2 c. strawberries, quartered

Freshly ground black pepper
1/4 c. almond slivers, toasted, for garnish

Steps:

  • In a large pot of salted boiling water, cook farfalle according to package directions until al dente. Drain, then transfer to a large serving bowl.
  • Make balsamic glaze: In a small saucepan, bring balsamic vinegar to a boil. Reduce heat and simmer until thickened, about 10 minutes.
  • To bowl, add feta, strawberries and spinach. Season generously with salt and pepper and toss to combine.
  • Drizzle with balsamic glaze and garnish with almonds.

1 tablespoon honey
1 small shallot, peeled and chopped
2 small cloves garlic, peeled
½ teaspoon salt
¼ teaspoon ground black pepper
½ cup olive oil
1 head red lettuce leaves, rinsed, dried, and torn
½ small red onion, peeled, cut into 1/2-inch-wide slivers
¼ cup sliced almonds, lightly toasted
1 pint fresh strawberries, rinsed and sliced
½ cup crumbled feta cheese

Steps:

  • To make the dressing, place the balsamic vinegar, Dijon mustard, honey, shallot, garlic, salt, and pepper in the bowl of a mini food processor. Pulse until blended. Slowly pour in the olive oil, and pulse again until thoroughly blended. Set aside or refrigerate until needed.
  • Divide lettuce between 6 serving plates, and top with red onion, almonds, strawberries, and feta cheese. Serve dressing on the side.

6 tablespoons vegetable oil

3/4 cup broccoli, chopped into small flowerettes
1 red pepper, chopped fine
1 green onion, sliced fine

Steps:

  • Whisk first 6 ingredients together to prepare the dressing mix, set aside.
  • Cook the pasta of your choice.
  • While pasta is cooking, chop broccoli and blanch for 2 minutes.
  • Combine cooked pasta, blanched broccoli, chopped red pepper and sliced green onion.
  • Pour dressing mix on top of pasta mixture; toss to coat.
  • Chill until ready to serve.
  • **Note: Preparation can be accomplished while pasta is cooking, making this a very quick dish**.

1/2 cup lemon yogurt
1/4 cup canola oil
2 tablespoons lemon juice
1/2 teaspoon sea salt
1/8 teaspoon cayenne pepper
1 green onion, thinly sliced
2 tablespoons crystallized ginger, finely chopped
1 tablespoon pickled jalapeno slices, finely chopped
1 pound fresh strawberries, quartered
1/4 cup slivered almonds, toasted

  • Fill large pot of water 2/3 of the way full and add salt. Bring the water to a boil and then carefully add in the pasta.   • In a small mixing bowl add the 1/3 cup olive oil, balsamic vinegar, maple, salt and pepper. Whisk to combine. Add the strawberries and toss in the oil mixture. Place the bowl in the fridge until ready to use.
  • When the pasta is done, drain the boiling water and rinse under cold water to cool it down and keep it from cooking. Drain well.
