1 cup of all purpose flour
2 tbsp granulated sugar
2 tbsp of baking powder
1/8 tsp of Kosher salt
1 cup of sliced strawberries
3 tbsp buttermilk
1 tbsp of good quality vegetable oil
1 tsp pure vanilla extract
1 extra large egg
Toppings:
Pure maple syrup
Confectioner's sugar
Fruit

Steps:

  • Combine the flour, sugar, baking powder and salt in a large mixing bowl. Whisk to combine and make a crater in the center of the mix.
  • Purée the strawberries, buttermilk. oil, vanilla and egg in a blender until smooth. Add to the dry ingredients and mix well. The batter will be thick.
  • Coat the wells of the waffle maker with cooking spray and spoon in 1/4 cup of batter to each well. Cook for 5 minutes until the waffles are lightly browned.
  • Serve with pure maple syrup, fresh fruit and a sprinkle of confectioner's sugar. Makes 4-5 waffles depending on how much batter you add to the waffle maker. If you add some extra diced strawberries, you will probably get 6 waffles.

8 miniature marshmallows to cover 1 waffle 1/4 rd bottom - each
8 med sliced fresh strawberries or 1 small frozen container defrosted strawberries-drained
1 ripe large banana cut in thin slices
sprinkled powered sugar
optional: several chocolate chips sprinkled around marshmallows
optional: crushed walnuts

Steps:

  • 1. Place 1 quartered separated waffle on cookie sheet, add marshmallows to each quarter and optional chocolate chips .. put in broiler for approx. 1-2 minutes be careful not to burn ... remove from broiler add optional crushed walnuts, strawberries and banana slices .. top with other quartered waffle, press down lightly. Sprinkle with powdered sugar. Serve warm. Enjoy !
  • 2. Note: you can substitute with other fruits of your choice such as canned peaches (juice drained), blueberries, raspberries. *Recipe can easily be doubled For simpler and quicker way use 8 toaster waffles
