WALLA WALLA SWEET ONION-SWISS CHEESE CASSEROLE
A nice side dish for roast beef or ham. Use Walla Walla Sweets or Vidalia's for this. Regular yellow onions aren't sweet enough.

Steps:
- Peel and cut the onions in half and then quarter the halves. Slice the quarters in food processor fitted with slicing disc.
- Preheat oven to 350 degrees.
- Melt 1/4 cup butter in a large skillet and saute onions over medium heat until tender.
- Place half the onion mixture into a 1 1/2-quart oven-proof casserole.
- Sprinkle 1 cup of Swiss cheese and 1/2 cup cracker crumbs over onions. Repeat layers of onions and cheese.
- Beat eggs with the half-and-half, salt and pepper. Pour evenly over layered contents of casserole.
- Melt 2 tablespoons butter in skillet and stir in remaining cracker crumbs. Lightly brown over medium heat. Sprinkle browned crumbs over casserole.
- Bake for 25 minutes.

When I lived in Washington, we had these regularly when the Walla Walla "sweets" came in. They are deliciious and it's so simple! Makes a great appetizer or side dish.

- Preheat oven to 350°F.
- Peel outer dry skin from onion and wash.
- Cut hole in top of onion large enough to put boullion cube and butter.
- Fill with cube with butter then boullion cube or crystals.
- Place onion on aluminum foil and wrap around onion with slight "vent" in top.
- Bake for 1 hour.

WALLA WALLA ONION, PINE MUSHROOM FONDUTA
Steps:
- Roasted Walla Walla Onions:
- Preheat the oven to 450°F.
- Cut the very tops (about 1 inch) off the onions and then replace. Make a bed of coarse salt in a small roasting pan. Place the onions on the salt and roast for about an hour, or until soft through.
- When cool enough to handle, scoop out the insides of the onions, leaving the outer two layers intact within the skin. Take care not to scrape out the base of the onions, as the fonduta will leak out the bottom. Finely chop half of the onion innards for the filling. Set aside.
- Pine Mushroom Fonduta:
- In a medium-size sauté pan, heat the olive oil and add the sliced pine mushrooms. Sweat for 5 minutes, then add the flour. Sauté for 1 minute more, then add the Vegetable Stock and cream. Bring to a simmer and add the reserved chopped Walla Walla, thyme, and salt and pepper to taste. Add the day-old sourdough bread pieces. Cook together for 5 minutes to meld the flavours. Add the grated Gruyère, stirring to melt, then remove f rom the heat.
- Assembly:
- Preheat the oven to 450°F. Place the Roasted Walla Walla Onions in a roasting pan, and fill with hot Pine Mushroom Fonduta (if you have extra, it can be served on the side). Top with the grated Gruyère. Roast for 10 minutes, until bubbly.
- Serve with lots of Arctic Sourdough and any extra fonduta that didn't fit in the onions.
STUFFED WALLA WALLA SWEETS
I found this recipe in the Northwest Best Places Cookbook. I can't wait to make it for my onion loving husband.

Steps:
- Peel the onions, then cut off a thin slice at the top and the bottom.
- Boil the onions in a pot of hot water for 7 minutes; remove and drain well.
- Let cool and then by either pushing or cutting with a small knife,remove the centers from the onions, leaving a shell of at least 4 layers. Set aside the onion centers.
- Set the onion shells in a buttered baking dish.
- Preheat oven to 350.
- Fry the sausage in a skillet over medium heat until no pink shows, breaking up the pieces as it cooks.
- Finely chop the reserved onion centers.
- Combine the chopped onion, cooked sausage, bread crumbs, cheese, egg, milk, parsley, sugar and cinnamon, salt and pepper.
- Stir to combine.
- Stuff the onions shells with this mixture, topping each with a strip of bacon.
- Bake about 30-40 minutes until stuffing is hot.

This is from an old booklet put out by the Walla Walla Gardeners Association. Walla Walla is in SW Washington state. On recommendations from other chefs, I changed the amount of onions used from 6 to 4.

Steps:
- Preheat oven to 350°F.
- Butter a 8x8x2-inch square baking pan.
- In a skillet, melt butter and saute onions until soft and beggining to brown, about 10 minutes.
- Spoon evenly into bottom of baking pan.
- Combine dry ingredients in a mixing bowl. Cut in shortening until well blended.
- Beat egg and milk together and mix with dry ingredients until just blended.
- Pour batter over onions.
- Bake 25-30 minutes.
- Turn out onto serving plate; cut into squares. Serve hot.

Steps:
- Line a baking tray with parchment.
- Place the coconut in a pan with the water and sugar.
- Heat gently until the sugar dissolves.
- Stir in the ground cloves and lime juice and increase heat.
- Cool, stirring with a wooden spoon, until the mixture has thickened and become dark golden brown.
- Drop spoonfuls of the mixture on to the lined tray, pressing down with the back of the spoon to flatten it lightly into chunky, irregular pieces.
- Leave to cool before eating.
