Strawberry Arugula Salad with Watermelon and Feta image

This salad serves 3-4 as a main salad or 6-8 as a side salad. Good quality balsamic vinegar and olive oil are important to use for this simple dressing. Use a melon baller to make melon balls for the watermelon.

8 cups arugula
3 cups seedless watermelon (, portioned with a melon baller or chopped into 1/2 inch pieces)
3 cups strawberries (, sliced)
1/4 red onion (, thinly sliced)
1/2 cup fresh basil (, chiffonade (optional))
1/2 cup crumbled feta cheese or more to taste
1/4 cup sliced almonds
1/3 cup fruity extra virgin olive oil
1 1/2 tablespoons balsamic vinegar
1 teaspoon sugar or honey, plus more to taste
1/4 teaspoon each kosher salt and freshly ground peppe

Steps:

  • In a large bowl, add the arugula, watermelon, strawberries, red onion, basil, feta cheese, and almonds.
  • in a small bowl whisk the olive oil, balsamic vinegar, sugar or honey, and salt and pepper. Taste for sweetness and add more honey or sugar to your taste. Drizzle half of the dressing over the salad ingredients, reserving the rest and adding more if desired, then gently toss. Taste for seasoning and serve.

1/2 watermelon, cubed
6-8 strawberries
3-4 mint leaves
pinch of salt
Honey Lime Vinaigrette:
1/3 cup honey
1/2 teaspoon lime peel
1/4 cup fresh squeezed lime juice
1/8 teaspoon ground nutmeg or cinnamon
3/4 cup salad oil

Steps:

  • Cut the watermelon into cubes and place it in a large bowl.
  • Hull and slice the strawberries and add to the watermelon.
  • Cut the mint leaves into slivers and sprinkle on top
  • Add a pinch of salt
  • Vinaigrette Instructions:
  • In a small mixing bowl combine the honey, lime peel, lime juice, and nutmeg.
  • Whisk to mix ingredients, add half of the oil to the honey mixture in a thin steady stream.
  • Continue whisking till mixture is thick, add more oil until you reach the desired flavor.
  • Drizzle over the watermelon and serve.

1 small seedless watermelon, rind removed, flesh cut into large chunks (about 4 cups)
1 pound strawberries, hulled and sliced, 1 cup reserved for garnish
1 bottle rose wine, cold
1 cup vodka
1 cup fresh orange juice
1/2 cup orange liqueur
1 orange, sliced
1 lime, sliced

Steps:

  • Combine the watermelon and strawberries in a blender and blend until smooth; add a splash of the vodka if needed to get the fruit pureed.
  • Strain into a large pitcher; you will need about 4 cups total juice. Add the rose, vodka, orange juice and liqueur and stir to combine. Add the orange and lime slices, cover and refrigerate for at least 1 hour and up to 24 hours. Just before serving, add the reserved strawberries. Serve in glasses over ice.

½ cup watermelon chunks
2 tablespoons chopped red onion
2 tablespoons white wine vinegar or champagne vinegar
2 tablespoons extra virgin olive oil
1 teaspoon honey
1 tablespoon chopped fresh basil
salt and pepper, (to taste)
2 cups chopped strawberries
2 cups chopped cantaloupe
2 cups chopped seedless watermelon
6 cups mixed greens
¾ cup crumbled gorgonzola cheese or feta cheese

Steps:

  • Combine all ingredients in a blender or mini food processor and pulse until well combined. Add in salt and pepper to taste. Transfer to a bowl, cover and refrigerate until ready to use.
  • In a medium bowl, toss strawberries, cantaloupe and melon together in a medium bowl.
  • To serve, divide greens between 6 salad bowls. Top each with about 1 cup of fruit, and sprinkle with gorgonzola cheese. Drizzle each serving with watermelon vinaigrette.

1 teaspoon grated lemon, rind of
1 cup cubed seeded watermelon
1/4 teaspoon salt
