1 egg
1/2 cup water
1/2 cup unsweetened applesauce
2 tablespoons canola oil
1 cup rice flour
2 teaspoons baking powder

Steps:

  • Preheat oven to 425 degrees F. Lightly grease a 6 cup muffin tin, set aside.
  • In a one quart jar place all ingredients; mix well. Pour into prepared muffin tin.
  • Bake for 17 - 20 minutes. Allow muffins to cool for 5-8 minutes before removing from tin.
  • Yield: 6 muffins.

If your sick of whole wheat toast/cereal for your carb breakfast, these provide a nice change and are great for when your on the go

Number Of Ingredients 9

1 1/3 cups whole wheat flour
1 1/2 cups oats
3/4 cup Splenda sugar substitute (or equivalent of 3/4 cup sugar)
2 1/2 teaspoons baking powder
1 teaspoon baking soda
3/4 teaspoon salt
1 cup nonfat milk
1 cup fat free sugar free yogurt
1 cup blueberries

Steps:

  • Preheat oven to 375 degrees.
  • In medium bowl mix together all dry ingredients.
  • Make a well inthe middle and add yogurt& milk.
  • Stir until blended.
  • Gently toss in blueberries and distribute them as evenly as possible.
  • Spoon into muffin tins that have been sprayed with Pam.
  • Bake at 375 for 25 minutes or until middle is cooked.
  • Cool on wire rack.
  • Wrap muffins individually and freeze in ziploc bag any portions that will not be eaten within the next day.
  • Can be warmed up in the microwave and 2 make a filling carb breakfast.
  • Enjoy!

This is so easy to make and yet delicious. Even tough I do not like rice crispies at all I enjoy these muffins. I was acctually looking for a recipe like this here but could not find it so i posted my recipe here. In Iceland you will hardly find a potluck where these are not one of the treats. But don't be late as they are usually gone soon. Your kids will love these! Note: You may use cornflakes or Cheerios or a mixture of these instead of rice krispies but they are in the original recipe. Chilling time is not included in preparation time. Note 2#: I am not sure if i would call it "authentic" but it is very popular in Iceland and you will most likely find it at potlucks, birthday parties or other bigger come togethers. For an authentic icelandic dessert serve http://www.recipezaar.com/Lummur-301253 with strawberries and whipped cream. But that is more like a afternoon cake than a dessert. 1/4 cup black olives or 1/4 cup green olives
bell peppers or dill pickle (what ever you decide)
1 can tuna or 1 can salmon (anything goes)

Steps:

  • Have rice cooked add the ingredients you want mix altogether add s& p put into very small muffin tins, sprayed with Pam.
  • bake 400 for 10-15 minutes the cheese& egg will bond altogether.
  • let cool they are easier to get out this way.
  • Very good in lunches, appitizers I take them to parties.
  • (the rice when all mixed together should be moist but not mucky).
  • most of the time I do not measure just throw everything in I want adding more cheese or maybe an extra egg depending on the quantity of everything I've thrown in.
  • try it, you'll like it.
