STUFFED ITALIAN BEEF STROMBOLI

Steps:
- Preheat the oven to 375 degrees F; line a baking sheet with parchment paper.
- On a floured surface, roll out the dough and cut it into two 12-by-14-inch portions. Layer half of the cheese, then half of the Italian Beef, giardiniera and red peppers on each portion of dough. Using a pastry brush, paint one of the short borders with the egg wash. Starting with the unwashed side, roll the dough into a cylinder, pinching the ends to seal. Transfer to the prepared baking sheet, poke with a fork or sharp knife to vent and brush with olive oil.
- Bake until golden brown on top, 20 to 25 minutes. Let stand for 15 minutes before cutting and serving with a sidecar of strained jus from the Italian Beef.
- Position a rack in the middle of the oven and preheat the oven to 350 degrees F.
- Liberally season the roast with salt and pepper. Heat the oil in a Dutch oven over medium-high heat. Sear the roast, browning on all sides until golden and caramelized. Reduce the heat if the oil begins to smoke. Transfer the roast to a plate and lower the heat to medium.
- Add the onions and saute, stirring occasionally, until they are just beginning to brown, 8 to 10 minutes. Add the Italian seasoning, crushed red pepper and garlic and saute until fragrant, 1 minute. Deglaze the pan with the red wine and cook until you no longer smell the alcohol and the wine has reduced. Add in the stock and thyme and bring to a simmer. Adjust the seasoning of the braising liquid.
- Return the roast and any accumulated juices back to the pot. Transfer to the oven and cook, turning every 30 minutes, until very tender, 3 1/2 to 4 hours. Transfer the roast to a cutting board and tent with foil. Once the roast has cooled, pull the meat into smaller chunks.
- Strain the braising liquid through a fine-mesh strainer and return to the pot. Bring to a simmer and adjust the seasoning if necessary. Serve the jus with the meat.
MONSTER STROMBOLI - STUFFED PIZZA STYLE
This recepie is for a Stuffed Pizza size Stromboli using our favorite deli meat fillings, and vegatables We make this for family gatherings and special events like Sunday Football. It's sort of a Think Big or Go Home type dish. Made for a 15" round Pizza Stone. makes 16 generous servings.

- Coat PiIzza Stone with a dusting of corn meal.
- Roll out first pound of Bread / Pizza dough extend beyond stone 1/2 inch.
- layer in order.
- Onion Rings with a sprinkling of shredded mozzerella cheese.
- cover with Salami, Pepper Rings, add in 1/2 of sliced olives.
- Pepperoni, Provolone Cheese,
- add Sliced Portabella, infill steamed drained spinach and remaining olives.
- add a sprinkling of mozzerella
- add peppered / black forest ham.
- add remaining onion and pepper.
- infill with mozzerella cheese.
- top with Coopocollo.
- Roll next 1 pound dough and cover stitching to base dough layer.
- coat with light olive oil and ventilate with knife to allow venting of steam.
- Bake in preheated 375 degree oven for 40 to 45 min untill golden brown.
- Allow to sit for 15 minute before slicing and Enjoy.

STROMBOLI BREAD WREATH

- Remove the pizza dough from the refrigerator and allow to come to room temperature, 2 to 3 hours.
- Preheat the oven to 375 degrees F. Spray a Bundt pan with nonstick cooking spray.
- Add the olive oil to a medium saute pan over medium-high heat and cook the sausage until brown, 12 to 15 minutes. Transfer to a medium bowl with a slotted spoon and allow to cool slightly.
- Roll out the dough on a lightly floured surface into a long oval about 10 inches wide by 18 inches long. Spread 1/2 cup pesto in the middle of the dough, leaving about a 2-inch dough border.
- Add the mortadella, pepperoni, salami and mozzarella to the cooked sausage and toss to combine.
- Scoop the sausage mixture on top of the pesto. Fold both sides of the dough lengthwise around the filling to create a seam along the center of the log. Crimp the seam to seal. Place in the greased Bundt pan seam-side up. Poke holes along the top to release the steam. Bake until golden brown on top, about 25 minutes.
- Let rest for 5 minutes. Place a cutting board on top of the Bundt pan and flip the wreath out carefully, then remove the pan.
- Form a sun-dried tomato bow by cutting one sun-dried tomato in half lengthwise. Arrange the remaining 2 sun-dried tomatoes end-to-end, then wrap one of the halves around its center and secure with a toothpick to make the bow. Cut the remaining half lengthwise into 2 pieces and arrange them hanging down from behind the back of the bow, securing with a toothpick.
- Serve the wreath with the remaining pesto in a bowl in the center. Garnish with the sun-dried tomato bow and gaze at the glory of the sausage wreath!
STROMBOLI

- Preheat oven (with pizza stone inside ) to 450 degrees F. (If do not have pizza stone, can use a baking sheet). Sprinkle a little flour on your work surface. Use a rolling pin to roll the dough into a 10 by 14-inch rectangle. Cover the rectangle with layers of your desired toppings, leaving a 1-inch border around the sides and at the top. Mix the three cheeses and the herbs together in a small bowl and sprinkle on top of the toppings.
- Starting at the end closest to you, roll the stromboli into a log. Seal the dough by pinching firmly with fingertips on sides and ends.
- Sprinkle a little cornmeal on a pizza paddle. Put the stromboli on the paddle. Make sure the seam is on the bottom. Use a pastry brush to brush the top and sides of the stromboli with a little olive oil. Carefully place the stromboli on preheated pizza stone. Turn down oven temperature to 400 degrees F. and bake for 35 minutes. Carefully remove from oven and let rest 5 to 10 minutes. Slice with a serrated knife.
PIZZA STROMBOLI
I found this one several years ago in a Taste of Home magazine. We LOVE it! It was submitted to them by John Morcom from Oxford, Michigan. He says "I used to own a bakery, and this bread was one of our customers' favorites. Once they smelled the aroma of pizza and sampled these tempting spiral slices, they just couldn't resist taking some home." Start early and be sure to allow enough time for the dough to rise! I make the dough in my bread machine but there are directions for making it by hand.

- I make this dough in my bread machine instead of doing it by hand but I'm posting it as it was published. You decide how you want to do it.
- In a large bowl, dissolve yeast in warm water. Stir in honey and milk powder until well blended. In a small bowl, combine 1 cup bread flour, whole wheat flour and seasonings. Add to yeast mixture; beat until smooth. Stir in pizza sauce. Stir in enough remaining bread flour to form a soft dough.
- Turn onto a floured surface; knead until smooth and elastic; about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover; let rise in a warm place until doubled, about 1 hour.
- Punch dough down. Turn onto a lightly floured surface; roll into a 14-in. x 12-in. rectangle. Sprinkle pepperoni, 1/4 cup cheddar cheese, Parmesan cheese, 2 tablespoons mozzarella cheese, onion, olives and mushrooms to within 1/2 inches of edges. Roll up jelly-roll style, starting with a long side; pinch seam to seal and tuck ends under. Place seam side down on a greased baking sheet. Cover and let rise for 45 minutes.
- Sprinkle with remaining cheese. Bake at 350° for 25-30 minutes or until golden brown. Remove from pan to a wire rack. Serve warm. Refrigerate leftovers.
STROMBOLI AND PIZZA DOUGH
This makes a pound of dough which makes one stromboli or two 10 inch pizzas. It's my go-to white flour dough for flat breads and stromboli. I often substitute up to 33% whole wheat for a healthier dough.

- Add ingredients in the order given in a bread machine and use the dough cycle or --.
- Mix in a large bowl until all ingredients are wetted, cover and let rest 5 minutes.
- Knead for 5 minutes by hand using a minimum of flour and place in a straight sided container that has been oiled and cover.
- After 20 minutes, tip dough onto a lightly oiled counter and stretch into a rectangle. Fold the top down and the bottom up letter-style and do the same side to side. Replace into the container and cover.
- After the dough has risen to twice it's volume, tip the dough onto a lightly floured counter and cover with oiled plastic wrap.
- For stromboli:.
- Roll the dough into a rectangle, 16 inches wide, by 11 1/4 inch tall. Place ingredients of choice (hard salami, ham, roast beef, provolone, mozzarella, onions, or roasted peppers) and roll into a log, sealing the tube well with seam on side.
- Preheat oven to 350 F while the dough rises (45 minutes to 1 hour). Brush with egg and water or egg white and water glaze, score the dough with several shallow slashes and bake for 45 minutes or until interior temperature is 185 to 200°F.
- For Pizza:.
- Divide the dough into 2 equal pieces and stretch into a 10" disk. If the dough shrinks after stretching, wait 5 minutes and stretch some more.
- Preheat (preferably with a pizza stone) to 500°F Cover dough with toppings (I like drained canned crushed tomatoes as a sauce) and let rise for 20 minutes.
- Bake for 4 minutes. Turn the pizza for even cooking and bake until the dough is browned some, and the cheese is bubbly (about 3-4 more minutes).

STUFFED PIZZA BURGER
This is a combination between a pizza and a burger. You can have fun with it--it can be changed up any way you like it.

- Combine, hamburger salt and pepper in a large bowl. In another bowl, combine the coarsely shredded sharp cheddar and pepperonis. Let pepperoni and cheese mixture sit at room temperature for about 20 minutes to get soft. Then, shape mixture into balls (for however many burgers you would like to make).
- Form 4 patties of meat and place one cheese/pepperonis balls in between them. Pinch the sides together to seal in cheese ball. Gently press formed patty, to spread out cheese ball. Continue until all patties are formed.
- Cook burgers on grill over medium flame for about 7 minutes on each side.
- While burgers are grilling, flip burgers, and baste the cooked side of the patties with the pizza sauce After about 7 minutes longer, the burger should be done (these are big thick burgers and may take longer to grill to your liking). Baste again with the pizza sauce before removing from grill. Butter hamburger buns and place on top rack of grill for several minutes, until toasted.
- To build burger, take toasted bun, add patty, you can add tomato or lettuce, if you would like, but the flavors are great without them.

- The Secret Sauce. In a small mixing bowl add: 1 T Oil. 2 eggs. 1 T Italian Seasoning. 1 tsp salt. 1 tsp black pepper. 1 Tb Garlic powder. Stir together with a whisk until well blended.
- Rolling Out the Dough. Next I get my pre-made pizza dough from the refrigerator. Sprinkle a heavy dusting of flour on your prepping surface. Place one ball of dough in the center of the flour.
- Spread the Secret Sauce on the Dough. Using a spoon, put approximately 2/3 of the prepared sauce on the rolled out dough and spread evenly around the dough while leaving about a 1/2 inch perimeter around the edge for rolling and sealing the dough later.
- Add the Mozzerella. Sprinkle 2 cups of pre-shredded mozzarella cheese evenly on top of the sauce. Leave a border still as well.
- Pepperoni Time! Put 1 lb of pepperoni on top of the cheese. All of it. Spread it out slightly over the cheese.
- Black Olives (if You Like Them) My family LOVES black olives! I carefully slice 1 can of the large black olives on my pretty cutting board. Sprinkle them heavily on top of the pepperoni.
- Rolling Up the Stromboli. Here is the challenging part of making Stromboli. It has taken alot of practice to get this system in place. Here is what I do
- Getting Ready to Bake. Get the bowl of remaining egg mixture and spread it all over the Stromboli. Next get a small sharp kitchen knife and begin to make diagonal slices across the top similar to french bread.
- Serve It Up! Remove from the oven and let it set for about 10-15 minutes. This will soften the crust. We eat it with a side of spaghetti or pizza sauce.
