Strawberry Keto Ice Cream Made in a Mason Jar! This is a no churn - no ice cream machine necessary - low carb ice cream recipe that's so delicious you'd think it was store bought. There's even REAL pieces of strawberry in every bite!

2 Medium Strawberries (40g)
1 Cup (235mL) Heavy Cream
Heaping Tsp (5g) Strawberry Extract
1/8th Tsp Red Food Coloring
3 Tbsps (24g) Confectioners Swerve

Steps:

  • First, dice the strawberries, add them to a small dish and set them aside
  • Next, add the mason jar to your food scale and measure out the other ingredients
  • Once those have been measured out, add the strawberries from earlier and shake the jar for several minutes
  • When the heavy cream thickens up - and almost doubles in size - freeze the jar for 4-5 hours
  • *NOTE: The ice cream is BEST the day that you make it. If you're planning on freezing it for more than a day I recommend using allulose instead of Confectioners Swerve. It will just help keep the ice cream from freezing solid.

1 can full-fat coconut milk (13.66 oz.)
1 can coconut cream (13.66 oz.)
2 ¼ cups fresh or frozen strawberries
1 ½ teaspoons pure vanilla extract
½ teaspoon pure almond extract
3 tablespoons keto maple syrup
20-30 drops of low carb monkfruit sweetener*

Steps:

  • The day before, freeze the freezer bowl according to your ice cream maker's instructions.
  • Day of, blend together all ingredients in a food processor: full-fat coconut milk, coconut cream, strawberries, vanilla, almond extract, keto maple syrup and monkfruit drops. Scrape down the sides of the processor as needed. Blend until smooth and well mixed.
  • Follow directions for making ice cream according to ice cream maker's directions.
  • Enjoy immediately if you like super, super soft ice cream. If you like firmer ice cream, pour into an ice cream container and freeze for 2-4 hours, until firm.
  • Strawberry keto ice cream is best the first day. On Day 2 and forward, set ice cream out at room temperature to thaw for 20-90 minutes, until creamy and scoopable. Enjoy! Storing instructions below.

  • Add 2 1/2 cups of the heavy cream, butter and Swerve to a saucepan and simmer on low for 25 minutes, stirring often. This is the same process I use to make my Sugar-Free Sweetened Condensed Milk.
  • Turn the heat off and stir in the mascarpone, remaining heavy cream and vanilla extract. Allow to cool slightly, then whisk in the pureed strawberries and (optional) vodka. Cover and chill in the fridge for 1-2 hours or until cold.
  • Pour into the bowl of your ice cream maker and churn according to the manufacturer’s instructions.
