STRAWBERRIES AND CREAM FRENCH TOAST
Strawberries and Cream French Toast is the perfect way to spruce up a boring breakfast routine. Start with egg-dipped, brioche bread that's cooked until golden, add tart-sweet strawberry sauce, and top with a soft pillow of almond-flavored cream.

- In a medium, chilled glass bowl, combine heavy cream, sugar, and almond extract. Whip by hand or with an electric mixer (definitely the quicker method!) until stiff peaks form. Place in the fridge until ready to use.
- Toss strawberries with the 1 tablespoon flour.
- In a medium sauce pan over medium heat, combine butter, strawberries, and sugar. Once butter is melted reduce heat to low and simmer for 6-8 minutes, stirring occasionally, until sauce darkens and thickens slightly. Remove from heat.
- In a wide, shallow dish, whisk together eggs, milk, almond extract, and flour for 2-3 minutes until flour is incorporated.
- Preheat a large, wide skillet (or griddle) over medium-low heat. Melt 1 tablespoon of butter in the skillet. While butter is melting, proceed with next step.
- Dip a slice of bread in the egg mixture being sure to let it soak for a few seconds, then turn it over and repeat. Lift the bread and allow excess to drip off before transferring to preheated skillet.
- Cook toast 3-4 minutes before turning over and cooking another 3-4 minutes until golden brown. You can cook multiple pieces of toast at the same time if you have room in the skillet, just be sure they aren't touching.
- Repeat with remaining pieces of bread. Top with strawberry sauce and a big dollop of whipped cream and serve immediately.

- Crack the eggs into a blender and add the milk and cinnamon. Blend until the yolks and whites are incorporated. (This step can be accomplished in a shallow dish with a whisk or fork as well.) Pour the mixture into a shallow dish or wide-bottom bowl.
- Heat a large nonstick skillet or griddle over medium heat. Add 2 tablespoons of the butter and swirl it around the pan; when melted, place 1 piece of bread in the egg mixture to soak in for about 10 seconds. Turn over and let soak on other side. This is a quick process don't let bread soak too long as it will get too soggy. Drain off excess egg and place the bread in the hot pan. Immediately soak 3 more bread slices, taking care not to over-crowd the pan.
- Cook until golden brown, turning once, about 2 minutes per side.
- Repeat with remaining butter and bread slices. Serve with Strawberry Syrup spooned over or on the side at the table.
- Place the strawberries, sugar, vanilla and 2 tablespoons water into a wide saucepan or skillet large enough to hold the strawberries in a single layer. Bring the mixture to a simmer over medium-low heat and cook gently until the strawberries are very soft and ruby red in color throughout., but still hold their shape, about 5 minutes .
- Serve warm over French toast or on the side at the table.

QUICK FRENCH TOAST CASSEROLE WITH STRAWBERRY LEMON SAUCE

- For the French toast casserole: Set a trivet in a 6- to 8-quart Instant Pot® and add 1 cup water to the pot. Spray a 6-inch springform pan or 7-inch round cake pan with nonstick cooking spray.
- Whisk together the sugar, vanilla, cinnamon, salt and eggs in a medium bowl. Add the half-and-half and whisk to combine well.
- Press the bread into a large bowl, then pour the custard mixture all over. Press the bread firmly to submerge. Stir with a spoon, then pour the bread and custard mixture into the prepared cake pan. Place the pan on the trivet in the Instant Pot® and pressure cook on high for 30 minutes. Release the valve to depressurize the pot, then remove the pan. Let stand 10 minutes before either removing the sides of the springform pan or inverting the casserole onto a platter. Serve warm or at room temperature with the strawberry lemon sauce.
- For the strawberry lemon sauce: Put the strawberries in a medium saucepan and toss them with the cornstarch. Add the maple syrup and lemon juice (reserve the zest). Bring to a brisk simmer over medium-high heat, then reduce the temperature to keep it at a simmer and cook, stirring occasionally, until the strawberries are somewhat broken down and the liquid is thick and syrupy, about 12 minutes. Add the lemon zest. Serve warm or at room temperature.

HOMEMADE STRAWBERRY SAUCE
This homemade strawberry sauce is perfect for angel food cake, pound cake, french toast or even cheesecake. With only 3 ingredients it's hard to go wrong with this strawberry sauce recipe.

- If using fresh strawberries, cut the heads off of each strawberry and quarter them. Set 1/2 cup aside if you like a chunkier sauce.
- In a medium sauce pan, over medium heat, add strawberries, vanilla & sugar. Mix well.
- As the strawberries warm up, they will begin to sweat. Continue stirring every minute or two.
- After 7 - 10 minutes, your strawberries will be mushy and there will be a lot of liquid in the pan.
- Mash this mixture up with a potato masher or for a smoother sauce, pour hot strawberry mixture into a blender and pulse 2 - 3 times.
- Strawberry mixture will be chunky (this is good!).
- Dice up remaining strawberries and add to hot sauce.
- Pour mixture into a bowl and refrigerate until cool - about 30 minutes.
- Once cool, enjoy on EVERYTHING!

- Cube bread and layer half in a 12-x-8.5 inch pan. Cut cream cheese into small pieces and scatter across bread. Cover with remaining bread cubes.

- Cook and stir almonds in a skillet over medium high heat until fragrant and toasted, 3 to 5 minutes.
- Add enough water to reserved strawberry liquid to equal 1 cup liquid.
- Stir 1/2 cup sugar and cornstarch together in a saucepan over medium heat. Gradually stir strawberry liquid into sugar mixture; cook, stirring constantly, until mixture is clear and thick, 3 to 5 minutes. Stir strawberries and almonds into sugar mixture.
- Beat cream cheese, 2 tablespoons sugar, and vanilla extract together in a bowl. Whisk milk, eggs, 1 1/2 teaspoons sugar, cinnamon, and nutmeg together in a bowl.
