1/2 teaspoon garlic powder
3 tablespoons cornstarch, divided
2 tablespoons plus 1/2 cup water, divided
1 pound boneless beef top round steak, cut into thin 2-inch strips
1/4 cup soy sauce
2 tablespoons brown sugar
1 teaspoon ground ginger
2 tablespoons canola oil, divided
4 cups fresh broccoli florets
1 small onion, cut into thin wedges
Hot cooked rice

Steps:

  • Mix garlic powder and 2 tablespoons each cornstarch and water; toss with beef. In a small bowl, mix soy sauce, brown sugar, ginger and the remaining cornstarch and water until smooth., In a large skillet, heat 1 tablespoon oil over medium-high heat; stir-fry beef until browned, 2-3 minutes. Remove from pan., In same pan, stir-fry broccoli and onion in remaining oil over medium-high heat until crisp-tender, 4-5 minutes. Stir soy sauce mixture; add to pan. Cook and stir until thickened, 1-2 minutes. Return beef to pan; heat through. Serve with rice.

1 lb top sirloin steak, thinly sliced
¼ cup low sodium soy sauce
2 teaspoons cornstarch
1 tablespoon dark brown sugar
2 tablespoons fresh ginger, minced
1 tablespoon oil
1 head broccoli, cut into 1-inch (2 ½ cm) florets
½ cup water
3 cloves garlic, minced
¼ teaspoon red pepper flakes, optional
1 teaspoon toasted sesame oil

Steps:

  • In a medium bowl, mix together the sirloin steak, soy sauce, cornstarch, brown sugar, and ginger until the meat is evenly covered in the marinade.
  • Set aside to marinate for 20 minutes.
  • Heat the oil in a large skillet or wok over medium-high heat. Dump in the meat and marinade and sear each side until golden brown.
  • Transfer the meat to a clean bowl and set aside.
  • Place the broccoli into the hot skillet and sauté until the broccoli has just started to brown, about 1 minute.
  • Pour the water into the skillet and immediately cover with a lid. Let it steam for 2 minutes, until the broccoli has softened.
  • Remove the lid and toss in the garlic, red pepper flakes, and sesame oil. Sauté until the garlic becomes fragrant, about 30 seconds.
  • Add the steak back into the pan and stir to combine.
  • Remove from heat and serve on a bed of brown rice.

1 pound flank steak ((sliced 1/4-inch or 0.6cm thick))
1/4 teaspoon baking soda ((optional))
3 tablespoons water
1 1/2 teaspoons cornstarch
2 teaspoons vegetable oil
1 teaspoon oyster sauce
2/3 cup low sodium chicken stock ((warmed))
1 1/2 teaspoons granulated sugar ((or brown sugar))
1 1/2 tablespoons soy sauce
1 teaspoon dark soy sauce
1 tablespoon oyster sauce
1/2 teaspoon sesame oil
1/8 teaspoon white pepper
4 cups broccoli florets
3 tablespoons vegetable oil ((divided))
2 cloves garlic ((minced))
1/4 teaspoon ginger ((grated/minced, optional))
1 tablespoon Shaoxing wine
2 1/2 tablespoons cornstarch ((mixed with 3 tablespoons/45ml water))

Steps:

  • In a bowl, add the sliced beef, ¼ teaspoon baking soda, and 3 tablespoons water (if you don't want your beef tenderized too much, omit the baking soda). Massage the beef with your hands until all the liquid is absorbed. Mix in 1 ½ teaspoons cornstarch, 2 teaspoons oil, and 1 teaspoon oyster sauce, and set aside to marinate for at least 30 minutes.
  • Make the sauce mixture by mixing together the chicken stock, sugar, soy sauce, dark soy sauce, oyster sauce, sesame oil, and white pepper. Set aside.
  • Bring 6 cups of water to a boil and blanch your broccoli for 30 to 60 seconds (depending on whether you like your broccoli crunchy or a little soft). Drain and set aside.
  • Heat your wok over high heat until smoking. Add 2 tablespoons oil and sear the beef on both sides until browned (this should only take 2-3 minutes). Turn off the heat, remove the beef from the wok, and set aside.
  • Set the wok over medium heat and add another tablespoon of oil to the along with the garlic and ginger (if using). Stir the garlic and ginger for 5 seconds and then pour the Shaoxing wine around the perimeter of the wok.
  • Next, add in the sauce mixture you made earlier. Stir the sauce around the sides of the wok to deglaze it (all those nice bits from stir-frying the beef should be absorbed into the sauce). Bring the sauce to a simmer. Stir the cornstarch and water into a slurry to ensure it's well combined, and drizzle the mixture into sauce while stirring constantly. Allow it to simmer and thicken for 20 seconds.
  • Toss in the blanched broccoli and seared beef (along with any juices). Mix everything together over medium heat until the sauce coats the beef and broccoli. If the sauce seems thin, turn up the heat and reduce it further, or add a bit more cornstarch slurry. If the sauce is too thick, add a splash of chicken stock or water. Serve with plenty of steamed rice!

Steps:

1 bag (14 oz.) Birds Eye® Recipe Ready Broccoli Stir Fry
½ cup prepared stir-fry sauce
1 bag (10 oz.) Birds Eye® Steamfresh Long Grain White Rice, cooked according to package directions*

Steps:

  • 1. Heat oil in large nonstick skillet over medium-high heat and cook steak, stirring frequently, 6 minutes or until almost done. Remove steak; keep warm.
  • 2. Add Recipe Ready Broccoli Stir Fry and continue cooking, stirring frequently, 4 minutes or until vegetables are tender. Add back steak and stir-fry sauce and cook, stirring frequently, 2 minutes or until heated through.**

3/4 lb flank steak thinly sliced against the grain
marinade:
1 large egg white
1 Tbsp rice wine vinegar
1 Tbsp corn starch
brown sauce:
1/2 c chicken broth
1 Tbsp cornstarch
1 Tbsp soy sauce
1 Tbsp hoisin sauce
1 Tbsp rice wine vinegar
3 c veggies of your choice, broccoli of course, sliced celery, sliced , bell peppers, 1 inch pieces of scallions, onions, mushrooms, bok choi, and also 1/4 cup peanuts
2 clove minced garlic
1 tsp minced ginger
2 large scallions, minced green parts too
pinch each salt and sugar

Steps:

  • 1. Marinade meat at least one hour. Drain excess marinade off beef when ready to cook.
  • 2. Place sauce, meat and veggies right by the stove, this goes fast.
  • 3. Heat 1/4 inch of peanut oil in a wok or skillet over med high heat.
  • 4. Add the beef, cook until nicely browned, remove from pan, cover and keep warm, wipe out pan.
  • 5. Add 2 tablespoons of oil to pan, heat to med high. Add 2 cloves of minced garlic, 1 teaspoon minced ginger, salt, and 2 minced scallions. Stir fry about 30 seconds.Add pinch salt and sugar.
  • 6. Add veggies starting with the ones that cook the longest. Stir fry til crisp tender.
  • 7. Add the beef and sauce, and stir until everything is hot,and sauce thickened.
  • 8. Serve with hot cooked rice.

Adapted from Martin Yan's Chinese Cooking for Dummies. This is my favorite stir-fry sauce. It makes enough for two meals. Having extra on hand makes for a quick meal. My son will actually eat vegetables he can dip in the sauce! WARNING about the amount of soy sauce. When I used Kikkoman soy sauce, I found this sauce far too salty. I now use Angostura, which is much lower in salt. When adding soy sauce, start with less than half the amount and slowly add more to taste. Using vegetable broth makes this vegetarian. Yield: 1 3/4 cups (couldn't get that amount entered)

Steps:

  • Trim fat from beef steak; cut beef lengthwise into 2 inch strips, and each strip cut crosswise into 1/8 inch slices.
  • In cup, mix cornstarch, sesame oil and broth, set aside.
  • Heat 12 inch skillet or wok until very hot.
  • Add vegetable oil; rotate skillet to coat bottom.
  • Add beef; stir fry 2 minutes or until beef is brown.
  • Remove beef from skillet.
  • Keep skillet hot.
  • Add broccoli, carrots, onion, and bok choy and saute for 3 minutes, add yellow pepper, and saute for 1 more minute.
  • Add pepper, garlic, ginger, and fish sauce; stir fry 30 seconds.
  • Add water chestnuts; stir fry 1 minute.
  • Stir in beef.
  • Stir in cornstarch mixture; cook and stir 15 seconds or until thickened.
  • Taste test for soy sauce.
  • Serve over rice.

1 lb lean boneless sirloin steak
1 tablespoon cornstarch, dissolved in

3 tablespoons soy sauce
1 tablespoon dry sherry
2 tablespoons low sodium chicken broth
5 tablespoons oyster sauce
1 tablespoon light brown sugar
1 teaspoon sesame oil
1 teaspoon cornstarch
6 medium garlic cloves, minced
1 inch piece ginger, minced (about 1 Tbsp.)
3 tablespoons peanut oil or 3 tablespoons vegetable oil
1 1/4 lbs broccoli, bite-sized florets and stems trimmed into 1/8 inch slices
1/3 cup water
1 small red bell pepper, cored, seeded, and diced
3 medium scallions, sliced 1/2 inch thick on diagonal

Steps:

  • Combine the beef and soy sauce in a medium bowl; cover with plastic wrap and refrigerate at least 10 minutes or up to 1 hour, stirring once. Meanwhile, whisk the sherry, chicken broth, oyster sauce, sugar, sesame oil, and cornstarch in a measuring cup. Combine the garlic, ginger and 1 1/2 teaspoons peanut oil in small bowl.
  • Drain the beef and disgard the liquid. Heat 1 1/2 teaspoons peanut oil in a 12-inch nonstick skillet over high heat until smoking. Add half of the beef to the skillet and break up clumps; cook without stirring, 1 minute, then stire and cook until beef is browned about the edges, about 30 seconds. Transfer the beef to a medium bowl. Addd 1 1/2 teaspoons peanut oil to the skillet, heat until just smoking, and repeat with the remaining beef.
  • Add 1 tablespoons peanut oil to the now-empty skillet; heat until just smoking. Add the broccoli and cook 30 seconds; add the water, cover the pan, and lower heat to medium. Steam the broccoli until tender-crisp, about 2 minutes; transfer to a paper towel-lined plate. Add the remaining 1 1/2 teaspoons peanut oil to the skillet; increase the heat to high and heat until just smoking. Add the bell pepper and cook, stirring frequently, until spotty brown, about 1 1/2 minutes. Clear the center of the skillet; add the garlic and ginger to the clearing and cook, mashing the mixture with a spoon, until fragrant, about 15 to 20 seconds, then sture the mixture unto the peppers. 1 lb fresh broccoli, broken into florets and then sliced in half
4 tablespoons peanut oil, divided
1/2 teaspoon salt
1/2 cup water
2 garlic cloves, crushed

Steps:

  • In a mixing bowl, mix together soy sauce, pepper, Sambal Oelek, sesame oil and corn starch.
  • Add sliced beef, coat well and let marinate for 15 minutes.
  • In a WOK, heat 2 tablespoons of peanut oil until smoke begins to rise.
  • Add broccoli florets and salt, stir well.
  • Now add 1/2 cup of water, cover with a lid and cook on high heat for 3 - 4 minutes or until steam starts to escape from the edge of the lid.
  • Remove broccoli and any liquid to a bowl.
  • Reheat WOK to high heat, add the remainder 2 tablespoons of peanut oil.
  • When hot, add garlic and brown for 1 minute, stirring often.
  • Add sliced beef and marinade and stir-fry until the color of meat changes, about 1 minute.
  • Return broccoli and liquid to the Wok and mix; stir-fry for 30 seconds.
  • Serve hot.
