SHRIMP STIR-FRY

1 tablespoon butter
1 tablespoon olive oil
2 pounds jumbo shrimp, peeled and deveined, tails on
4 cloves garlic, minced
2 large zucchini, diced
2 large ears of corn, kernels removed
3/4 cup red grape tomatoes, sliced in half lengthwise
3/4 cup yellow grape tomatoes, sliced in half lengthwise
Salt and freshly ground black pepper
12 to 18 fresh basil leaves, cut in chiffonade
Parmesan shavings
Juice of 1 lemon
Rice or pasta, for serving, optional

Steps:

  • Melt the butter with the olive oil in a large skillet over a medium-high heat. Add the shrimp and garlic, then saute until the shrimp are opaque, about 3 minutes. Remove the shrimp to a plate.
  • Increase the heat to high, then throw in the zucchini. Stir it around for about 45 seconds, then scoot the zucchini to the edges of the pan. Throw in the corn and cook it for a minute, then push it to the edges of the pan. Throw in the grape tomatoes, stir them around for a minute, then sprinkle on some salt and pepper to taste.
  • Then throw the shrimp back in. Stir everything around for about 45 seconds, or until it's all combined and hot. Then pour it onto a big platter.
  • Sprinkle on the fresh basil and some Parmesan shavings then ... this is the best part ... squeeze the lemon all over the top. This adds a wonderful, indescribable freshness.
  • You can serve this with rice, with pasta or it's just perfect on its own.

An easy tip to follow when cooking and eating healthy is "Eat the rainbow," and this colorful stir-fry is a great way to start. We use boneless, skinless chicken thighs instead of breasts because a little goes a long way.

3/4 pound boneless, skinless chicken thighs (about 2 large), cut into 3/4- to 1-inch pieces
1 large egg white
2 tablespoons Chinese rice wine or dry sherry
1 tablespoon plus 2 teaspoons cornstarch
5 teaspoons low-sodium soy sauce
Kosher salt
1 tablespoon sugar
Freshly ground black pepper
4 tablespoons peanut or vegetable oil
2-inch piece ginger, sliced paper thin
5 scallions, whites cut into 1/2-inch pieces and greens sliced, separated
2 red bell peppers, sliced
1 cup frozen corn kernels, thawed
Cooked brown rice, for serving

Steps:

  • Toss the chicken with the egg white, 1 tablespoon each rice wine and cornstarch, 1 teaspoon soy sauce and 1/4 teaspoon salt in a medium bowl. Mix together 1/3 cup water, the remaining 4 teaspoons of soy sauce, 1 tablespoon rice wine and 2 teaspoons cornstarch, the sugar and 1/2 teaspoon each salt and pepper in a small bowl until dissolved; set aside.
  • Place the sauce, vegetables and chicken near the stove. Heat 2 tablespoons of the peanut oil in a large wok or large nonstick skillet over medium-high heat; swirl to coat the wok. Once the oil is hot, scoop the chicken from the bowl with a slotted spoon, letting any excess coating remain in the bowl, and add to the oil. Stir-fry, breaking the chicken up just enough so it doesn't clump, until the outside coating is set and lightly golden, 2 to 3 minutes. Remove the chicken with a slotted spoon and set aside. Wipe the wok out if needed.
  • Return the wok to medium-high heat and add the remaining 2 tablespoons of oil to the wok. Just as the oil begins to smoke, add the ginger and stir-fry until fragrant, about 30 seconds. Add the scallion whites and peppers and stir-fry until crisp-tender, about 3 minutes. Add the corn and stir-fry until just soft, about 1 minute. Add the chicken and the sauce (stir the sauce before adding); stir until the sauce is thick and the vegetables and chicken are cooked through, 1 to 2 minutes. Add the scallion greens. Serve with the brown rice.

1 pound boneless (skinless chicken breasts (or thighs or tenders), thinly sliced then cut into bite-sized pieces)
4 tablespoons low sodium soy sauce (divided)
2 teaspoons apple cider vinegar (divided)
2 teaspoons granulated sugar (divided)
1 tablespoon minced fresh ginger
3 cloves minced garlic (about 1 tablespoon)
2 tablespoons water
1 teaspoon cornstarch
1/4 teaspoon red pepper flakes
2 medium zucchini (yellow squash, or a mix)
1 large red or yellow onion
2 tablespoons extra virgin olive oil
Sesame seeds (optional for garnish)
Chopped green onion (for garnish)

Steps:

  • In a large bowl, combine the chicken, 1 tablespoon soy sauce, 1 teaspoon apple cider vinegar, and 1 teaspoon granulated sugar. Set aside while you prep the remaining ingredients.
  • In a small bowl or large liquid measuring cup, stir together the remaining 3 tablespoons soy sauce, remaining 1 teaspoon apple cider vinegar, remaining 1 teaspoon sugar, the ginger, garlic, water, cornstarch, and red pepper flakes. Set aside.
  • Trim off the ends of the zucchini. Cut in half lengthwise, then place the flat, cut sides on the counter. Slice crosswise into ¼-inch thick half moons. Thinly slice the onion.
  • In a wide skillet, heat 1 tablespoon of the olive oil over medium-high heat. Once the oil is hot, add the chicken and its marinating liquid. Saute until the chicken is golden brown on the outsides and fully cooked through, about 3 to 4 minutes. Remove to a plate.
  • Heat the remaining 1 tablespoon oil. Add the onion. Cook until tender and beginning to brown, 4 to 5 minutes.
  • Give the sauce one more stir, then add it to the pan. Let cook 30 seconds, then add the sliced zucchini. Cook just until the zucchini begins to soften, about 3 minutes more.
  • Remove from the heat, then stir in the reserved chicken. Serve hot with a sprinkle of sesame seeds and green onion as desired.

The recipe originally called for cucumbers instead of zucchini; somehow I bought the zucchinis instead (I know, I know...) and I loved the end result, so here it is! The directions are a little vague, but I am a beginner cook and managed just fine. Enjoy over rice, with Sriracha.

4 zucchini, thinly sliced
1/3 lb lean beef (julienned or thinly sliced)
1 teaspoon salt
1 tablespoon sesame oil or 1 tablespoon other oil

1 tablespoon toasted sesame seeds
1 teaspoon sesame oil

  • Heat oil. Quickly stir-fry beef over high, and season with garlic, salt and pepper. Remove from pan/wok with a slotted spoon and set aside.

  • Return beef to pan, stir once to combine, and transfer to serving plate. Garnish with shredded chili.

1 teaspoon soya sauce
1 teaspoon vinegar ((I used apple cider))

Steps:

  • Rinse all the veggies. Slice onions and bell peppers thin. Chop zucchini to ¼ inch thickness. Chop ginger and garlic.
  • Pour oil to a hot pan. Stir fry ginger and garlic for 30 seconds.
  • Add onions and fry until transparent. Then stir fry bell peppers for 30 seconds.
  • Next add zucchini and stir fry on a high heat until half done yet crunchy. Do not over cook as they tend to turn too soft.
  • Then pour soya sauce and vinegar. Add black pepper. Stir fry just for 30 to 60 seconds.
  • Turn off the heat and sprinkle toasted sesame seeds or roasted & crushed peanuts.
  • Serve zucchini stir fry as a side or in your wraps and sandwiches.

1 1/2 pounds fresh medium-size zucchini
1 to 2 tablespoons extra-virgin olive oil
2 cloves garlic, minced
Kernels stripped from 3 ears fresh corn
1/2 jalapeno pepper, seeded and minced
1/2 cup very finely chopped sweet red pepper
1 tablespoon slivered fresh basil leaves
Salt and freshly ground black pepper

Steps:

  • Trim the ends from the zucchini. Using a food processor, a mandolin or a sharp knife, cut the zucchini in thin, uniform rounds.
  • Heat one tablespoon of the oil in a large skillet or a wok. Add the garlic, then immediately toss in the corn kernels, jalapeno pepper and red pepper and stir-fry for 30 seconds. Add the zucchini and stir-fry just until the zucchini begins to wilt, about two minutes.
  • Fold in the basil and season to taste with salt and pepper. Transfer to a serving dish and serve hot. The dish can also be set aside to cool to room temperature before serving, but if so, the ingredients will benefit from the addition of another tablespoon of olive oil drizzled over them.

2 medium zucchini (approx 1 lb.)
1/2 teaspoon salt
1 tablespoon soy sauce
2 teaspoons hoisin sauce
2 teaspoons dry sherry
1/2 teaspoon sesame oil
1 tablespoon canola oil (or peanut oil)
1 teaspoon garlic, minced (1 clove)
1 teaspoon chili flakes
1/2 teaspoon sesame seeds, toasted

Steps:

  • Quarter zucchini lengthwise.
  • Slice off the soft seed core; it's ok if some seeds remain.
  • Arrange the zucchini, cut side up, on paper towels.
  • Sprinkle with salt, set aside for 10 mins.
  • Blot the zucchini quarters dry with paper towels.
  • Cut quarters into 2 inch lengths.
  • Mix soy sauce, hoisin, sherry and sesame oil in a small bowl.
  • Heat a wok or large skillet over med-high heat for 1 min.
  • Pour in canola/peanut oil; when oil starts to shimmer and ripple (very hot), add zucchini.
  • Saute until zucchini browns and softens slightly (don't overcook- it might turn mushy), about 4 mins.
  • Add garlic and chilli flakes, saute for about 15 sec.
  • Add the sauce mixture, stir and cook just long enough for liquid to reduce and coat the zucchini (about 20 sec).
  • Remove from wok, sprinkle with toasted sesame seeds and serve immediately.
