Steps:
- Preheat and grease the griddle.
- Sift the dry ingredients together, then beat in the butter, eggs, and milk.
- Pour batter onto the hot griddle, then sprinkle some strawberries onto each round.
- When the pancakes are full of bubbles, turn, cook other side until done, and serve with maple syrup or yogurt and more strawberries.

Steps:
- Beat egg until frothy.
- Add milk and butter.
- Mix well.
- Add sugar, salt and vanilla extract. Mix well.
- Add flour and mix until smooth.
- Add a little water if it is too thick. Mixture should just barely pour out of a spoon.
- Heat a heavy cast iron griddle or skillet over medium low burner.
- Wipe with butter with a paper towel just enough to grease the surface lightly.
- When heat is correct a small drop of water will just bounce and break in to smaller drops.
- Pour batter a 1/4 cup at a time for each pancake.
- Turn when top begins to bubble slightly.
- Second side cooks quicker so keep an eye on 'em.
- Repeat until out of batter, remember to wipe the griddle with butter between each batch.

- Whisk flour, 2 tablespoons sugar, baking powder, baking soda and salt together in bowl. In second bowl, whisk buttermilk, eggs, sour cream and melted butter together. Make well in center of flour mixture and pour in buttermilk mixture; gently stir until just combined (batter should remain lumpy, with few streaks of flour). Do not overmix. Let batter sit for 10 minutes (don't skip this step). .
- Combine strawberries, vanilla and remaining 1 tablespoon sugar in small bowl; set aside.
- Heat 1 teaspoon oil in 12-inch nonstick skillet over medium heat until shimmering. Using paper towels, carefully wipe out oil, leaving thin film on bottom and sides of pan.
- Using 1/4-cup dry measuring cup, portion 4 pancakes into pan. Cook until edges are set, first side is golden brown and bubbles on surface are just beginning to break, 2 to 3 minutes. Sprinkle 1 tablespoon strawberry mixture over each pancake.
- Using wide spatula, flip pancakes and continue to cook until second side is golden brown, 1 to 2 minutes longer. Serve pancakes immediately or transfer to prepared rack in oven. Repeat with remaining batter and strawberry mixture, adding remaining 1 teaspoon oil, as needed.

STRAWBERRY VANILLA PANCAKES
These pancakes are made with fresh strawberries and pure vanilla extract. I happen to come across this recipe at 2 different recipe websites... allrecipes and Tasty Kitchen. While I enjoyed these pancakes, I do think you could cut back on the vanilla extract just a bit. The pancakes tasted great with maple syrup, but I also think they tasted even better with fresh strawberries and Reddi Wip Whipped Topping!

- In a medium size bowl stir together, the flour, brown sugar, baking powder and salt.
- Pour in the milk, oil, egg, and vanilla extract (yes that's 2 tablespoons of extract), and mix until well blended.
- Stir in the 1 cup of fresh chopped strawberries.
- Coat a large skillet or griddle, with butter or cooking spray. Then heat skillet or griddle over medium heat.
- Pour batter into desired size of pancakes, onto skillet or griddle. Flip with a spatula when bubbles appear in the center. Cook until golden brown on the other side.
- Top pancakes with either maple syrup, or jam, or fresh strawberries and Reddi Wip (or Cool Whip). I ate mine with fresh strawberries and Reddi Wip.
- Yields: 8 pancakes.

- Spray griddle with cooking spray and heat over medium heat or to 375.
- In a large bowl, mix flour, sugar, baking powder, baking soda, and salt; set aside.
- In another bowl, beat eggs, yogurt, and water with wire whisk; beat in butter.
- Pour egg mixture all at once into flour mixture; stir just until moistened.
- For each pancake, pour by 1/4 cupfuls onto hot griddle.
