2 eggs, at room temp,separated
1/4 cup caster sugar
300 g mascarpone
1/2 cup whipped cream
15 strawberries, hulled and quartered
1/3 cup strong coffee
2 tablespoons rum or 2 tablespoons brandy
14 ladyfingers
cocoa, to dust
1 strawberry (for garnish)

Steps:

  • Using an electric beater, beat together egg yolks and sugar until pale and thick.
  • Beat in mascarpone.
  • Whisk egg whites to soft peaks.
  • Fold cream then egg whites into mascarpone mixture.
  • Fold in strawberries.
  • Combine coffee and rum or brandy.
  • Dip half the sponge fingers briefly in the mixture to moisten the outside.
  • (Do not soak fingers in mixture, they will fall apart) Line the base of a serving bowl with the sponge fingers.
  • Spoon half the mascarpone mixture into the bowl.
  • Cover with remaining sponge fingers that have been dipped in the coffee mixture.
  • Spoon over remaining mascarpone mixture.
  • Cover and refrigerate for at least 4 hours.
  • Just before serving, sift a little cocoa over the tiramisu.
  • Garnish with strawberry halves.

Another Tiramisu recipe. I decided to post it because it is a little different. Very easy and quickly put together. The majority of the time spent on this is the chilling time, but this is needed to let the flavors meld. Very light and refreshing.

4 cups strawberries
4 tablespoons brown sugar
100 g ladyfingers
6 tablespoons Grand Marnier or 6 tablespoons triple sec
6 tablespoons orange juice (freshly squeezed)
2 cups mascarpone or 2 cups ricotta cheese
4 egg yolks
2 teaspoons vanilla extract
2 tablespoons sugar
40 g pistachio nuts, coursley chopped

Steps:

  • Rinse, hull and half strawberries into a bowl(leave a few whole for decoration).
  • Fold in brown sugar and make sure strawberries are well coated.
  • Set aside.
  • Place lady finger in bottom of each desert bowl or line the bottom of an casserole dish (8x8).
  • In a small bowl mix the Orange liquior and the orange juice and drizzle over the ladyfingers.
  • In a separate medium bowl add mascarpone with fresh egg yolks, vanilla extract and sugar.
  • Mix well.
  • Fold in the strawberries.
  • Spoon on top of the lady fingers.
  • In a food processor coarsely chop pistachio nuts.
  • Sprinkle on top of Masdcarpone cream and strawberries.
  • Top with a whole strawberry.
  • Refrigerate at least 1 hrs to let the flavours meld.
  • The longer the better the flavor.
  • Enjoy.

I'm not a great fan of regular tiramisu, but this is definitely worth trying for you die-hard T-fans. I much prefer it. It's from Bon Appetit. Best made one day ahead.

1 1/4 cups strawberry preserves
1/3 cup Cointreau liqueur (or other orange liqueur)
4 tablespoons Cointreau liqueur
1/3 cup orange juice
1 lb mascarpone cheese, room temperature
1 1/3 cups chilled whipping cream
1/3 cup sugar
1 teaspoon vanilla
1 1/2 lbs fresh strawberries, divided
52 ladyfingers (crisp-type)

Steps:

  • Whisk preserves, 1/3 cup Cointreau and orange juice in 2-cup measuring cup. Place mascarpone cheese and 2 tablespoons Cointreau in large bowl; fold just to blend.
  • Using electric mixer, beat cream, sugar, vanilla, and remaining 2 tablespoons Cointreau in another large bowl to soft peaks. Stir 1/4 of whipped cream mixture into mascarpone mixture to lighten. Fold in remaining whipped cream.
  • Hull and slice half of strawberries. Spread 1/2 cup preserve mixture over bottom of 13X9" glass baking dish. Arrange enough ladyfingers over preserve mixture to cover bottom of dish. Spoon 3/4 cup preserve mixture over ladyfingers, then spread 2 1/2 cups mascarpone mixture over. Arrange sliced strawberries over mascarpone mixture.
  • Repeat layering with remaining ladyfingers, preserve mixture, and mascarpone mixture. Cover with plastic wrap and chill at least 8 hours or overnight.
  • Slice remaining strawberries. Arrange over tiramisu and serve.

Strawberry Tiramisu (For Those in Greece) image

This is my summer variation on a wonderful Tiramisu recipe I was given by my Aunt Lola. This is not just for Greek residents but also for those from other European countries who can't find or afford genuine ingredients. This still makes a fabulous dessert without genuine Italian cream cheese or any eggs. Try it and see!

300 g cream cheese
200 ml cream (full-fat)
1 (400 g) vegetal cream (I used Morfat)
1 (400 g) condensed milk
1/2 cup icing sugar (to taste)
1 teaspoon vanilla essence
2 (200 g) packets ladyfinger biscuits
1 tablespoon espresso powder
1 tablespoon sugar
2 cups water
500 g strawberries
1/4 cup orange liqueur
1/2 cup frozen raspberries (thawed) (optional)
cocoa powder, for dusting the top

Steps:

  • Beat cream cheese, vegetal cream, dairy cream, condensed milk, icing sugar and vanilla essence in a mixer until smooth and thickened.
  • Boil 1 cup of water and pour into a shallow dish adding espresso coffee and sugar. Stir until it dissolves and then add the remaining cup of water.
  • Meanwhile hull and slice strawberries and and pour orange liqueur over them and toss lightly. (You can add defrosted raspberries here too at this point.).
  • Dip each ladyfinger biscuit into the coffee but only halfway as the coffee mix is still warm and they will get soggy quickly. Make sure you dip the smooth side.
  • Place in a long rectangular dish that fits the width of two biscuits.
  • Layer biscuits dipped in coffee, then add half the strawberries scattered over the biscuits including half of the liqueur.
  • Pour half of the cream over the top and smooth gently.
  • Add another layer of coffee dipped ladyfingers and the rest of the strawberries.
  • Finally add the remaining cream and smooth the top.
  • Dust with pure cocoa powder and allow the dessert to sit in the fridge for at least 8 hours, preferably overnight.

This recipe is a little bit different than the other recipes posted. I haven't tried this yet but I am posting it here for the strawberry recipe tag game. Also for safe keeping. If someone tries this recipe please let me know how you like it and any changes you make. Thanks in advance. When you dip the ladyfingers in the coffee do it quickly otherwise they will become soggy. The preparation time is a guesstamation. Cooking time is refrigeration time.

16 ounces mascarpone cheese, at room temperature
3/4 cup confectioners' sugar, sifted
7 tablespoons marsala, divided
1 pint strawberry
3/4 cup boiling water
2 tablespoons granulated sugar
2 1/2 teaspoons espresso, instant granules
1 (3 1/2 ounce) package ladyfingers
1 ounce chocolate

Steps:

  • Blend mascarpone, confectioner's sugar and 5 tbsp Marsala in food processor until smooth.
  • Hull strawberries (I use a melon baller to hull the berries and an egg slicer to slice them) and slice half of them. Cut remaining berries in half.
  • Combine boiling water, expresso, sugar and remaining Marsala in a bowl large enough to dip ladyfingers.
  • Quickly dip ladyfinger in above mixture and turn to coat (Do not soak. You will not have enough coffee mixture to do all of the ladyfingers).
  • Place ladyfinger in 8x8 glass baking dish and continue until bottom is covered (trim to fit if necessary).
  • Spread 2/3 of mascarpone over biscuits
  • Cover mascarpone with sliced berries.
  • Add another layer of dipped ladyfingers.
  • Spread remaining mascarpone.
  • Sprinkle with grated chocolate.
  • Arrange halved berries over the top.
  • Refrigerate for at least 4 hours before serving.

-Created for Ready Set Cook #12 (Summer 2008). This is a combination of a traditional tiramisu and one that is decidedly not traditional! Be sure to use the soft variety of ladyfingers. Cook time is chilling time.

16 ounces mascarpone cheese
1/2 cup powdered sugar
6 tablespoons sugar-free chocolate syrup
12 ounces frozen non-dairy topping, thawed (I use fat free)
2 (3 ounce) packages ladyfingers (ladyfinger sponge cakes)
6 tablespoons no-sugar-added strawberry preserves
1 lb fresh strawberries, cleaned and sliced
1 ounce dark chocolate, shaved

Steps:

  • In a large bowl, combine the mascarpone, sugar, and chocolate syrup, until mixture is light and fluffy. This can be done with a mixer or a wooden spoon (I use a spoon). Gently stir in the whipped topping, being careful not to deflate it too much.
  • Place one half of the ladyfinger halves on the bottom of a 9-inch springform pan, tearing some to cover the bottom of the pan as much as possible (you may have one or two leftover).
  • Brush half the strawberry preserves over the ladyfingers. You may need to microwave the preserve briefly to loosen it up & make it easier to brush.
  • Top the ladyfingers with half the strawberry slices then spread half of the mascarpone mixture over the berries. Repeat layers, brushing ladyfingers with preserves, topping with strawberries, and ending with the remaining mascarpone mixture.
  • Cover and refrigerate for 4 hours or overnight. Garnish with chocolate shavings before serving.

  • Stir together liqueur, vinegar, salt, 3 cups of the sliced strawberries, and 3 tablespoons of the sugar in a medium bowl. Let stand, stirring occasionally, until berries release some juices, about 15 minutes. Transfer half of the mixture to a blender; add strawberry jam, and process until smooth, about 1 minute. Stir pureed mixture back into remaining strawberry mixture in bowl; set aside.
  • Using an electric mixer, beat egg yolks and remaining 1/2 cup sugar in a large bowl on high speed until pale yellow and tripled in volume, about 4 minutes. Transfer mixture to a large bowl.
  • In another large bowl using the electric mixer, beat the cream on medium-high speed until soft peaks form, about 1 minute. Add mascarpone and orange zest; beat on medium speed until soft and billowy, about 20 seconds. Fold mascarpone mixture into egg yolk mixture.
  • Spread about 2/3 cup strawberry mixture evenly in bottom of an 8-inch square baking dish. Top with a single layer of ladyfingers (about 8 ladyfingers), gently turning ladyfingers in strawberry mixture until completely coated. Spread ladyfingers with 1 heaping cup mascarpone mixture. Repeat layers of strawberry mixture, ladyfingers, and mascarpone mixture 2 times, ending with mascarpone mixture. Cover and refrigerate until firm, at least 8 hours or up to 12 hours. Decorate top of tiramisu with remaining 1 cup sliced strawberries in alternating shingled rows. Serve immediately.
