This delicious Carrot Casserole is really 2 dishes in one! It combines carrots and Stove top stuffing for an easy, quick and unique side dish. It's the perfect side for Easter dinner or any holiday dinner.

Number Of Ingredients 8

6 cups cooked carrots (*about 7-8 medium to large carrots)
10 oz - can condensed cream of celery soup
1/4 cup water
120 g -package of Stovetop stuffing mix
5 tbsp butter
1 large onion, chopped
1 cup sharp/old cheddar cheese, shredded
green onions, chopped

Steps:

  • Preheat oven to 325 degrees F and spray a small round roaster or casserole dish with non-stick cooking spray.
  • Peel and chop carrots into small pieces.
  • Cook in boiling water until a fork can easily go through them. Drain.
  • In a microwave safe bowl, cook 2 tbsp butter and onions in microwave for 2 minutes.
  • In a small roaster or casserole dish, add soup, cooked carrots. water and stove top stuffing (dry mix) then mix in onion in butter.
  • Sprinkle on shredded cheese.
  • Top with remaining (3 tbsp) of melted butter.
  • Bake for 20 minutes in preheated oven.

8 cups sliced carrots
2 medium onions, sliced
5 tablespoons butter, divided
1 can (10-3/4 ounces) condensed cream of celery soup, undiluted
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup shredded cheddar cheese
1 cup seasoned croutons

Steps:

  • Place carrots in a saucepan and cover with water; bring to a boil. Cook until crisp-tender. Meanwhile, in a skillet, saute onions in 3 tablespoons butter until tender. Stir in the soup, salt, pepper and cheddar cheese. , Drain carrots; add to the onion mixture. Transfer to a greased 13x9-in. baking dish. Sprinkle with croutons. Melt remaining butter; drizzle over croutons. Bake, uncovered, at 350° for 20-25 minutes.

Lightly sweet, fluffy souffle casserole is made with mashed carrots and your favorite seasonal spices. It's a decadent side dish that's perfect for dinner parties and holiday celebrations!

2 pounds carrots (peeled and cut into chunks)
½ cup butter
½ cup granulated sugar
4 large eggs
5 tablespoons all-purpose flour
2 teaspoons baking powder
1 ½ teaspoon salt
1 ½ teaspoon vanilla extract
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
¼ teaspoon cayenne pepper
Optional Garnish: powdered sugar

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9-inch square baking dish, or a 9-10 inch tart dish.
  • Place the chopped carrots in a pan. Cover with water, then cover with a lid. Bring to a boil and simmer until fork-tender, usually 20-25 minutes. (The carrots should be very soft.)
  • Pour off the remaining water. Place the hot carrots in the food processor. Add the butter and sugar. Cover and puree.
  • Scrape the side of the food processor with a rubber spatula. Then add in the flour, baking soda, salt, vanilla, cinnamon, nutmeg, and cayenne. Puree again, until smooth.
  • With the food processor running, open the top and drop the eggs into the puree. Once well combined, turn off the food processor.
  • Scoop the carrot puree into the prepared pan. Smooth out the top in an even layer. Bake for 45-50 minutes, until puffy and golden on top.
  • Serve warm, sprinkled with powder sugar if desired.

12 carrots, peeled and sliced
2 tablespoons butter
2 tablespoons onions, minced
1/4 cup flour
1 teaspoon salt
1/2 teaspoon dry mustard
fresh ground pepper, to taste
2 cups low-fat milk
1/2 lb swiss cheese or 1/2 lb jarlsberg cheese, thinly sliced
1 1/2 cups fresh breadcrumbs

Steps:

  • Cook carrots in lightly salted water until just tender, about 10 minutes, and drain.
  • Melt butter in medium saucepan, add onion and saute until soft. Stir in flour with whisk and cook 1 minute. Whisk in seasonings and milk, cooking until thickened.
  • In a buttered, shallow 2 quart casserole, place half of carrots, all of the cheese then rest of carrots. Pour sauce over all and sprinkle with bread crumbs. Bake uncovered 25 minutes.

1 cup mayonnaise
1 tablespoon grated onion

1/4 cup shredded cheddar cheese
2 tablespoons crushed Ritz crackers

Steps:

  • Preheat oven to 350°. Place 1 in. of water in a large saucepan; add carrots. Bring to a boil. Reduce heat; cover and simmer until crisp-tender, 7-9 minutes. Drain, reserving 1/4 cup cooking liquid. Transfer carrots to a 1-1/2-qt. baking dish., In a small bowl, combine the mayonnaise, onion, horseradish and reserved cooking liquid; spread evenly over carrots. Sprinkle with cheese; top with cracker crumbs. Bake, uncovered, for 30 minutes.

1 pound carrot
1/4 cup carrot liquid
2 tablespoons grated onions
3/4 tablespoon horseradish
1/2 cup mayonnaise
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 cup seasoned bread crumbs
1/4 cup butter, melted

Steps:

  • Scrape carrots and cut on the diagonal, making slices about 1/4-inch thick. Cook in salted water until tender-crisp. Drain, reserving 1/4 cup cooking liquid. Mix onion, horseradish, mayonnaise, salt, pepper, and carrot liquid. Combine with carrots in a buttered casserole. Mix bread crumbs with melted butter and spread over carrots. Bake at 375° for 15-20 minutes, or until bubbling.

1/2 cup milk
1/2 cup sugar
1/3 cup butter, melted
2 eggs, lightly beaten

2/3 cup packed brown sugar
1/3 cup all-purpose flour
2 tablespoons cold butter
2/3 cup chopped pecans
2/3 cup sweetened shredded coconut

Steps:

  • In a large bowl, combine the first six ingredients; place in a greased 1-1/2-qt. baking dish. Combine brown sugar and flour; cut in butter until crumbly. Stir in nuts and coconut. Sprinkle over carrot mixture. , Bake, uncovered, at 350° for 30 minutes or until a thermometer reads 160°.

salt and pepper to taste
½ cup cubed processed cheese
2 cups seasoned croutons
⅓ cup melted butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 2 quart casserole dish.
  • Bring a pot of water to a boil. Add carrots and cook until tender but still firm, about 8 minutes; drain.
  • Melt 3 tablespoons butter in a medium saucepan. Saute onions and stir in soup, salt, pepper and cheese. Stir in cooked carrots. Transfer mixture to prepared dish.
  • Toss croutons with 1/3 cup melted butter; scatter over casserole.

1/2 cup butter
1/2 cup medium onion
1/4 cup flour
1 teaspoon salt

1 cup sharp cheddar cheese, shredded
2 pounds baby carrots or 12 large carrots, sliced into bite sized pieces
1 cup plain bread crumbs or ritz crackers

Steps:

  • Preheat oven to 350*F Grease a 9 x 13 casserole dish and set aside. Steam carrots until 1/2 way cooked. You want them to be soft enough to bite but still with a bit of a crunch. They'll finish cooking in the oven. As carrots are steaming, in a saucepan combine butter and onion. Cook until onions are soft and translucent. Add flour, salt, mustard and pepper and mix well to create a paste. Slowly add 1/4 cup of milk at a time whisking continually until all the milk has been added to pan. You are making a basic roux. The mixture will thicken quite a bit at first but slowly thin out. If you add all the milk at once you'll have a clumpy mess, so only add 1/4 cup at a time, whisking well. Cook for 5 minutes then turn off burner and add cheese. Mix well until cheese is melted and combined. When carrots are cooked half way, place carrots on the bottom of the casserole dish. Pour cheese mixture on top of carrots ensuring to cover carrots completely. Sprinkle bread crumbs or crushed Ritz crackers on top of sauce and bake for 25 minutes. Remove from oven and serve immediately.
