1/4 cup apple juice
2 tablespoons honey
1/2 lemon, juiced
1 pinch salt
2 cups frozen strawberries, thawed
1/4 cup apple juice
2 tablespoons honey
1/2 lemon, juiced
1 pinch salt

Steps:

  • Combine blueberry pop ingredients in a blender and blend until smooth. Pour into 5 of the pop molds. Repeat process with strawberry pop ingredients. Place in freezer for at least 5 hours or overnight.

1 1/2 cups cubed frozen fruit
3 tablespoons to 1/3 cup Simple Syrup, recipe follows
1 cup sugar
1 cup water

Steps:

  • Add the frozen fruit and a dash of Simple Syrup to a blender. Blend on high until smooth and lump-free (or to the desired consistency). Add more Simple Syrup to taste. Spoon the puree into 2-ounce ice pop molds and freeze until solid, 2 to 3 hours.
  • Combine the sugar and water in a small saucepan. Bring to a boil, stirring, until the sugar dissolves. Let cool completely, then refrigerate until chilled.

1 pineapple or 1 cup strawberry
5 tablespoons icing sugar
40 ml cranberry juice

Steps:

  • Peel Mangos, remove stone and dice. For pineapple remove skin, chop into chunks, for strawberries hull and quarter.
  • In a food processor puree the chosen fruit, adding icing sugar and cranberry juice.
  • Pulse for 30 seconds.
  • Pass mixture through a sieve until pulp is left. Discard pulp.
  • Pour mixture equally into ice lolly moulds and freeze (about 24 hours).
  • Then enjoy.

To give these icy snacks a creamier sorbet-like texture, partially freeze the fruits before pureeing. Substitute other berries and fruit as you like, but always use some banana in each mixture for good consistency. I got this from Country Living(1992). Cook time is freezing time.

2 bananas, peeled and halved
2 very ripe kiwi fruits, peeled and halved (you may sub peaches, grapes, mango, etc.)
2/3 cup strawberry (fresh or frozen, or other berries of your choice)
1/2 cup orange juice
3 tablespoons light corn syrup

Steps:

  • Several hours or day bdfore serving prepare fruit purees: Place bananas, kiwifruit, and fresh strawberries in freezer until partially frozen and firm.
  • (If using frozen strawberries, allow to thaw slightly until just softened.) Pour orqnge juice into glass dish or pie plate; freeze until almost solid.
  • In food processor with chopping blade or blender, combine 2 banana halves, 1 tbls.
  • corn syrup, and the orange juice; process until mixture is smooth and pureed.
  • Divide between two 3-ounce metal timbale molds, two 5-ounce paper cups, or any 3-ounce popsicle molds.
  • Puree kiwifruit with 1 banana half and 1 tbls.
  • corn syrup; divide mixture between 2 molds or cups.
  • Puree strawberries with remaining banana and corn syrup; divide between 2 molds or cups.
  • Place all fruit-filled molds in freezer.
  • After 45 minutes, insert popsicle sticks in center of pops.
  • Freeze pops several hours or overnight until completely frozen.
  • To serve, remove pops from molds by quickly dipping molds into hot water; then, holding stick, pull pop out of mold.
  • If using paper cups, paper can be peeled off.
  • Enjoy!

2 cups fresh blueberries, raspberries, strawberries and sliced bananas, mixed
2 cups plain or vanilla yogurt
¼ cup white sugar
8 small paper cups
8 popsicle sticks

Steps:

  • Place the mixed blueberries, raspberries, strawberries, sliced bananas, yogurt, and sugar into a blender. Cover, and blend until fruit is chunky or smooth, as desired.
  • Fill paper cups 3/4 full with fruit mixture. Cover the top of each cup with a strip of aluminum foil. Poke a popsicle stick through the center of the foil on each cup.
  • Place the cups in the freezer for at least 5 hours. To serve, remove foil and peel off the paper cup.

  • Pour 1 cup of the fruit juice into a heat-proof 2-quart dish. Sprinkle the gelatin over the top and let it sit, undisturbed, for 1 minute. Stir the remaining juice and sugar or honey together in a heavy pan over medium heat until the sugar is fully dissolved and the juice is simmering. Pour the hot juice over the gelatin in the bowl and whisk gently until the gelatin is completely dissolved, about 5 minutes. Spritz a cake pan with non-stick cooking spray; pour the hot juice mixture into the pan and cover with plastic wrap. Refrigerate until firm, about 3 hours.
  • Cut the firm gelatin into small cubes and scrape them into the bowl of a stand mixer fitted with the whisk attachment or into a sturdy, large mixing bowl (if using a hand-mixer). Slowly start beating the gelatin (because little bits will want to jump out of the bowl and fly everywhere if you start on high speed) and work your way up to high speed. Beat the gelatin until it has been broken up into very small bits and looks almost creamy. This will take about 15 minutes.
