STRAWBERRY SUNDAE SAUCE

Steps:
- Add the strawberries, sugar and salt to a small saucepan. Mix the cornstarch with 1/2 cup water in a small bowl and add it to the saucepan. Slowly heat the mixture over medium heat, stirring constantly, until it comes to a simmer, about 5 minutes. Lower the heat so it's at a very gentle simmer and cook, stirring frequently, until the sauce thickens, about 20 minutes. Remove from the heat, stir in the lemon zest and juice and let cool.
- Serve over ice cream with salted peanuts on top.
SAUTEED-STRAWBERRY ICE CREAM SUNDAES

- Mix berries, sugar, and cinnamon in medium bowl; toss to coat. Heat oil in medium nonstick skillet over high heat. Add berry mixture; cook until berries begin to soften and juices are released, stirring often, about 2 minutes. Stir in orange peel. Return to same bowl and place in freezer 10 minutes to cool slightly. DO AHEAD: Can be made 4 hours ahead. Cover, transfer to refrigerator, and chill. Return sauce to room temperature or rewarm slightly in microwave-safe bowl in microwave, if desired, before serving.
- Divide vanilla ice cream among 4 large wineglasses or dessert coupes. Top with scoops of strawberry sorbet. Spoon room-temperature or warm strawberry sauce over. Sprinkle with chocolate chips and serve.
HALLE'S MINI SUNDAES

- For the chocolate cups: Add the milk chocolate chips to a heatproof bowl. Add the white chocolate chips to a second heatproof bowl. Divide the coconut oil between the two bowls and microwave separately in 30-second increments, stirring after each, until completely smooth, about 1 minute total. Set aside and let cool for 5 minutes.
- Using a pastry brush, paint the entire inside of three cupcake liners with the melted white chocolate; don't be shy-really slather it on. Transfer to a plate. Do the same with the melted milk chocolate and three more cupcake liners. Place on the plate, next to the white chocolate cups, and transfer to the refrigerator to chill for 10 minutes. Remove the cups and repeat for a second layer. Return the plate to the refrigerator until the chocolate is completely set, at least 30 minutes.
- Remove the cups from the refrigerator and carefully peel the cupcake liners away from the chocolate. Use immediately or return to the fridge until ready to use.
- For the strawberry shortcake sundaes: Scoop 3 tablespoon-size scoops strawberry ice cream into each white chocolate cup. Top each with the shortcake, strawberry sauce, whipped cream and red sprinkles.
- For the toffee coffee sundaes: Scoop 3 tablespoon-size scoops coffee ice cream into each milk chocolate cup. Top each with the toffee bits, pecans, caramel sauce, whipped cream and chocolate sprinkles.
HOT STRAWBERRY SUNDAES
This recipe is from Southern Living 1981. I've edited the instructions slightly for stovetop. The preserves may be heated in the microwave on medium for 2-3 minutes.

STRAWBERRY BROWNIE ICE CREAM SUNDAE
This is my take on a recipe by Chef Andrew Sutton....his is so much more complex. I broke this down into many steps for ease of understanding but it is really a simple preparation.

Steps:
- Prepare brownie mix following package directions or make your own. Do not add any extra ingredients, such as nuts or chips.
- Bake and set aside to cool.
- In small saucepan, place 1 cup strawberries, sugar, vanilla, juice, and salt.
- Bring to a boil for 2 minutes, then pour over 21/2 cups of sliced strawberries and allow to macerate for about one hour.
- Cut brownies into bite-size cubes.
- In bottom of clear glass bowl, place 2 cups of strawberries. Follow with the cubed brownies.
- Add 1/2 half of the soften ice cream over brownies and spread to seal.
- Place bowl in refrigerator or freezer until ice cream is firm (freezing is not needed).
- Drizzle caramel sauce over top.
- Add rest of ice cream, sealing top.
- Drizzle chocolate sauce over top. Freeze.
- When ready to serve, top with rest of berries and some whipped topping as desired.
- * Make sure to read box for directions as to how much equals 1/2 cup.

- Wash and mash strawberries, measuring out enough mashed berries to make 4 cups. In a Dutch oven, combine strawberries and sugar. Bring to a full rolling boil over high heat, stirring constantly. Stir in pectin. Boil 1 minute longer, stirring constantly. Remove from the heat. Stir in syrup and liqueur if desired. - Reserve 1 cup of diced strawberries and add the rest to a large saucepan. Add the sugar and water to the saucepan. Turn the heat to medium-high and stir well to coat the berries in the sugar. Bring to a boil. Add the sprigs of thyme.
- Boil, stirring often, for about 5 minutes, until the sauce thickens. When you scrape the bottom of the pan as you stir, it will hold for a second or two before filling back in the space.
- Let sit for 5 minutes. Stir in the vanilla and salt. Pour it into a bowl. Let sit at room temperature if you prefer to serve the sauce warm over your sundae. Place in the refrigerator for 30 to 60 minutes if you prefer it chilled.
- While the sauce cools, pour the whipping cream and honey into a medium bowl. Use a handmixer to whip the cream on medium speed for about 5 minutes, until firm peaks form.
