1 1/4 teaspoons white pepper
1/4 teaspoon coriander powder
1/4 teaspoon ground cinnamon
1/4 teaspoon powdered clove
1/4 teaspoon dried lemon peel
1/2 teaspoon dried parsley
3 tablespoons olive oil
1/4 large onion (diced)
1 tablespoon sliced almonds, chips
140 g pasta (I used somen)
1 teaspoon minced garlic paste
1 tablespoon fresh rosemary
2 cups frozen mixed vegetables, chunk-style (defrosted)
1 (6 1/2 ounce) can tuna (drained)
1 tablespoon black olives (sliced)

Steps:

  • Start boiling somen water according to directions on package.
  • Thoroughly mix cumin, cayenne, 1/4 teaspoon white pepper, coriander, cinnamon, clove, lemon peel, parsley, and 2 tablespoons olive oil; set aside.
  • Sauté onion in 1 tablespoon olive oil on medium-low heat.
  • Add almond chips, garlic paste, rosemary, mixed veggies, tuna, olives, and 1 teaspoon white pepper.
  • Cook for approximately 5 minutes.
  • Meanwhile, place somen in boiling water.
  • After cooked (about 2 - 3 minutes), strain and toss with spice and oil mixture.
  • Plate and top with tuna mixture.

1 tablespoon fresh lime juice
2 teaspoons olive oil
2 teaspoons minced peeled gingerroot
1 teaspoon curry powder
2 garlic cloves, minced
1/2-1 teaspoon crushed red pepper flakes
1 lb firm-fleshed fish fillet, cut into 3/4-inch cubes (cod, halibut, or salmon)
6 ounces fresh snow peas, trimmed
2 green onions, thinly sliced
1 1/4 cups fat-free chicken broth
1 cup uncooked instant brown rice
1/4 teaspoon salt

Steps:

  • In a large zip-lock heavy-duty plastic bag, combine the lime juice, olive oil, ginger, curry powder, garlic, and red pepper flakes.
  • Rinse the fish and pat dry with paper towels.
  • Put fish in the bag; seal, and gently turn the bag over several times to coat the fish.
  • Refrigerate 15 minutes to 1 hour.
  • Heat a large nonstick skillet or wok over medium-high heat.
  • Add in fish with marinade, stir-fry 3-4 minutes or until the fish is almost cooked through, stirring constantly.
  • Stir in snow peas and green onions; cook 1 minute or until snow peas are crisp-tender, stirring constantly.
  • Stir in broth, rice, and salt; bring to a simmer, stirring once.
  • Lower heat and simmer, covered, 10 mintues or until rice is tender.

500 g firm fish fillets, cut into pieces
2 tablespoons oil
2 teaspoons minced ginger
1/2 red capsicum, cut into thin strips
1/2 yellow capsicums or 1/2 green capsicum, cut into thin strips
200 g snow peas
1 teaspoon cornflour
3 tablespoons oyster sauce
1 tablespoon soy sauce
1 teaspoon sesame oil
3 tablespoons water

Steps:

  • Add oil to heated frying pan or wok and then cook fish until golden brown, 5- 6 minutes.
  • Remove fish and set aside.
  • Add ginger, capsicum and snow peas and stir fry until vegetables are tender crisp, 2- 3 minutes.
  • Combine cornflour with oyster sauce, soy sauce, sesame oil and water.
  • Add to pan and cook 2- 3 minutes, add fish and cook, stirring gently, until heated through.
  • Serve with rice or noodles.

1 teaspoon orange peel, finely shredded
1/4 cup orange juice
2 tablespoons soy sauce
2 tablespoons water
1/4 teaspoon ground ginger
1/4 teaspoon ground cinnamon
1 cup celery, thinly sliced
2 tablespoons butter or 2 tablespoons margarine
1 cup fresh pea pods, halved diagonally
1/2 cup bean sprouts
1/4 cup sliced water chestnuts
9 1/4 ounces canned tuna, drained and broken into chunks
1 orange, peeled and sectioned
3 cups hot cooked rice

Steps:

  • For sauce, in a small mixing bowl stir together orange peel, orange juice, soy sauce, water, ginger, and cinnamon; set aside.
  • Stir-fry celery in melted butter or margarine for 1 minute.
  • Add pea pods; stir-fry for 1-2 minutes or until pea pods are crisp-tender.
  • Stir in bean sprouts and water chestnuts.
  • Push vegetables from center of skillet.
  • Stir sauce; add to center of skillet. Cook and stir until boiling.
  • Stir vegetables into sauce until well coated.
  • Reduce heat; add tuna and orange sections. Cover and cook for 1 minute or until heated through.
  • Serve immediately with hot rice.
