A marvelous hybrid of coffee cake and banana bread, that's this moist loaf with its nutty cinnamon-brown-sugar-pecan-streusel topping.

6 tablespoons unsalted butter, room temperature, plus more for pan
3/4 cup unbleached all-purpose flour
1/3 cup packed light-brown sugar
1 teaspoon ground cinnamon
1/2 teaspoon kosher salt
1/2 cup chopped pecans
1 1/2 cups unbleached all-purpose flour
3/4 teaspoon baking soda
1/4 teaspoon kosher salt
1 stick unsalted butter, melted
1 cup granulated sugar
2 large eggs, room temperature
1 teaspoon pure vanilla extract
1/3 cup buttermilk
3 very ripe bananas, mashed until smooth (1 cup)

Steps:

  • Preheat oven to 350 degrees with a rack in lower third. Butter a 9-by-5-inch loaf pan; line with parchment, leaving a 1-inch overhang on long sides. In a bowl, combine flour, brown sugar, cinnamon, and salt. Stir in butter and pecans until small clumps form and mixture is evenly moistened. (Streusel can be made ahead and refrigerated, covered, up to 3 days.)
  • In a large bowl, whisk together flour, baking soda, and salt. In another bowl, whisk together butter, granulated sugar, eggs, vanilla, and buttermilk; stir in bananas. Make a well in flour mixture and pour banana mixture in. Stir together until just combined (do not overmix). Spoon half of batter into prepared pan. Sprinkle half of streusel evenly over batter. Add remaining batter, then sprinkle remaining streusel evenly over top.
  • Bake until golden brown and a tester inserted in center comes out clean, about 1 hour, 20 minutes. (If top is browning too quickly, tent with foil.) Let cool in pan 20 minutes, then transfer using parchment to a wire rack. Let cool completely before serving.

1 cup BREAKSTONE'S or KNUDSEN Sour Cream
2 eggs
2-1/4 cups flour
1-1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 cup chopped walnuts
1/3 cup flour
3 Tbsp. sugar
3 Tbsp. cold butter

Steps:

  • Heat oven to 350ºF.
  • Beat 1/4 cup butter and 1 cup sugar in large bowl with mixer until well blended. Add bananas, sour cream and eggs; mix well. Combine next 4 ingredients; add to banana mixture. Stir just until moistened. Stir in nuts.
  • Pour into greased and floured 9x5-inch loaf pan.
  • Mix 1/3 cup flour and 3 Tbsp. sugar in medium bowl. Cut in 3 Tbsp. butter with pastry blender or 2 knives until mixture forms coarse crumbs. Sprinkle over batter.
  • Bake 1 hour or until toothpick inserted in center comes out clean. Cool 5 min.; remove from pan to wire rack. Cool completely. Refrigerate leftovers.

This is a classic quick bread recipe with a special twist, a crunchy cinnamon-y streusel topping. I sometimes add more mashed bananas than the recipe calls for to make the bread really moist.

1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
3/4 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cinnamon
1 cup mashed banana (3 small overripe ones)
2 eggs
1/3 cup sugar
1/16 cup butter, melted
1/2 cup all-purpose flour
1/2 cup packed light brown sugar
1/16 cup butter, softened
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon

Steps:

  • Heat oven to 350°F; grease three (3) 5 3/4 X 3 1/4 x 2 inch disposable mini-loaf pans (2 8 1/2 X 4 1/2 loaf pans can be used as well).
  • Mix together flour, baking powder, baking soda, salt, nutmeg, and cinnamon in a bowl.
  • Beat bananas, eggs, sugar and butter in a large bowl until smooth.
  • On low speed, gradually beat in flour mixture.
  • Divide among the prepared pans.
  • Streusel: Mix flour, sugar, butter, nutmeg and cinnamon in bowl with a fork until crumbly.
  • Sprinkle evenly over batter.
  • Bake in 350°F oven 30 minutes or until a wooden toothpick inserted in the middle comes out clean.
  • If streusel is browning too quickly, cover loosely with foil.
  • Cool cakes in pan on wire rack for 10 minutes.
  • Remove cakes from pans to racks to cool completely.

2 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup unsalted butter, softened
1 cup sugar

1 lemon, zest of
1 cup about 3 medium mashed ripe banana
1 extra banana
1/2 cup sour cream, room temperature
3 tablespoons sugar
2 tablespoons flour
2 tablespoons cold butter, cut in pieces
1/2 cup chopped pecans

Steps:

  • Preheat the oven to 325°.
  • Grease a 5"x9" loaf pan and set aside.
  • Sift flour, baking powder, and salt into a medium bowl and set aside.
  • Using an electric mixer, cream the butter and gradually add the sugar.
  • Add the eggs, one at a time, beating well after each addition.
  • Blend in vanilla and lemon zest.
  • Mix together 1 cup mashed banana with sour cream in a small bowl.
  • Add 1/3 of the flour mixture into the creamed butter mixture.
  • Blend in 1/2 of the banana mixture, another 1/3 of the flour mixture, remaining banana mixture, then remaining dry mixture, blending well after each addition.
  • Cut remaining banana into ½" chunks and fold into batter.
  • Pour batter into prepared pan and smooth.
  • To make the streusel, put the sugar, flour, and butter in food processor and pulse until crumbly.
  • Add pecans and pulse just until nuts are chopped.
  • Spread streusel evenly over batter, pressing in lightly.
  • Bake for 1 hour and 10 minutes, or until a tester inserted in center comes out clean.
  • Cool in pan on a wire rack for 10 minutes. Turn bread out of pan and cool completely before slicing.

2/3 cup pecans, toasted and coarsely chopped
1/3 cup dark chocolate, chopped (optional)
2 bananas, mashed
2 large eggs, lightly beaten
1/2 cup unsalted butter, melted and cooled
1/3 cup plain yogurt (or vanilla, coffee, or caramel flavored)
1 teaspoon pure vanilla extract
1/3 cup pecans, toasted and coarsely chopped
1/3 cup unsweetened coconut

Steps:

  • Preheat oven to 350 degrees F.
  • Butter bottom and sides of an 8-cup loaf pan.
  • Line the bottom of the pan with parchment paper. Set aside.
  • In a medium bowl combine 1/3 cup pecans and coconut. Set aside.
  • In a large bowl combine the flour, sugar, baking powder, baking soda, salt, 2/3 cup of pecans, and chocolate (if using). Set aside.
  • In a medium-sized bowl combine the mashed bananas, eggs, melted butter, yogurt, and vanilla.
  • With a rubber spatula or wooden spoon, lightly fold the wet ingredients into the dry ingredients until just combined and the batter is thick and chunky.
  • Pour the batter into the prepared pan and sprinkle the coconut mixture over the top of the batter, lightly pressing into the batter.
  • Bake until bread is golden brown and a toothpick inserted in the center comes out clean, 60 - 70 minutes.
  • Place on a wire rack to cool and then remove the bread from the pan.
  • Serve warm or at room temperature.

1/2 cup firmly packed light brown sugar
7 tablespoons uncooked Quaker Oats
1/3 cup flour
1/3 cup cold butter or 1/3 cup margarine, cut into pieces
2 small ripe bananas, mashed (1 cup)
2 large eggs
1/2 cup sugar
1/3 cup butter or 1/3 cup margarine, melted
1 1/2 cups flour
1 1/2 teaspoons baking powder
3/4 teaspoon baking soda
1/4 teaspoon salt
1 cup chopped pecans, toasted (I use any nuts and don't toast them)
1 teaspoon vanilla

Steps:

  • Combine first three ingredients for streusel topping.
  • Cut in butter with a pastry blender until crumbly.
  • Chill streusel.
  • Beat banana and next 3 ingredients in a large mixing bowl just until smooth.
  • Don't overmix.
  • Combine dry ingredients.
  • Add to banana mixture
  • Stir just until moistened.
  • Stir in pecans and vanilla.
  • Spoon batter into (3) (5-3/4 x 3-1/4 inch) greased disposable mini loaf pans or Can use regular size loaf pans but will only make 2.
  • Sprinkle each loaf evenly with streusel topping.
  • Bake at 350 for 35 min or until knife comes out fairly clean.
  • Cool in pans on wire rack 5 minute Remove and continue to cool on wire rack.
  • You can put back in pans for gift giving.
  • (I omit the step of taking out of pans and it has worked out fine).
