Italian Hero Sub Sandwich is a copycat recipe of the popular Subway foot long that makes a delicious and easy lunch for a crowd!

3 deli hoagie buns
6 oz. variety pack of thin sliced Italian meats, Salami, Capocollo, Calabrese
6 slices Provolone cheese
Choice of vegetables, spinach, lettuce, tomato, onion, pickles, banana peppers, olives, etc.
Mayonnaise
Dijon mustard

Steps:

  • Slice the hoagie buns lengthwise and top with vegetables, Provolone and meats.
  • If serving immediately, dress each sandwich with Mayonnaise and Dijon and cut in half.
  • If serving later, wrap each sub in cling wrap and store refrigerated up to 48 hours.

There are so many Subway copycat recipes, but why are they all different? This one borrows from some of them, and adds tweaks of my own.

2 1/2 tablespoons active dry yeast
2 tablespoons sugar
1 1/4 cups warm water
1 teaspoon kosher salt
3 tablespoons olive oil
2 tablespoons vital wheat gluten
3 cups bread flour

Steps:

  • Dissolve yeast and sugar in 1/2 cup warm water. Let stand until foamy, about five minutes.
  • Combine yeast mixture with oil, salt, vital wheat gluten, and one cup of flour in a mixer equipped with dough hooks.
  • Gradually stir in the rest of the flour and remaining water. Scrape remaining flour from the edge of the mixing bowl to make sure it combines fully. The dough should be soft and slightly sticky when blended.
  • Remove dough from mixing bowl, spray bowl with cooking spray, and return to bowl.
  • Cover bowl with plastic wrap and place in a warm place until it doubles in size, about one hour.
  • Divide dough into four pieces, and shape them into an oblong (submarine sandwich-shape).
  • Spray two large baking sheets with cooking spray, and arrange dough so there's plenty of room between them. Reshape the dough to retain shape, since the softness will cause it to flatten out somewhat.
  • Cover the loaves and allow to rise for about an hour.
  • Preheat oven to 350 degrees F.
  • Reshape dough again in the pan as needed to retain desired shape. Cook for 16 minutes, or until the top of the loaves are golden brown.
  • Remove bread from the baking sheets and place on cooling racks.

My Favorite Sub (Hoagie) Rolls image

When it comes to sub rolls, I prefer mine light and fluffy. I make up a big batch of these and freeze them for later use.

5 teaspoons dry active yeast (2 pkgs)
1/4 cup sugar
2 cups water, blood warm
3 tablespoons butter, melted
2 teaspoons salt
6 -7 cups all-purpose flour
cornmeal
1 egg white
sesame seeds (optional)

Steps:

  • Dissolve sugar in water and add yeast to proof. Rest one to two minutes.
  • Melt butter and, along with the salt, stir into yeast mixture.
  • Mix in flour, 1 cup at a time until desired consistency is reached (this dough should not be terribly stick to the touch, but should have plenty of "give" and not be too tough).
  • Knead until VERY well developed (important!). Your dough is finished when you can tear a small piece off, roll into a ball and stretch to form a nearly transparent "window" between your fingers without it tearing.
  • Cover with plastic wrap and let stand until doubled in bulk (approx 40 minutes).
  • Lightly dust a small amount of corn meal over well-greased pans, roll your dough into long, thin "logs" and place about 3" apart on the pans. Slash each loaf every inch and a half with a knife, brush with egg white and sprinkle with sesame seeds if desired.
  • Let double in size.
  • Bake in a 400°F oven until golden brown.

1/4 cup butter or margarine, softened
4 ounces Swiss cheese, sliced
1/2 pound salami, sliced
2 cups shredded lettuce
2 medium tomatoes, thinly sliced
1 medium onion, thinly sliced
1/2 pound fully cooked ham, thinly sliced
1 medium green bell pepper, thinly sliced
1/4 cup creamy Italian dressing
6 long wooden picks or small skewers

Steps:

  • Cut bread horizontally in half. Spread butter over bottom half.
  • Layer cheese, salami, lettuce, tomatoes, onion, ham and bell pepper on bread.
  • Drizzle with dressing. Top with remaining bread half. Secure loaf with picks. Cut into 6 serving pieces.

2 1/2 tablespoons active dry yeast
2 tablespoons sugar
2 cups warm water
1/3 cup soybean oil
6 -7 cups all-purpose flour, divided
1 tablespoon salt
1 tablespoon vital wheat gluten

Steps:

  • Dissolve yeast and sugar in 1/2 cup warm water. Let stand for about nine to ten minutes.
  • Combine yeast mixture with oil, salt, and two cups of flour. Stir well.
  • Gradually stir in 4 cups of flour and remaining water.
  • Knead for 10 minutes, adding additional flour as needed.
  • Place dough in a lightly-greased bowl.
  • Cover with plastic wrap and let rise for about one hour.
  • Punch dough down and divide into eight pieces.
  • Roll each half into loaf-shapes, about twelve inches long.
  • Place loaves onto two large baking sheets lined with parchment paper.
  • Cover the eight loaves and allow to rise for about an hour.
  • Preheat oven to 350 degrees Fahrenheit.
  • Cook for 25 minutes, or until the top of the loaves are golden brown.
  • Let the bread cool until room temperature.
  • For a delicious oat take on the Subway white bread, sprinkle the tops of the loaves with quick-cooking oats after brushing on the egg white mixture.
  • Adapt this recipe to prepare Subway's Honey & Oats bread by adding 1/2 cup of old fashioned oats to the bread dough before rising.
  • If you prefer a hands-off approach, you can mix all of the ingredients in a bread machine and cook on a light setting according to the manufacturer's instructions.
  • Add a bit more flavor by sprinkling a mixture of shredded cheddar cheese, garlic salt, and Italian seasoning over the dough before baking.
  • Recreate Subway's Parmesan Oregano bread by mixing together Parmesan cheese, oregano, and garlic salt and sprinkling it over the unbaked dough.
  • You can also make two loaves of bread from this recipe instead of eight individual sub rolls.

The kids told me this was definitely a "keeper" of a recipe. The hard-boiled egg really adds some depth to the flavor. Add your own flavorites to accommodate your family's tastebuds.

1 (16 ounce) package imitation crabmeat
2 stalks celery
1 tablespoon finely minced onion
4 ounces cream cheese, softened
1 cup sour cream
1/2 cup mayonnaise
2 tablespoons lemon juice
2 tablespoons sugar (or two packets sugar substitute)
6 hard-boiled eggs, cooled
1/2 head lettuce (or spinach, Swiss chard, greens combined)
10 flour tortillas

Steps:

  • In a mixing bowl, snip crab meat into fine pieces. Dice celery, mince onion, and add to crab. Stir and set aside.
  • Mash cream cheese, then add sour cream, mayo, lemon juice and sugar, mixing until creamy.
  • Pour cream cheese mixture to crab & veggies, mixing well. Set aside.
  • Using a pastry blender (or a fork), chop the eggs until crumbly-looking; set aside.
  • Shred the lettuce and set aside.
  • PUT IT TOGETHER: Spread about a 1/4-cup of crab mixture in a thin layer over a tortilla. Sprinkle with eggs and lettuce. Roll tortilla up very tightly.
  • LUNCH or PICNIC: Wrap each tortilla tightly in a slice of waxed-paper. Unwrap or cut in half and keep it neat!
  • PLANNED OVERS: Mix remaining crab, lettuce and egg, and have it for lunch the next day!
  • CHANGE OVERS: Add some French or Western dressing and a dab of horseradish with the mayonnaise to create more of a seafood saucey flavor. Yummmy! OR dip wrap in this! Even better!
  • Plan for two wraps per person, with "leftovers" being chilled and served for lunch the next day (or a late night snack?).

  • In the bowl of your stand mixer, add the water, yeast, sugar, salt, and olive oil. Let the mixture stand for 5 minutes.
  • Add 1 cup of flour and mix with the dough hook for 3 to 5 minutes. Add an additional cup of flour and mix until well combined. Continue adding the flour, 1/4 cup at a time, until a soft dough is formed. The dough should still stick to the bottom of of the bowl, but pull away from the sides. Let the dough mix for around 8 minutes total.
  • When the dough has come together but is still sticking a bit to the bottom of the bowl, turn it out onto a lightly floured surface and knead until smooth. The dough should be very soft. Shape the dough into a ball and return it to the bowl. Cover the bowl with plastic wrap and allow the dough to rise for a half hour.
  • After the dough has risen, turn it out onto a clean surface and divide it into 4. Roll each piece of dough into a long skinny loaf that is about 9 to 10 inches long.
