2 cups Fiber One™ Honey Clusters® cereal
1 cup sliced fresh strawberries
1 medium banana, thinly sliced
4 fresh strawberries

Steps:

  • In each of 4 (10-oz) plastic cups or parfait glasses, layer 2 tablespoons yogurt, 1/4 cup cereal, 1/4 cup strawberry slices and 1/4 of the banana slices.
  • Top each with 2 tablespoons yogurt, 1/4 cup cereal and remaining yogurt. Garnish top of each parfait with whole strawberry.

Time to take out those parfaits glasses! This is one of those elegant, but effortless recipes perfect for simple summer entertaining. Country Woman's taste panel loved the texture contrast between the smooth, creamy berry mixture and the buttery, crunchy topping. Carol Anderson, Salt Lake City, says this is "so delicious and refreshing on a warm summer's evening."

1 cup all-purpose flour
1/4 cup packed brown sugar
1/2 cup chopped pecans
1/2 cup cold butter
1 can (14 ounces) sweetened condensed milk
3 tablespoons lemon juice
3 tablespoons orange juice
2 cups chopped fresh strawberries
1 cup heavy whipping cream, whipped

Steps:

  • In a large bowl, combine the flour, brown sugar and pecans; cut in butter until mixture resembles coarse crumbs. Spread into an ungreased 15x10x1-in. baking pan. Bake at 350° for 15-18 minutes or until golden brown. , In another large bowl, combine the milk, lemon juice and orange juice. Add strawberries. Fold in whipped cream. , Spoon 1 tablespoon of crumb mixture into each parfait glass; top with a scant 3 tablespoonfuls of berry mixture. Repeat layers. Sprinkle with remaining crumb mixture. Freeze until firm. Remove from the freezer 20-30 minutes before serving.

Note: you can substitute crushed Italian amaretti cookies for the oat crumble, if available.

1 cup rolled oats
1/2 cup brown sugar
6 tablespoons butter, softened
1/2 cup mascarpone cheese, room temperature
2 tablespoons granulated sugar
1 1/2 teaspoons campari
1/4 teaspoon vanilla extract
1/2 cup heavy whipping cream
3/4 lb strawberry, hulled and quartered
2 tablespoons granulated sugar
1 tablespoon campari
fresh mint sprig (optional, to garnish)

Steps:

  • Combine oats, brown sugar, and butter; mix well. Spread in 15-10-1-inch baking pan; bake at 350 degrees F for 10 minutes, stirring occasionally. Crumble; cool.
  • In a mixing bowl, beat mascarpone cheese with sugar, Campari, and vanilla for about 2 minutes, or until mixture is light and fluffy and the sugar is fully dissolved.
  • In a separate bowl, whip heavy cream on high for 2 minutes, or until stiff peaks form. Gently fold 1/2 of the whipped cream into mascarpone mixture to combine; gradually fold in remaining whipped cream.
  • Toss strawberries with sugar and Campari in a small bowl. Let sit for about 5 minutes, stirring occasionally, until sugar is dissolved.
  • Layer Oat Crumble (or crushed Italian amaretti cookies), Mascarpone Cream, and Strawberries in parfaits or dessert glasses and garnish with fresh mint, or refrigerate separately until ready to serve.

Number Of Ingredients 6

1 (6 ounce) package strawberry Jell-O gelatin dessert
1 1/4 cups hot water
1 pint vanilla ice cream (I use Haagen Dazs)
1 1/2 cups bananas, peeled and sliced into rounds
1 prepared 9-inch graham cracker crust (or use your favourite recipe)
2 kiwi fruits, peeled and sliced into rounds gently dry the juices on paper towels,changing as often as necessary

Steps:

  • In a 2 quart sauce pan with hot water (not boiling), stir well to dissolve jello- set aside for 5 minutes to cool.
  • Add ice cream by spoonfulls to jello mixture, stirring till melted.
  • Chill pan on an ice bath till thickened, but not set, about 10- 15 minutes.
  • Gently fold in banana rounds.
  • Pour mixture into prepared crust, smooth top evenly with a spatula.
  • Refrigerate for 4 hours.
  • Top with kiwi slices.
  • Slice and serve.

I used the Nestle YoCrunch yogurt because it has two of the main ingredients but you could use whatever kind you'd like. Just try it and you'll be happy!

1 cup strawberry yogurt
1/4 cup , nestle buncha crunch pieces (if you have the YoCrunch, use the cap-full)
1 cup milk (whatever kind you prefer)
1 banana, sliced

Steps:

  • In a blender, blend together the yogurt, banana, and milk. I suggest that you put half of the banana first, then half of the yogurt, the other half of the banana, the rest of the yogurt, and then the milk.
  • After blending, drop in most of the Buncha Crunch's (leaving a bit for the top after) and blend again.
  • Garnish the shake with then remaining Buncha Crunch's.
  • Serve, Sip, and Smile [TM].
