STICKY GUINNESS CHICKEN
Want some finger lickin' good sticky chicken? This Guinness Chicken has your name on it! Chicken thighs are first seared light brown then cooked in an easy to make sticky sauce made with your favorite Irish beer. It's my newest favorite chicken recipe!

- Add the Guinness, ketchup, honey, balsamic, Dijon, and garlic to a small pot and bring to a boil over high heat. Reduce the heat and simmer for 15 minutes, or until it starts to thicken.
- While the sauce is simmering, start the chicken. Heat the oil in a large frying pan over medium-high heat. Add the chicken to the pan and brown it on both sides, about 10 minutes total. Drain the fat from the pan.
- Pour the slightly thickened Guinness sauce over the chicken and continue to cook the chicken, uncovered, turning it over a few times so the sauce coats both sides, for about 15-20 minutes, or until the sauce reduces and is thick and sticky.

STICKY FINGER LICKIN' CHICKEN
A little spicy, and little sweet! Just like some of us chefs! Serve with a salad, some fresh bread and dip chicken in honey to your hearts content!

Steps:
- Preheat oven to 250 degrees. In a small bowl, blend all spices. Rub spice mixture into the chicken, both inside and out, making sure it is evenly distributed and down deep into the skin. Place in a re-sealable plastic bag, seal and place in refridgerator.
- Finely chop onion and set aside.
- When ready to roast chicken, place in a shallow baking pan, and sprinkle with onions.
- Roast, uncovered, for an hour, basting chicken every fifteen minutes with pan juices. Juice will start to caramelize on the bottom of the pan and the chicken will turn golden brown.
- Let chicken rest about 10 minutes before serving.

FINGER LICKIN BARBECUED CHICKEN
This recipe was given to me about 20 years ago from a very dear friend. This chicken is very tasty especially when grilled and basted often. I need to make a notation on this recipe: This is not a thick saucy recipe - it is a salty/briny recipe. This can be baked -BUT - I will say it is much better when you grill and baste the chicken frequently. I myself like to add extra Worcestershire sauce. Another added note is on the vinegar - I use Heinz Apple Cider Vinegar -- NOT -- Distilled or White. This recipe is actually used quite often at Chicken BBQ's or at festivals and fairs in our hometown.

- Mix above ingredients together and bring to a boil.
- This sauce can be basted on chicken and then grilled or baked.
- When cooking baste chicken frequently.
- Bake 350 degrees for 1 hour or till chicken is done or Grill until chicken is done. "Grilling takes longer - but the chicken is really good. When grilling I baste the chicken about every 15/20 minutes then turn.".

FINGER LICKIN' STICKY CHICKEN
Quick, simple, delicious. I like to serve over seasoned basmati rice. My own recipe but I am sure it's so simple, others must have made it too. I like to use wing nibbles but anything chicken will do. Prep time is nil, cooking time 30 mins but can simmer til you are ready. An easy, tasty, low stress meal.

- Throw nibbles in frypan with olive oil, sear, sear, sizzle, sizzle, to get it lightly sealed (about 3 mins of tossing in pan)
- Stick the lid on to cook almost through for about 10 mins or until your gut instinct says it's more than half done.
- Pour in the soy sauce and honey, turn and coat all nibbles, simmer on low, leave lid on while you do whatever else needs doing for your meal. It's pretty forgiving, you can leave it to sit like this for quite a while.
- Scrape all the chook up one end of the pan while draining juices down the other end. This is where you turn the TV cameras off, it's not a glamorous step but it works! I get a clean coffee mug, about 1/4 full of cornflour, and I quickly dip the mug into the juices and stir, dip and stir, dip and stir. Pour the contents into the pan. Rinse the mug before it cements : ))).
- Stir the chook around in the sauce, til it's thickened to your liking.
- Serve and Enjoy.

FINGER LICKIN' CHICKEN DRUMSTICKS
My DH loves the sauce on this chicken! It's nice and easy to make and uses ingredients that are almost always on hand.

- Preheat oven to 375 degrees.
- Spray 8x8 pan with nonstick cooking spray.
- Remove skins from drumsticks.
- Rub salt and pepper to taste on chicken.
- Place in pan.
- Mix sauces, honey, lemon juice, cumin, oregano, and garlic together and set aside.
- Place chicken in oven.
- Baste chicken with the sauce every 10 minutes or so for the first 30 minutes.
- After 30 minutes pour remaining sauce over each chicken drumstick and place back in oven for another 30 minute or until juices run clear.
- Serve and enjoy!
STICKY CHICKEN
I stumbled on this recipe many moons ago. I have tweaked it to my taste :) Please try this and do the same. It is great for all occasions -- as a main meat or finger food. Wonderful hot, warm and you guessed it- cold. Enjoy.

- Clean chicken and put into baking dish. Sprinkle chicken with garlic and onion powder.
- In a medium pot- combine soy sauce, water, butter, brown sugar, and dry mustard. Bring to a boil- stirring from time to time.
- Cool marinade for about 15 minutes than pour over chicken and cover. (hint- use plastic wrap so you can ensure no spilling from counter to fridge).
- Let marinade over night in fridge.
- Next day- take cover off and bake @ 350 for 1 hr and 15 minutes.
- Remove from marinade and ENJOY.

FINGER-LICKING CHICKEN MARINADE
A wonderful marinade for chicken. If you don't have Miracle Whip, mayonnaise may be substituted. I usually marinate chicken in the marinade at least 30 minutes before cooking. However, I once took chicken sitting in the marinade to a cook-out, and other people there who had brought their own chicken started dipping their chicken in my left-over marinade to coat, then barbecuing right away without waiting for it to marinate. It was still delicious! I've found I can coat over a dozen chicken pieces with a single recipe of the marinade. These days I make this without the Tbs of salt when making it just for myself, but people's tolerance for low salt varies widely and so I've posted it the way I've found suits most people best. I'd say be guided by your own tastes when it comes to amount of salt used.
