STEWED FRESH BERRIES
Steps:
- Combine a half-pint of raspberries, all the blueberries, sugar, zest and 1/3 cup water in a saucepan and bring to a boil. Lower the heat and cook uncovered over medium-low heat, stirring occasionally, for 8 to 10 minutes. The juice will become a syrup and the berries will be slightly cooked. Off the heat, stir in the remaining raspberries and the framboise, if desired.

STEWED BERRIES WITH ICE CREAM
Fresh raspberries and blueberries can be stewed in minutes; they make a delicious topping for vanilla ice cream. Framboise, raspberry-flavored liqueur, adds extra zing.

Steps:
- 1. Place blackberries in a medium saucepan with 1/2 cup water, sugar, and salt. Bring to a boil over high heat, and cook, stirring with a whisk or old-fashioned potato masher to crush the berries, until the berries are pulpy, 3 to 5 minutes. 2. In a liquid measuring cup, combine remaining 1/4 cup water and flour. Stir well with a fork or small whisk until well combined and no lumps remain. Add flour mixture to berries, and return to a boil. Cook until slightly thickened, another 3 to 5 minutes. Add vanilla, and remove from the heat. Add butter, stirring to combine.

- Add the sugar – I usually add 3 heaped teaspoons to rhubarb and 2 heaped teaspoons to any other fruit, but just taste as you go along and add more if you think it needs it (please be careful when tasting as it gets really hot).
- Add 2 tablespoons of water and cook on a medium heat with the lid on.Once the fruit has softened, remove the lid and let the liquid reduce – you want to end up with a fairly thick consistency.Serve over cereal, yoghurt, pancakes, granola, muesli or even with roast pork!.

- Place the apples, sugar and water into wide bottomed pan. You want the apples to be no more than 2 deep. Mix together to coat the apples with sugar. Bring to a boil over a medium high flame. Cover and reduce the heat to low. Cook stirring occasionally until the apples are just soft and have generated a syrup. About 10 minutes.
- Add the blackberries and gently stir to mix them in. Raise the heat a notch to bring the syrup to a bubble. Cover and turn the heat to low. Cook 5 minutes. Turn off the heat and let sit 10 minutes more. Stir gently to mix. Let cool. Spoon into glasses and chill. Serve with plain Greek yogurt and scattered with toasted almonds.

- Start by washing the strawberries well. Remove the leaf and stem and cut them into 4-6 small chunks. If you like to have huge chunks, then cut them in half or 3 slices.
- Add all the sliced strawberries to a cooking pan and place on medium heat. Stir the fruit occasionally
- Within 4-5 minutes, you’ll see the berries start to release a lot of their juices. Continue to cook for another 10-12 minutes or until the strawberries start to look pulpy.
