cup oats (45g, old fashioned rather than quick)
1/4 tsp baking soda (bicarbonate of soda)
1/4 tsp cinnamon

Steps:

  • Preheat the oven to 350F/175C.
  • Roughly chop the dates and blend with the butter and egg (food processor works well).
  • Add the remaining ingredients and either pulse a few times if using a food processor or stir until combined. If using food processor, you may need to stir at the end to get everything well-mixed.
  • Take spoonfuls and roll slightly in your hand then put on a baking tray and flatten slightly.
  • Bake for approximately 15mins until starting to brown.

1 cup chopped dates
¼ cup chopped pecans
¼ cup water
½ very ripe banana, mashed
1 large egg, lightly beaten
2 tablespoons butter, melted
½ teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon cinnamon
¼ teaspoon salt

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
  • Combine the dates, pecans, water, banana, egg, butter, and vanilla extract in a bowl.
  • Whisk flour, baking powder, cinnamon, and salt together in a separate bowl. Add to the date mixture and stir until well combined.
  • Drop dough by tablespoonfuls about 1 inch apart onto the prepared baking sheet and flatten lightly with the palm of your hand.
  • Bake in the preheated oven until cookies start to brown around the edges, being careful not to over-bake, for 11 to 13 minutes. Transfer cookies immediately to a wire rack to cool.

This Sugar Free Date Cookies recipe is a simple, diabetic friendly snack that is also gluten free and vegan! The dough is easy to come together with just three healthy, dairy free ingredients of oatmeal, dates and peanut butter. These sugar free cookies are the BEST if you want a guilt free treat.

1 ½ cups quick oats
½ cup natural peanut butter (*use a fresh jar)
1 ½ cups pitted dates (*soak them in hot water for 10 minutes)

Steps:

  • Set the oven to 350 and line a cookie sheet with parchment paper.
  • Add the oats to the food processor and process it into a flour.
  • Add the peanut butter and soaked dates and process until the dough sticks together when you pinch it in your fingers.
  • Roll the dough into tablespoon sized balls and line them up on the parchment lined cookie sheet. Form the balls into a cookie shape - they won't spread out when they bake.
  • Bake for 10 - 12 minutes, rotating the cookie sheet half way through. Check the bottoms at 10 minutes - they should be brown. The tops don't really change colour.
  • Let cool on the cookie sheet for 10 minutes then transfer to a rack. Store covered at room temperature for 7-10 days.

1 1/2 cups dates, cut up fine (You may use a combination of figs, raisins and dates -l/2 cup each- if you prefer)
1/2 cup sugar
1 tablespoon flour
1/2 cup water
2 teaspoons lemon juice
1/2 cup shortening
1 cup sugar
2 eggs
2 tablespoons heavy cream or 2 tablespoons canned milk
1 teaspoon vanilla
2 1/2 cups flour
1/4 teaspoon baking soda
1/2 teaspoon salt

Steps:

  • Mix in a sauce pan the dates, sugar and TBSP of flour, water, and lemon juice. Cook this for about 5 minutes on a medium heat, until all are blended well.
  • Mix together the shortening, sugar, and eggs.
  • Stir in the 2 Tbsps. thick cream and l teaspoons vanilla.
  • Sift together the 2 1/2 cups of flour, baking soda and salt. Add to shortening mix to form dough.
  • Chill dough for at least 1 to 2 hours.
  • Roll out dough in thin layers in small batches and cut with round cookie cutter.
  • Put mixture (about a tbsp.) in the center between 2 thin cookies pressed together.
  • Bake at 350 degrees on lightly greased sheet pan for 8-10 minutes or until bottoms are lightly browned.

150g plain flour
80g butter
3 tbsp agave syrup
2 egg yolks
1 vanilla pod

Steps:

  • Beat the flour, butter, agave syrup, egg yolks, the seeds from the vanilla pod and a pinch of salt together in a stand mixer to make a smooth dough. Wrap the dough and chill for 30 minutes.
  • Roll out the dough on a lightly floured work surface and cut out 36 cookies with biscuit cutters.
  • Heat the oven to 180C/160C fan/gas 4. Cover two baking sheets with baking parchment. Lift the cookies onto the baking sheets and bake for 8-10 minutes until golden. Allow to cool completely. Store in an airtight container.

This is not a super fudgy or super sweet cookie. But it is a nice little drop cookie when you want something tasty and relatively healthy!

1 cup whole wheat pastry flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 teaspoon cinnamon
3/4 cup chopped pecans
1 cup packed pitted dates (about 40)
3 eggs
2 tablespoons water
1 teaspoon vanilla
3 tablespoons cocoa powder

Steps:

  • Preheat your oven to 350°F.
  • Spray a large baking sheet (or two small ones) with cooking spray.
  • Mix together the flour through nuts. Set aside.
  • In a blender combine the dates, the eggs, the water, and the vanilla. Mix until the dates are broken up and everything is combined. This might take a few minutes and you might need to use a spatula to mix it all up.
  • Add the cocoa powder to the blender and mix again. It is ok if there are little date pieces.
  • Pour the blender mix into the dry and mix well. It will be fairly stiff.
  • Using two tablespoons, drop the cookies onto the sprayed cookie sheets.
  • Bake for 10-14 minutes or until a toothpick inserted into a cookie comes out clean.
