STRAWBERRY RICOTTA BRUSCHETTA

Number Of Ingredients 7

1 cup finely diced strawberries
1 tablespoon chopped fresh mint
2 teaspoons extra-virgin olive oil
Flakey sea salt
12 toasted baguette slices
1 cup ricotta cheese
Balsamic vinegar (use an aged balsamic that is thick and syrupy), for garnish

Steps:

  • In a small bowl, toss the strawberries with the mint, olive oil and a pinch of flakey sea salt. Spread each slice of baguette with ricotta cheese. Top with a spoonful of strawberries, drizzle with balsamic and sprinkle with more flakey sea salt.

Roasted Pepper and Goat Cheese Bruschetta image

1 baguette, sliced on the bias about 1/2-inch thick
Extra-virgin olive oil
Kosher salt and freshly ground black pepper
1 1/2 tablespoons red wine vinegar
1 tablespoon honey
2 teaspoons chopped fresh thyme
Pinch red pepper flakes
One 16-ounce jar roasted red peppers (or a mix of red and yellow), drained and thinly sliced
1 shallot, minced
2 tablespoons chopped fresh Italian parsley
One 6-ounce log fresh goat cheese, at room temperature
Microgreens, for garnish

Steps:

  • Preheat the oven to 400 degrees F. Brush the baguette slices lightly with olive oil on both sides and season with salt and pepper. Place the slices on a baking sheet and toast in the oven until crisp and golden, about 8 minutes.
  • Meanwhile, whisk together 3 tablespoons olive oil, the vinegar and honey in a bowl. Stir in the thyme and red pepper flakes. Add the roasted peppers and shallots to the dressing, and season with salt and pepper. Gently toss to combine, then fold in the parsley. Set aside or place in the refrigerator to marinate.
  • Spread each toast with a small spoonful of goat cheese. Top with a spoonful of the pepper mixture, followed by a pinch of microgreens. Arrange on a platter and serve.

1/2 pound strawberries chopped
1 teaspoon honey
1/2 teaspoon balsamic vinegar
1 loaf french bread baguette, sliced into rounds about 3/4 inch thick
olive oil
4 ounce log of goat cheese
1 teaspoon chopped fresh basil
1 teaspoon chopped fresh thyme
1 teaspoon chopped fresh chives
1/8 teaspoon fresh cracked pepper
1 cup balsamic vinegar
1 tablespoon honey

Steps:

  • Add chopped strawberries, honey, and balsamic vinegar to a bowl and stir to combine. Set aside.
  • Heat oven to 350 degrees. Place sliced bread on a sheet pan and drizzle with olive oil. Place bread in the oven and toast until golden brown. Remove pan from oven and set aside.
  • In a small bowl, combine the goat cheese and chopped basil, thyme, chives, and pepper.
  • Spread each toasted bread slice with goat cheese mixture. Top with sweetened strawberries. Drizzle on balsamic reduction. Sprinkle with additional torn basil leaves and serve.

1/2 cup (1/2 of 8-oz. tub) PHILADELPHIA Spicy Jalapeño Cream Cheese Spread
2 oz. goat cheese, softened

Steps:

  • Heat oven to 350°F.
  • Place bread slices in single layer on baking sheet.
  • Bake 5 to 7 min. or until golden brown; cool.
  • Combine strawberries, basil and dressing.
  • Mix remaining ingredients until blended; spread onto toast slices. Top with strawberry mixture.
