4 tbsp clear honey
1 tsp thyme leaves
1 tbsp cider vinegar
2 tbsp rapeseed oil
2 tbsp hazelnuts , toasted and roughly chopped
1 small fennel bulb , trimmed and finely sliced (use a mandolin if you have one)
2 handfuls rocket leaves
200g stilton , thinly sliced
2 ripe figs

Steps:

  • Put the honey and thyme leaves in a small pan, then gently warm together for 2 mins - the honey shouldn't get hot enough to bubble. Set aside to cool. Make a dressing by whisking together the cider vinegar and rapeseed oil with some seasoning.
  • To serve, gently toss the chopped hazelnuts, fennel and rocket with the dressing. Divide the cheese between 4 plates, add a fig half to each, then a pile of the salad. Finally drizzle the thyme-infused honey over the figs and cheese.

2 tablespoons balsamic vinegar
1 tablespoon clover honey
Juice of 1/2 orange
Salt and freshly ground black pepper
1/4 cup extra-virgin olive oil, plus more for brushing
12 fresh figs, halved
4 ounces mizuna
6 ounces feta, crumbled
1/2 cup chopped pistachios

Steps:

  • Whisk together the vinegar, honey, orange juice and some salt and pepper to combine. Slowly whisk in the olive oil until emulsified. Set aside.
  • Heat a charcoal or gas grill to high for direct grilling. Brush the figs with some olive oil, season with salt and pepper and grill, cut-side down, just until slightly charred. Remove to a plate.
  • Toss the mizuna with some of the vinaigrette. Transfer the mizuna to a platter and arrange the figs over top. Sprinkle with the feta and pistachios and drizzle some of the remaining dressing over top. Serve at room temperature.

Port Vinaigrette, recipe follows
12 fresh figs
4 cups mesclun greens
2 tablespoons extra-virgin olive oil
Salt and pepper
4 ounces Stilton, crumbled
2 tablespoons olive oil
1/2 small red onion, finely chopped
2 cups Port wine
1/2 cup dry red wine
1 tablespoon molasses
3 tablespoons balsamic vinegar
2 teaspoons chopped fresh thyme leaves
1/2 teaspoon kosher salt
1/4 teaspoon ground black pepper
1/2 cup extra-virgin olive oil
1 tablespoon walnut oil

Steps:

  • Place the vinaigrette in a large saute pan and bring to a simmer on the grates of the grill. Add the figs and cook for 1 to 2 minutes.
  • Toss the mesclun greens in a large bowl with the olive oil and season with salt and pepper. Transfer to a large platter and using a slotted spoon, place the figs on top. Sprinkle the salad with the Stilton and drizzle with some of the Port Vinaigrette.
  • Heat grill to high. Heat oil in a medium saucepan on the grates of the grill. Add the onion and cook until soft. Add the Port and red wine and cook until thickened and reduced to 1/2 cup.
  • Transfer reduced wine mixture to a blender and add the molasses, balsamic vinegar, thyme and salt and pepper and blend until combined. With the motor running, slowly add the olive oil and walnut oil and blend until emulsified.

2 bosc pears, washed and thinly sliced
1/3 cup red grapes, washed
1/2 honeydew melon, thinly sliced
1 large orange
1 teaspoon honey

Steps:

  • Scoop out seeds from honeydew melon; remove rind and cut into thin slices. Wash and thinly slice pears. Peel and thinly slice kiwis. Arrange the melon, kiwis, grapes and pears on a decorative platter.
  • Squeeze juice from orange into a small bowl. Add one teaspoon of honey and mix well.
  • Drizzle the honey/orange juice over the fruit.
  • This recipe works well as a low fat, healthy dessert or as a light lunch with cottage cheese.

3/4 cup ruby port
1/4 cup dry red wine
1/4 cup vegetable oil
3 tablespoons balsamic vinegar
2 tablespoons hazelnut oil or walnut oil
1 tablespoon sugar
1 tablespoon red wine vinegar
1/2 tablespoon Worcestershire sauce
1/2 tablespoon mild-flavored (light) molasses
1/4 teaspoon onion powder
1 9-ounce package dried black Mission figs, stemmed, cut in half lengthwise (about 1 3/4 cups)
1 5-ounce bag mixed baby greens (about 10 cups loosely packed)
4 ounces Stilton cheese, crumbled (about 1 1/4 cups)

Steps:

  • Whisk first 10 ingredients in medium bowl to blend. (Dressing can be made 3 days ahead. Cover and refrigerate.)
  • Bring vinaigrette and figs to simmer in heavy large nonstick skillet over medium-high heat. Simmer until dressing is slightly syrupy, stirring occasionally, about 8 minutes. Cool slightly. Season dressing to taste with salt and pepper.
  • Divide greens among 6 plates. Sprinkle cheese over greens. Ladle warm dressing and figs over salads and serve.

A new fig recipe for this year! Similar to my Recipe #250866 but with blue cheese and a honey drizzle dressing. I like to tuck a few fig leaves amongst the salad for colour........but please do wipe them first! Serve these figs with crusty bread, some mixed herb and salad leaves.......and a glass of chilled wine. Quantities for figs depend on the size; allow one or two large figs per person or, between three and six for medium to small figs.This makes a fabulous dinner party starter, or a light salad for lunch..........I sometimes serve this for the cheese course too, for something a little different.

24 -30 fresh figs, medium to large
6 -9 ounces blue cheese, such as Stilton or 6 -9 ounces Roquefort cheese
9 ounces walnut halves, roughly chopped
2 tablespoons clear runny honey
6 tablespoons walnut oil
1 tablespoon sherry wine vinegar
salt
black pepper
fresh fig leaf (to garnish)

Steps:

  • Toasted Walnuts:.
  • In a large, heavy frying pan, over a high heat, toast the walnuts for 2 to 3 minutes, stirring frequently. Remove and set aside to cool.
  • Honey Drizzle Dressing.
  • Put the vinegar and a good pinch of salt and black pepper in a screw-top jar and shake until the salt has dissolved. Add the honey and walnut oil, then shake again to emulsify - the emulsion will hold for ten minutes or so, but give it another jiggle just before you use it to dress the salad.
  • Salad:.
  • Wipe the fresh figs gently, and cut them in half. Arrange them on a large platter, OR on individual plates - allowing 4 to 5 fresh figs per person, depending on the size.
  • Sprinkle 1 to 1 1/2 ozs of crumbled or sliced blue cheese per person, over the top of the fresh figs.
  • Scatter the chopped,toasted walnuts over the fig salad.
  • Just before serving, drizzle the honey dressing over the salad, and garnish each plate with 1 - 2 fresh fig leaves if available.
  • Serve with crusty bread and butter and mixed herb and salad leaves.
  • Can also be served as a dessert/cheese course combined.

If you are on Chicago's Miracle Mile near the Marriott, watch out for bees! Chef Myk Banas keeps hives on the rooftop and uses the honey in dishes served at the restaurant. This is a very nice potato salad, very fresh tasting. The nutritional information is off, because there is twice as much dressing as you will need, but according to the chef it will keep for several weeks, so make the entire quantity. 1 1/2 lbs white fingerling potatoes or 1 1/2 lbs yellow fingerling potatoes
1 teaspoon kosher salt
8 ounces French haricots vert or 8 ounces young green beans
3 cups water
1/4 cup cider vinegar, I use rice vinegar
1 medium shallot, halved
2 tablespoons honey
1 tablespoon fresh thyme leave
1 1/2 teaspoons Dijon mustard
1/8 teaspoon kosher salt
1/8 teaspoon ground black pepper
1/2 cup canola oil or 1/2 cup vegetable oil
1 small red onion, halved and thinly sliced
1 lb bacon, crisp-cooked and crumbled
1/2 cup crumbled feta cheese

Steps:

  • Scrub the potatoes and cook in boiling water with the 1 tsp salt until just tender, 8 to 10 minutes. Drain well and spread on a cookie sheet to cool. Halve lengthwise when cool enough to handle.
  • Trim and halve haricots verts or green beans. Drop into 3 cups boiling water, return to boil, reduce heat and cook 1 to 2 minutes, until crisp-tender. Drain and drop into a bowl of ice water. Let stand 5 minutes, then drain well.
  • For vinaigrette, mix vinegar, shallot, honey, thyme, mustard, salt and pepper in food processor or blender and process until smooth. With processor or blender running, slowly pour in the oil in a steady stream, until the mixture is thickened.
  • In a large salad bowl, combine the potatoes, beans and red onion. Drizzle over enough dressing to coat everything thoroughly. Cover and chill from 2 to 24 hours.Serve.
  • Just before serving, toss salad with bacon and top with feta. Serve additional vinaigrette on the side, or reserve for another use.
  • Note1: Fingerling potatoes are not around just now, so I used red potatoes that I peeled and cut into quarters or eights, which worked very nicely. I have also added some sweet potatoes to the other potatoes, and that was good, too.
  • Note2: I mixed the vinaigrette in a 2 cup measuring cup with my stick blender, which worked perfectly.
  • Note3: Extra dressing keeps for several weeks, according to chef, but I used it up faster than that.
  • Note4: This makes a whole lot more salad than I can use. I just cook up two or three potatoes, a good handful of the beans and drizzle a bit of the dressing on it. Once you make the dressing, this is a snap.
  • Note5: I use just a slice or two of bacon per serving, and often don't use it at all. I think chunks of good ham or turkey would be really nice in this, too.

  • Serve with fresh cracked pepper.
