1 cup sliced fresh strawberries
1 cup cubed cantaloupe
1/2 cup cubed part-skim mozzarella cheese
2 tablespoons raspberry vinaigrette
1/2 cup fresh raspberries
1 tablespoon sunflower kernels
Thinly sliced fresh mint leaves, optional

Steps:

  • In a large bowl, combine strawberries, cantaloupe and cheese. Drizzle with vinaigrette and toss to coat. Just before serving, gently stir in raspberries; top with sunflower kernels. If desired, sprinkle with mint.

1 cup boiling water
1 cup crushed Ice
20 oz Crushed Pineapple
3 oz Instant Vanilla Pudding mix ((small box))
16 oz Strawberries ((fresh, trimmed and sliced))
4 cup Mini Marshmallows
8 oz thawed Cool Whip whipped topping

Steps:

  • Add contents of the gelatin package to a medium bowl.
  • Stir in boiling water with the jello until dissolved.
  • Pour crushed ice into the bowl and stir until the ice has melted.
  • Place into refrigerator for 10 minutes or until it begins to set.
  • Pour crushed pineapple and juices along with vanilla pudding into a large bowl. Stir to combine.
  • Add the strawberries, mini marshmallows and cool whip. Mix well.
  • Use a spoon to break up the strawberry jello and add it to the Cool Whip mixture. Mix well.
  • Cover and refrigerate for at least one hour before serving.

1 box Strawberry Jell-O (small box )
1 cup boiling Water
1 cup crushed Ice
1 box Instant Vanilla Pudding (small box )
20 oz Crushed Pineapple
4 cup Mini Marshmallows
8 oz thawed Cool Whip
16 oz Strawberries

Steps:

  • Add contents of the Jell-O package to a medium bowl.
  • Add boiling water to the Jell-O and stir until dissolved. ve dissolved.
  • Pour crushed ice into the bowl and stir until the ice has melted.
  • Place into refrigerator for 10 minutes or until it begins to set.
  • Add crushed pineapple and juices to a large bowl.
  • Add vanilla pudding mix and stir to combine.
  • Wash and trim strawberries, and cut into slices.
  • Add to the other ingredients and stir to combine.
  • Add mini marshmallows and Cool Whip.
  • Stir to combine.
  • Use a spoon to break up Jell-O mixture and add it to the Cool Whip mixture.
  • Stir it in to combine.
  • Cover and refrigerate for at least one hour before serving.

A refreshingly different salad, we can buy Stilton with black pepper here, but you can use any Stilton or even leave it out if you prefer. I make half the amount of dressing as I find that this is enough. Recipe adapted from Rococo Real Chocolate Book by Chatal Coady.

100 g rocket (or any salad leaves)
1/2 cucumber
2 cups strawberries, halved
1/4 cup Stilton cheese, with black pepper, crumbled
100 ml balsamic vinegar
100 g caster sugar
25 g dark chocolate, 2 squares, 75% pure

Steps:

  • Divide the rocket between the plates. Slice the cucumber lengthways, seed and slice into halfmoons. Arrange the Stilton, cucumber and strawberries on the rocket. Drizzle dressing on top.
  • To make the dressing: Place balsamic vinegar in a saucepan, add caster sugar and dissolve over a gentle heat. Remove from heat and stir in 2 squares of chocolate. Leave to cool at room temperature. Do not refrigerate or dressing will solidify.

I cut this out of something. Not sure what, but it must have to do with the Reynolds corporation because this recipe, instead of just saying "8x8 pan" specifies "Reynolds Pot Lux cookware 8x8 pan." Whatever. I just know this sounds REALLY tasty, especially for a summer afternoon when the fruits are fresh and in season. Obviously, with a recipe of this sort, other fruits that strike your fancy can be added or substituted.

1 pint strawberry, sliced
1 pint blueberries
4 peaches or 4 nectarines, peeled and sliced
1/2 honeydew melon, chunked
1/3 cup light cream cheese, softened
2 tablespoons sugar
1 (8 ounce) carton low-fat strawberry yogurt
1 teaspoon lemon peel, grated
1 teaspoon fresh lemon juice

Steps:

  • To make the fruit salad, combine fruit in pan (personally, I'd use glass or plastic and not metal; I'd worry about the taste of the fruit being compromised.).
  • Cover and refrigerate.
  • Prepare Strawberry Dressing by stirring cream cheese and sugar in a medium bowl until smooth; then adding yogurt, lemon peel, and juice, and stirring until smooth again.
  • Serve fruit with dressing on the side or drizzle over fruit, stirring to coat.
  • Makes 9-10 servings of fruit and 1 1/2 cups of dressing.

1- 3oz. package dry strawberry jello
1 - 3.4 oz. package instant french vanilla jello pudding
1 1/2 cups undrained crushed pineapple
1 cup boiling water
1/2 cup crushed ice
2 cups mini marshmallows
1 cup chopped fresh strawberries
1 - 8oz. container cool whip
1/2 cup crushed cookies either vanilla wafers, coconut cocada's, or sandie's

Steps:

  • In a large bowl mix together instant french vanilla pudding with 1 1/2 cups of undrained pineapple. Cover and set aside.
  • In a large glass measuring cup, or small bowl, mix together 3 oz.package of strawberry jello with 1 cup of boiling water. Mix until jello is dissolved. Add in 1/2 cup crushed ice cubes. Mix until thickened. Place in refrigerator and chill, mixing occasionally until mixture become slightly lumpy and thick. Do not allow to set.
  • Add thickened jello mixture to pudding and pineapple mixture. Fold together until combined.
  • Add container of cool whip. Fold ingredients together.
  • Add 2 cups of mini marshmallows. Gently stir together.
  • Add 1 cup chopped Strawberries. Mix until completely combined.
  • Spoon into serving bowl. Cover and chill for 6 hours or over night.
  • Before serving add crushed cookie crumbs around edge of salad and garnish with sliced fresh strawberries.
