Big James' Pork Rub image

My all-purpose rub I use when smoking ribs and pork shoulders. Store in a cool dry place. Sprinkle liberally on ribs and pork shoulder prior to smoking.`

½ cup paprika
½ cup chili powder
¼ cup brown sugar
¼ cup white sugar
2 teaspoons celery seed
2 teaspoons ground black pepper
2 teaspoons cayenne pepper
2 teaspoons dry brown mustard
2 teaspoons garlic powder
1 teaspoon ground cumin
1 teaspoon salt

Steps:

  • Mix the paprika, chili powder, brown sugar, white sugar, celery seed, black pepper, cayenne pepper, brown mustard, garlic powder, cumin, and salt together in a bowl.

Steviedee's Butt Rub image

A course-ground dry rub that I use for large cuts of pork (Boston butt, shoulder, ham, picnic, etc) cooked low-and-slow.

Number Of Ingredients 14

1 cup fresh coarse ground black pepper
1 cup paprika
1 cup turbinado sugar
3/4 cup kosher salt
1/2 cup brown sugar
3 tablespoons chili powder
3 tablespoons powdered chipotle pepper
3 tablespoons peppercorn blend
3 tablespoons garlic powder
3 tablespoons dried onion flakes
2 tablespoons cumin
1 1/2 tablespoons dry mustard
1 1/2 tablespoons Chinese five spice powder
1 tablespoon celery seed

Steps:

  • Hit the whole black peppercorns, whole peppercorn blend, and onion flakes in coffee grinder to provide course-ground texture.
  • Mix all ingredients together.
  • Apply liberally to large cuts of pork prior to smoking.

JUICY BUTT STEAKS



Juicy Butt Steaks image

My mom used to make this and it is my favorite meal. The pork butts come out so tender and juicy. 'Butts' are a favorite in my family. Serve with baked or mashed potatoes and a veggie. If you like a lot of sauce then double the recipe, the sauce is fantastic.

Number Of Ingredients 6

2 pork shoulder (Boston butt) steaks
1 large onion, sliced
2 cups ketchup
2 cups water
salt and pepper to taste
1 teaspoon garlic powder, or to taste

Steps:

  • Heat a large skillet over medium heat. Season the pork steaks on both sides with salt, pepper and garlic powder. Place in the skillet and cook until browned on each side, about 4 minutes per side.
  • Place sliced onions on top of the steaks in the pan. Stir together the ketchup and water in a medium bowl; pour over the steaks. Bring to a simmer, then reduce the heat to medium-low, cover and cook for about 2 hours. The longer you cook, the better the meat tastes.
