STIR-FRY LEMON-CHILI SHRIMP

Just the right amount of heat so you can taste the sweet lemony sauce! It's quick and easy and sooooo good! Prep time includes marinating shrimp.

1 lb raw shrimp, shelled & deveined
1 tablespoon soy sauce or 1 tablespoon tamari soy sauce
1 tablespoon honey
3 tablespoons fresh lemon juice
1/4 tablespoon hot chili oil (the kind with ginger & garlic oils)
1/8 teaspoon garlic powder
2 tablespoons fresh cilantro, minced

Steps:

  • In a plastic zipper bag, combine soy sauce, honey, lemon juice, hot chili oil, garlic powder and cilantro.
  • Shake to mix thoroughly, then add shrimp and toss in bag to coat thoroughly.
  • Refrigerate at least one hour, up to two.
  • Transfer shrimp and marinade to a medium-hot skillet.
  • Stir-fry until shrimp are pink and cooked through, about 3 to 4 minutes.
  • Remove shrimp, and allow marinade to cook a little longer, until a little reduced sauce forms (there won't be a ton, just enough).
  • Drizzle shrimp with remaining sauce and serve immediately.

2 garlic cloves
1 tablespoon soy sauce
1 teaspoon soy sauce
1 teaspoon oriental sesame oil
1 tablespoon oriental sesame oil
1/4 teaspoon dried red pepper flakes
12 ounces medium shrimp, peeled and deveined
2 tablespoons fresh lemon juice
1 teaspoon sugar
1 teaspoon cornstarch
1 tablespoon peanut oil
4 scallions, thinly sliced on diagonal
2 small slice lemon zest
1 tablespoon chopped fresh ginger
8 ounces thin green beans, cut into 1-inch lengths
4 ounces fresh shiitake mushrooms, stems removed, sliced
1/2 cup slivered red bell pepper
6 ounces capellini or 6 ounces vermicelli, broken in half

Steps:

  • Crush 1 clove garlic through press and combine with 1 t. soy sauce, 1/2 t. sesame oil, pepper flakes, and shrimp in bowl. Let stand 15 minutes.
  • Put large pot of water on to boil for noodles.
  • Mix remaining 1 T. soy sauce, 1/2 t. sesame oil, the lemon juice, sugar, and cornstarch in small bowl. Heat wok or large heavy skillet over high heat. Add peanut oil. Lightly crush remaining garlic and peel.
  • Salt water and add noodles to boiling water; cook according to package directions, about 6 minutes.
  • Add peeled garlic to oil with 3/4 of the scallions, zest, and ginger. Stir-fry until fragrant, about 30 seconds. Remove garlic. Add green beans and stir-fry until barely tender, about 3 minutes. Add mushrooms and bell pepper; stir-fry until tender, about 3 minutes.
  • Drain noodles well; transfer to serving bowl and mix with 1 T. Oriental sesame oil and 1.4 of the scallions; toss well.
  • Add shrimp with marinade to wok; stir-fry just until shrimp turn pink. Add lemon juice mixture and cook, stirring constantly, 20 seconds. Serve over noodles.

This came from the back of a bag of "Bird's Eye Farm Fresh Mixtures, Asparagus Stir-Fry With Pasta" to which I added boneless chicken breasts. Nevertheless, when I looked on their site, and searched and searched, I could not find the recipe. I decided to post it as much for my future reference as well as your enjoyment. This was nice and light and a great change from the traditional teriyaki taste we have become accustomed to.

1 teaspoon chicken bouillon granule
2/3 cup water
1 tablespoon cornstarch
1 tablespoon sugar
1 tablespoon soy sauce
2 -3 tablespoons lemon juice
capers (optional)
red pepper flakes (optional)

Steps:

  • Dissolve cornstarch and subsequently bouillon in water and blend with remaining ingredients.
  • Add to your recipe instead of prepared stir-fry sauce.
  • Cook, stirring until thick and clear.

I came up with this the other night and really enjoyed it. My hubby is out of town on business at the moment and he is not the biggest fan of scallops. Whereas I love them so I try to make things he doesn't like as much as me, so I can enjoy it guilt free, knowing he is not loving it as much as me. This is a great quick recipe to make and it tastes awesome or at least I think so. Feel free to change and add whatever seafood you love in this recipe. I made this just for me, I had 5 prawns and 4 scallops so I took the weight of each and multiplied it by 4 and rounded either up or down so it should be quite close on weight. I think the rest should work out fine for 4 people.

500 g uncooked medium king prawns (I bought mine already peeled)
600 g scallops, no roe
1/2 teaspoon black pepper
1/2 teaspoon five-spice powder
2 red Thai chile, chopped finely (add as many or as little seeds as you want I use nearly all of them as I love spice.)
2 garlic cloves, crushed
1 1/2 teaspoons ginger
2 tablespoons peanut oil
1 small red pepper
1 small yellow pepper
120 g bean sprouts
12 baby asparagus spears
150 g sugar snap peas
2 -3 tablespoons light soy sauce
1 -2 teaspoon sugar (depending on personal taste)
2 tablespoons fresh chives, chopped finely

Steps:

  • Combine seafood, pepper, five-spice, chilli, garlic and ginger in a bowl.
  • Heat half the oil in a wok, stir-fry seafood in batches, until cooked, remove.
  • Heat remaining oil in wok, stir-fry peppers until tender, add sprouts, asparagus and peas to wok, stir-fry 1 minute.
  • Return seafood to wok with soy sauce and sugar, stir-fry until hot and veg are just tender (should have a nice crunch to them)Stir in 1 tablespoon of chopped chives, save the rest to sprinkle over dishes.
  • Please Note: Cooking times will be longer if not using a wok, wok's get very hot so cook much quicker than regular frying pans.
  • To Serve: Arrange spoonfuls of veg on plate top with seafood.

3 tablespoons honey
1/4 cup chili sauce
2/3 cup parsley, chopped
2 teaspoons crushed red pepper flakes
2/3 cup dry white wine
1 teaspoon lemon zest
1/4 cup lemon juice
2 shallots, finely chopped or 2 green onions
1 teaspoon seasoning salt
2 1/4 lbs large bay shrimp
25 -30 wood skewers

Steps:

  • Soak skewers in water for 30 minutes.
  • Combine first 10 ingredients in large bowl.
  • Add shrimp , stir until coated. Marinate in refrigerator for at least 3 hours, turning often.
  • Remove shrimp. Pour marinade into small saucepan. Bring to a boil. Boil for 5 minutes.
  • Thread 1 shrimp starting at head end, lengthwise onto each skewer.
  • Place on ungreased baking sheet. Broil on top rack for about 2 minutes per side, basting with marinade several times, until shrimp are pink.
  • Variation:.
  • Shrimp can also be grilled on an electric grill or gas barbecue. Preheat electric grill for 5 minutes or barbecue to medium. Cook shrimp on greased grill for about 2 minutes per side, brushing several times with boiled marinade, until pink. Do not overcook.

1 tablespoon cornstarch
1/2 teaspoon sugar
1/2 teaspoon chicken bouillon granules
1/4 teaspoon grated lemon zest
Dash pepper
1/2 cup water
4-1/2 teaspoons lemon juice
1/2 pound uncooked medium shrimp, peeled and deveined
1 tablespoon canola oil
3/4 cup sliced celery
1/2 medium green pepper, cut into strips
1/2 medium sweet red pepper, cut into strips
1 cup sliced fresh mushrooms
3/4 cup fresh sugar snap peas
1 green onion, sliced
1 cup hot cooked long grain rice

Steps:

  • In a small bowl, combine the first five ingredients. Stir in water and lemon juice until blended; set aside., In a large skillet or wok, stir-fry shrimp in oil for 1-2 minutes or until no longer pink. Remove with a slotted spoon and keep warm. In the same pan, stir-fry celery and peppers for 2 minutes. Add the mushrooms, peas and onion; stir-fry 3-4 minutes longer or until vegetables are crisp-tender., Stir cornstarch mixture and add to the pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Add shrimp; heat through. Serve with rice.

1 lb boneless skinless chicken breast, cut into strips
3/4 cup reduced-sodium chicken broth
1 1/2 tablespoons reduced sodium soy sauce

1 garlic clove, minced
1 tablespoon minced fresh ginger or 1 1/2 teaspoons ground ginger
