Steps:

  • To make the streusel: Put the flour, sugar and salt in a medium bowl and mix everything together by running the ingredients through your fingers. Drop in the butter and squeeze and rub the cubes into the mixture until you have a sandy mix. If you press a little streusel together, you'll get lumps, which is just what you want. Drizzle the vanilla over the streusel and toss, squeeze and rub to distribute it. Cover the bowl and chill the streusel until needed. (You can make the streusel up to 1 week ahead; pack it in an airtight container and keep it refrigerated.)

1 1/2 teaspoons baking powder
3/4 teaspoon baking soda
1/4 teaspoon salt

1/4 teaspoon ground cinnamon
1 cup mashed banana (3 small overripe ones)
2 eggs
1/3 cup sugar
1/16 cup butter, melted
1/2 cup all-purpose flour
1/2 cup packed light brown sugar
1/16 cup butter, softened
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon

Steps:

  • Heat oven to 350°F; grease three (3) 5 3/4 X 3 1/4 x 2 inch disposable mini-loaf pans (2 8 1/2 X 4 1/2 loaf pans can be used as well).
  • Mix together flour, baking powder, baking soda, salt, nutmeg, and cinnamon in a bowl.
  • Beat bananas, eggs, sugar and butter in a large bowl until smooth.
  • On low speed, gradually beat in flour mixture.
  • Divide among the prepared pans.
  • Streusel: Mix flour, sugar, butter, nutmeg and cinnamon in bowl with a fork until crumbly.
  • Sprinkle evenly over batter.
  • Bake in 350°F oven 30 minutes or until a wooden toothpick inserted in the middle comes out clean.
  • If streusel is browning too quickly, cover loosely with foil.
  • Cool cakes in pan on wire rack for 10 minutes.
  • Remove cakes from pans to racks to cool completely.

vegetable oil, for the tin
200g digestive biscuits
2 tbsp caster sugar
85g unsalted butter, melted
700g cream cheese
250g mascarpone
280ml soured cream
250g golden caster sugar
3 large eggs
1 tbsp vanilla bean paste
3 tbsp plain flour
115g plain flour
60g light brown soft sugar
1 tsp ground cinnamon
45g unsalted butter, melted
20g roasted hazelnuts, roughly chopped
3 ripe, firm peaches
30g light brown soft sugar
1 lemon, juiced
1 tsp vanilla bean paste

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Oil and line a 20cm round springform, deep tin so that the parchment comes 5cm above the rim. Blitz the biscuits in a food processor to a fine crumb, or put in a tightly sealed sandwich bag and bash with a rolling pin. Tip into a bowl and stir through the sugar and butter, then tightly pack into the tin. Bake for 10 mins, then leave to cool completely.
  • For the streusel, mix together the flour, sugar, cinnamon and a pinch of salt in a large bowl. Gradually drizzle in the melted butter, stirring with a fork to combine, until the mixture has formed into clumps. Mix the streusel with the nuts and chill until needed.
  • Beat together the cream cheese, mascarpone, soured cream, golden caster sugar, eggs and vanilla in a large bowl using a wooden spoon until smooth. Gently fold through the flour using a large metal spoon. Pour the mixture gently into the tin. Top with the streusel and bake for 1 hr-1 hr 15 mins or until set with a vigorous wobble in the middle. Turn off the oven and open the oven door, leave to cool for 2 hrs, then transfer to the fridge to chill overnight.
  • Destone and slice the peaches into quarters. Line a roasting tin with baking parchment and put the peaches in the tin. Sprinkle over the sugar, lemon and vanilla, and cover with a layer of parchment. Bake for 15-20 mins or until soft but holding their shape. Leave to cool completely.
  • Gently push the cheesecake out of the tin and top with the peaches. Slice and serve. Will keep for three days in the fridge.

This moist cake with a crunchy nut topping is sure to become a teatime favourite

100g butter , plus 1 tbsp
175g light brown muscovado sugar , plus 1 tbsp
2 dessert apples , peeled and cut into 1.5cm pieces
2 eggs
1 tsp vanilla extract
200g plain flour
1 tsp baking powder
½ tsp ground cinnamon
100ml milk
25g flour
85g demerara sugar , plus 1 tbsp
½ tsp ground cinnamon
50g cold butter
3 tbsp toasted, chopped hazelnuts

Steps:

  • Heat 1 tbsp butter and 1 tbsp sugar in a large frying pan over medium heat until the sugar starts to melt. Add apples, then cook for about 5 mins, until nicely browned and the sauce is a rich caramel. Leave to cool.
  • While the apples cool, make the topping. In a food processor or using the tips of your fingers, rub together flour, 85g sugar, cinnamon and cold butter until the mixture is crumbly and only pea-size pieces of butter remain. Stir in 2 tbsp of hazelnuts. Set aside in a cool place.
  • Heat oven to 180C/160C fan/gas 4. To make the cake, place the remaining butter and sugar in a bowl or food mixer and beat until light and creamy. Add the eggs one at a time, followed by the vanilla extract. Add the flour, baking powder, cinnamon and milk in two goes, alternating between dry and wet ingredients. When the mixture is well combined, stir through the apples.
  • Grease a 20cm cake tin with removable base and line the base with a circle of baking paper. Spoon in the cake mixture, smooth over the top with a spoon, then sprinkle over the streusel topping. Scatter with the remaining 1 tbsp demerara sugar and hazelnuts. Cook in the oven for 50 mins-1 hr or until a skewer inserted into the cake comes out clean. Leave to cool in the tin for 10 mins, then turn out onto a baking rack, remove paper and cool.

1 ½ cups white sugar
½ cup solid vegetable shortening, at room temperature
2 large eggs
1 cup milk

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour two 9-inch round cake pans.
  • Combine brown sugar, flour, and cinnamon in a bowl; mix with an electric mixer until sugar clumps are broken up. Add melted butter; mix until thoroughly blended. Stir in pecans by hand. Set filling aside.
  • Blend sifted flour, baking powder, and salt together in a large bowl. Combine sugar, shortening, and egg in a second large bowl; mix with an electric mixer until thoroughly combined. Add milk and mix on low speed. Stir in dry ingredients.
  • Spread 1/4 of the batter into each of the prepared cakes pan and spread 1/4 of the streusel filling over each. Repeat once more, spreading layers evenly.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 25 to 30 minutes.
